I ommitted the pepper because I was making this to give away and wasn't sure if that would suit everyone's taste. The base recipe is really good, though. I found that filling the mug 1/3 full was plenty. I know you can purchase powdered vanilla and may try adding that to this base recipe when I get around to purchasing it.

I make hot cocoa mix every year. Previously I've used the one that uses Nestle quick. It was just too sweet. I hated giving my kids all that sugar! This one is less sweet and much more chocolatey! I love it! It is exactly what I was looking for. My mom says it's the best hot chocolate she's ever had...I have to agree. The cayanne adds such a great taste that makes you furrow your brow trying to place the flavor! Yummmy!

This makes a great rich cocoa. For those who thought it too thin, use more mix and less water. Using a good quality cocoa is important too. I have also made a Lactose-free version using the same amount of Soy beverage mix instead of the powdered milk. It came out so good that I now only make the Lactose-free version at home so that all of us can drink it.

I have tried several other hot cocoa recipes in the past, and this one by far was the best! I use about 1/4 cup per 6-8 ounces of water. It's perfect-creamy, rich, and delicious! I have added 1 Tbl. hazelnut coffee syrup or mini chocolate chips for an extra kick too. I was a little worried how the pepper would taste but was very surprised when the cocoa turned out fantastic! Try it!

I'm used to my cocoa being creamy, and this is not. I'm going to try and salvage the mix by adding instant coffee creamer like alot of other recipes have, it just lacks the creaminess that I am used to.

I don't like powdered milk so we left it out and used milk instead of water. You only use 4 TBLS of mix and a mug of milk and it is outstanding. Thanks Alton. I Love the show.

I loved this and have made it up in jars for gifts. Interesting that I found the dutch cocoa on line at a very reasonable price where I order my books. Having just gone back to check on it the price doubled within the past 2 months and the one I did purchase is unavailable. Glad I bought 2 of them in the 16 ounce. Anyway. this is great chocolate. One batch was enough for 1 jar so be sure to make extra. I found the large boxes of powdered milk at a reasonable price and excellent brand.

WOW! I have never written a review before, but had to weigh in on this recipe. I scoured hot cocoa mix recipes to find the perfect one for giving this Christmas season. No doubt, AB has hit on it! This recipe was super simple and delicious. Those who thought it was too watery must not have used enough of the mix (as per the directions). I found that anywhere between 6 and 10 tbsps per 8 oz of water made the perfect cup - 6 for those who want traditional creamy, cocoa flavor; 10 for those who want to feel like they are drinking liquid chocolate. I used substituted 1 c. of creamer of 1 c. of the powdered milk and used Hershey's special dark dutch processed cocoa. This is going to be a new holiday tradition for my gift baskets! Yummy!

I have made this several times while testing out MANY hot cocoa mixes to give as gifts. This was my husband's (one of three taste testers) favorite. I have tried it with all regular Hershey's cocoa and with all dark chocolate. The dark chocolate lends a spicier flavor (compliments the cayenne nicely) while the regular cocoa would probably be more suitable for gift-giving due to the more subtle flavor. I have also added more than a pinch of cayenne, due to my husband's liking. :) The third time that I made this I altered it a little since I liked the "kickiness" of the dark chocolate but also wanted it a little creamier. It turned out FABULOUS!! I used half powdered milk and half nondairy creamer (extra rich). I also used half regular Hershey's cocoa and half Dutch-processed dark cocoa. I omitted the cayenne and added chopped/ground candy canes (8 regular-sized canes, which is ~3oz). This was awesome!! So now I can give "Cocoa with a Kick" as well as a yummy peppermint-flavored cocoa. :) HTH!! Happy holidays!! Thanks Alton for an awesome recipe!! I tried about 5 recipes and nothing compared to yours. :)

Yes I am the food Natzi. I have been killing myself trying to get away from all things processed for over a year now. The kids want hot chocolate, I break out the pot and I make them hot chocolate. For those of you that dont like this recipe, I can only guess that you arent accustom to real hot cocoa because this is it! I am extremely pleased with the recipe. I was toying with Christmas baskets this year, for teachers and so on, and I was creating a cocoa mix in my mind when I got the bright idea to check the internet, and tadah!! Go Alton! Although I have to admit, I am really tired of hearing my husband say "Well, Alton Brown says...." Thanks Alton--youre almost as good as I am!

there is a difference between hot cocoa and hot chocolate. this is great, but i couldn't find dutch processed cocoa so that may be why i wasn't as impressed with this as i have been with AB's other cocoa treats. so try it with dutch processed cocoa and it may be better than i think. i did want it a tad sweeter.

I made this mix two years ago and continue to make it -- it's just amazing. The reason some people may not think it's sweet enough is because they are used to packaged products being packed with corn syrup and sugar. This recipe really allows the cocoa taste to come through -- and with a recipe with such little ingredients, do NOT skimp by using just any old cocoa. Don't use Hershey's, don't use off-brands; use dutch-processed just like Alton says. I've even done half-and-half dutch-processed and Ghiradelli cocoa with great results. Don't skip the pepper either, or at least substitute for chili powder. FRESH chili powder. Mexican hot cocoa uses cinnamon and chili powder just like this recipe. When I make the mix for myself or my friend/family, I use milk with half-and-half instead of water. Same logic as with canned cream soups; why would you EVER use water? The recipe is very simple and isn't cost-prohibitive. It mixes up easy and quick, so you can really impress your guests when you whip up some amazing hot cocoa in no time. No one likes waiting for cocoa. Nay-sayers can keep their awful Swiss Miss, Hersey's and Nestle. I'll be making more of AB's cocoa in the meantime.

Alton, you have yet to disappoint me! I am so glad! I was surprised to see the measures in this recipe in volume vs weight, since you've converted me to loving a food scale, but that's another story. This is delicious. It's unbelieveably easy to make. For those who want more creaminess, without the horrible partially hydrogenated oils that are in artificial creamers, consider a squirt of whipped cream on the top. It's fun and pretty and when it melts it's all creamy goodness. I will be making this for presents for the holidays...and I think I'll whirl it in the food processor just to be sure any lumps are gone and everything is super well incorporated. I was so hopeful this would be a great recipe, and it really is! That pinch of cayenne does add a mystery warming/flavor that is right at home in the rich chocolate. Mmm! I even got experimental and tried it using Splenda for my mom who's diabetic. It's also very good! I can't wait to give it to her! Love you, Alton!

This hot cocoa has class. It has body. It's fantastic! I normally make my cocoa with warm milk, but with the addition of dried milk and the fact that you fill your mug halfway before adding liquid, it's creamy and satisfying. It has more of a dark chocolate flavor and is not as cloyingly sweet as store bought, chemical-laden brands.

This is a fantastic hot cocoa mix. I love it because it's easy to put together and just store in the cupboard for whenever I get the hankering for hot cocoa. I followed the recipe exactly as written, with one minor adjustment: when watching Alton make this recipe on Good Eats, he says to fill your hot cocoa "vessel" about 1/3 with the mix (not 1/2), and to fill the rest with water or warm milk. It tastes way better than the store-bought mix, and it's perfect to always have on hand.

This was a complete surprise to me. Since I grew up with those store bought instant mixes, I was a little hesitant making this from scratch. Thankfully I am more that pleased with the taste. Now I know that store bought mixes are WAY too sweet. My only recommendation is mixing all ingredients in a food processor.

This hot cocoa mix is not super sweet like the pre-pkg'd stuff but you could also call it not sweet at all. You definitely taste the chocolate part more than sugar, which is my preference. I agree with previous reviewers that the cocoa comes out more liquidy than creamy. I tried it two ways. One with hot water and the other with warm milk. Both ways were just ok. I didn't taste anything special with the cayenne pepper. Maybe I didn't put enough? (3-4 shakes, don't know if that equals a pinch) I will have to say that making this mixture was *super* quick and easy. Creaminess is preferrable and a bit more sugar would be nice. I'd like to fiddle around with this some more so I can pkg this up for the holidays to friends.

Alton's recipes have never let me down. This hot cocoa is really quite good. I never would have even thought of making my own hot chocolate mix. Now I'll never buy mix again. The cayenne pepper really adds a depth of flavor that you can't taste but just make the chocolate come alive. I highly recommend this recipe. Warning though! If you add too much cayenne it easily ruins this recipe so maybe add a little then add more to taste if that's not enough. You don't want to actually taste the cayenne, just enhance the chocolate. Alton, you're my hero.... my nerdy cooking show hero.

This hot cocoa mix is very tasty, and keeps well, though in my house, it doesn't have to keep long! My only complaint is that you have to put so much of the mix into each cup of cocoa, so even large batches of the mix don't last long.

Throw things in a bag or sealable container and shake: it doesn't get much easier. Still, the cost of the ingredients where I live is a bit prohibitive. Be careful with the cayenne: a little goes a long way. One batch I made was hard to drink, because the combination of the cayenne and the hot water made the heat a little too strong. All in all, very tasty.

I put all of the ingredients together last night, so this morning, i was playing with it to find the right amount to use, and i too find that a leveled 1/4 cup of Cocoa is the right amount per 8oz cup of hot water. The Cayenne Pepper is right on! I can't wait to use this for the icing for the two layer cake i'm going to make once i get my 9"x3" cake pan that i ordered.

This wonderful recipe shines when you use a great cocoa powder. If you are not fully satisfied with your results try Scharffen Berger unsweetened cocoa powder. SB makes the best chocolate in the US.

This is a great recipe mix that I am grateful I found. I love Hot Cocoa, and I always buy from the store but since I found this recipe mix from Alton, I never bought another Cocoa mix from the store anymore. I always make this so I have a stock all the time. I don't use the Dutch process one but the regular cocoa that says with antioxidant, I omitted the powdered milk for I always use soymilk/milk instead of water, I added a bit more of cornstarch for I want it to be more thick, and before I store it, I sift it so it will be easier for me to stir the mix. The sweetness is enough for me, for I don't like it to be too sweet, sometimes I adde more cocoa in the mix if I am in the mood and add a teaspoon or more of cinnamon instead of the cayenne pepper. Thanks for this recipe Alton.

after making this delicious recipe for friends it led me to make this one... 1 C splenda 1 C cocoa 1 C fat free non-dairy creamer 1/2 t salt 1/2 t cinnamon 2 t cornstarch make with hot water, milk, vanilla rice-milk or soy-milk. I have one kid lactose intolerant and the other hyperactive (can't have sugar). Not as good as Alton's but close.

Well, since I was unable to find powdered milk that wasn't fat free I decided to just leave that out and make the mix with milk instead of water. It works perfectly! I used three heaping teaspoons of mix to one mug of hot milk. I love the rich flavor, and it's creamier than other mixes I've tried. My only real problem is that it's just a bit salty. Next time, I'm going to cut the amount of salt in half, I think. I like the bit of warmth from the cayenne pepper. Easy, and a perfect cup of comfort cocoa...

It is a cheap an easy way to prepare your own hot cocoa, and the cayenna pepper, it gives a interesting taste to the drink, besides the fact that you can add a little bit more of what you like in the mixture accordingly to what you want. It is just fantastic.

Every morning I have hot cocoa with my grandaughters, it became a tradition last fall. Yesterday, I used up all that we had and forgot to pick up more. I remembered the chocolate episode and AB making an instant hot cocoa mix. Being the baking grammy that I am, I came to the web site to get the recipe and found that I had all of the needed ingredients in my kitchen. We measured everything into the empty hot cocoa container, closed the lid tightly and the girls took turns giving the container a good shake. We made our cups of cocoa and we all enjoyed them. I liked the fact that it appeared less sweet than the store bought mix. I did add another cup of the dry milk to the mix, after taste testing the first cup, and I did omit the pepper. Great recipe and the girls enjoyed being able to help me mix it up.

Alton Brown has never steered me wrong, even when some of the ingredients are a bit unconventional. This hot cocoa was awesome! I made a 1/4 batch (all the cocoa I had left) and mixed it right in the cocoa container. I replaced some of the powdered milk with dry Coffeemate for a bit of creaminess. From the other reviews, I knew not to expect anything sweet, but I was unprepared for the rich, complex chocolate experience I was about to have. If you're not a big fan of dark chocolate, you may not like this recipe. It yields a dark, not so creamy chocolate with a hint of what tastes like cinnamon. Yum! I'll definitely be sharing batches of this with my family and friends.

My husband and I are trying to eat foods without all the weird chemicals. I tried this hot cocoa recipe and wow! we really liked it. It's not very sweet, but like one reviewer said, built the cup of cocoa, and it will be creamy. We used about 9T to a very large mug and hot water. If you want it a little sweeter, use Valharona (spelling) cocoa powder, it's a cocoa powder, but it's a little sweeter than regular unsweetened cocoa. Otherwise, use a really good quality cocoa powder.

I love the fact that this mix does not rely on Nestle Quik, but real from-scratch ingredients. In the interests of saving calories, I put in only 1 cup powdered sugar and 20 tiny packets of Splenda. It turned out excellent (and don't be afraid of that pinch of cayenne--my picky husband didn't even notice it). I like to make it in my food processor (many homemade mixes look less professional because the milk granules stand out), and one batch fits it perfectly. Michelle G. in Michigan

I made this for my wife and kids one snowy weekend and had no idea that they would love it so much! Now they drink a cup of hot chocolate every single day. :) I ended up buying a little hot cocoa machine (Cocoa Latte) that is really just a hot pot with a built in agitator. Now I just addd milk instead of water (usually fat free milk) measure in the mix and press a button. 5-10 minutes later there is a nice frothy chocolate drink. Try the receipt with granulated Splenda instead of the powdered sugar too. Made with fat free milk and fat free dried milk it is only 1 Weight Watchers point per serving.

I make my own hot cocoa mix, which is wonderful. I wanted to try this recipe, because it makes a smaller batch and it is nearing the end of winter. I made it as instructed (leaving out the cornstarch & pepper). I tried a mug and just about hurled it! Sorry Alton, but unless the ingredient amounts were incorrect, it was nasty!! I am going to try and salvage my ingredients by adding lots more dry milk, coffee creamer and maybe somemore powdered sugar, but no gurantees. :o(

This was the best hot chocolate I have ever had. It was less sweet and more chocolate. Even my 9 nine year old loved it and she can be picky. Extra yummy!

I think this recipie makes a great cup of chocolate. I think I'm going to lower the powder sugar while upping more cinnamon and cayenne until I get a more mexican cocoa. I've noticed that some people thought that the even with the powdered milk the concoction was a bit watery. I've solved that deficiency by using a molinillo ( mexican chocolate stirrer). I also used build the drink slowly, first adding enough water to make a thick slurry. Then adding a little water at a time, always stopping to stir with the molinillo, until I reach the consistancy I'm looking for. This gives me a rich cup of cocoa.

Great recipe and easy to put together. Make sure you don't add too much cayenne pepper, which was my mistake. The taste from the instant milk is barely present, which I was wary of at the beginning. However, I'm happy with the results.

I halved the recipe and used Hershey's dutch-processed cocoa for my trial batch. The flavor was good even with cheap cocoa powder; I really liked the kick that the cayenne pepper gave, and it was definitely not too sweet. However, it was certainly watery and not creamy. I will probably have to fill my cup more than half-full if I want it to be richer. But it could also be because of the non-fat dry milk powder that I used (it was the only one I could find in the supermarket). Soooo glad I made my own cocoa mix. Mariebelle's costs $21 for its hot cocoa mix that only makes $7 cups. And this is DEFINITELY a thousand times better than Swiss Miss! That was sickly sweet! Conclusion--make this recipe, but be prepared to use a lot of mix per cup.

We tried this recipe to try to get away from the processed mixes that we grew up with, and liked it so much that we decided to pack some in decorated mason jars for Christmas gifts for friends and family! A nice little package along with gingerbread men and Alton's Chocolate Fudge! Some of our friends have come to visit with their empty jars in hand and asked for refills! We've made about 10 batches so far and we're only halfway through our Vermont winter! Hmmm, wonder what a little addition of peppermint schnapps would do? Super Bowl Sunday sounds like a good test date!

I decided to try this recipe using Splenda, and was wonderfully surprised. It tastes great! The only thing is, the cayenne burns my throat without adding much flavor--maybe it wouldn't be this way if I had used sugar.

I just finished a cup of this after coming in from snow shoveling. It's perfect hot cocoa... very chocolate-y and not too sweet. If you're having trouble finding dutch process cocoa, try penzeys.com. They have the best in my opinion.

This mix is wonderful. It is rich and creamy made with the hot water. I cannot wait to try it with hot milk. I used a good quality dutch cocoa and a very fine (dutch type) powder sugar. The cayenne is key. You certainly cannot put your finger on what it is that gives the beverage that special little ZIP. It adds just the right amount of complexity to the lovely flavor of this hot cocoa. Thank you Alton for a great recipe. My family thanks you too!

I made this this week and found it easy and tatsy. 200% better than the other homeade cocoa recipies I have tried or read and belive me there are a lot out there. It really makes a chocolatey addition to my coffee. A delicious poormans mocha latte.

This is fine drinking chocolate. I found dutch processed cocoa at Safeway (Droste brand). Also, the German/european stores carry it. My only trouble with the recipe was it seemed to have lumps in it. Next time I will try others' advice and try the food processor to mix. I also did the slurry thing the second time and it seemed to help a little. Give this recipe a try--it tastes so much better than the store-bought mixes.

I first saw Alton Brown's Hot Cocoa Mix recipe and thought, wow, that would be a great Holiday gift, paired with some nice mugs and some homemade marshmallows! I had a blast making these for family and friends and have had requests for the recipe so they can replenish their stocks! I even altered the recipe for a vegetarian version of the mix using powdered soy milk in place of the powdered cow milk, and it was delicious!
