Richer than expected - in a good way

Veal can be kind of bland. This recipe was *not* bland. I, as usual, modified it slightly - I didn't have spinach or pancetta, so I added a bit of thinly-sliced leeks and red belgian endive. It ended up really yummy. My Italian (Bolognese) husband really loved it - it went very well with purchased farfalle. And best of all - it was really easy to make.
