This recipe is very similar to a lemon souffle recipe I have. I substituted the milk with 1 cup of non-fat, plain yogurt and it turned out fantastic. I skipped the raspberry coulis and made a blueberry sauce. It's got great lemon flavor and a nice light texture.

I loved the pudding cake and it was very lemony (just like I wanted.) However, the raspberry coulis was just too much tart on top of tart. I think some freshly whipped sweetened cream and a few fresh raspberries would have been a better balance. The cake was very easy to make (although you'll dirty plenty of dishes which to some people translates to 'not worth the effort') so you could probably make this in your sleep after a few times.

While this was tasty (the lemon flavor was perfect)I didn't particularly care for the texture. I don't know if I baked it too long, or whipped the egg whites a little too much, but the pudding was a TAD BIT too rubbery, it had more of a sponge texture. I will try this again though and watch the egg whites a little more carefully and take it out a couple of minutes sooner. I used fresh raspberries for the coulis and that was delightful. I also whipped some cream and sweetened it to top it all off.

I fixed this pudding cake for desert last night, and my family really liked it. The only change I made was to use whipped cream instead of the raspberry sauce. Delicious!

I made this for a large dinner party and it was the easiest and best-tasting cake I have made in years. Definitely make the raspberry coulis - it was as big a hit as the cake itself. Will make this again and again and again....

Made this lemon pudding cake last night for supper and it was simple and delicious! The tangy lemon pudding set up perfectly and the 1/4 cup of flour provided just enough for a lite cake sponge on top. The beaten egg whites gave the pudding cake volume and lightness and the rasberry coulis was a perfect foil! I've emailed my Mom and sisters this wonderful, easy and lite recipe to complement their summer recipe repertoire! I highly recommend it!

Delicious flavors. I actually used strawberries instead of raspberries due to what was in season. Only problem is mine turned out with a lot of 'pudding' and not as much cake as I hoped. Not sure if this was a result of my hubby throwing in the fridge while I was out.

I made this last night for dessert, serving it warm with whipped cream. It was good but my husband and I liked it even better today served cold with whipped cream. I will make this again, maybe trying it with the raspberry coulis.

This was definitely different than any cake I have made in the past. It didn't rise so was VERY flat w/ gooey bottome. The taste was good though. The raspberry coulis was good. I could not find frozen raspberrries in syrup so used frozen and added a dash of caro syrup and some water to the food processor. Nice touch w/ the cake.

This was great - very lemony and light and extremely easy to make. One recipe only made 6 servings tho and we could've used a lot more. Loved the raspberry coulis with it but any berry sauce would be good.

This dessert packs more pow than you would guess. Extremely light and fresh. Perfect after a heavy meal. The cake is a pudding cake, so don't expect a dry firm cake! I liked the raspberry coulis, but I love tart foods! This can be dressed up by being served in wine goblets, topped with the sauce, some whipped crean and a mint sprig. Lovely! I got raves for this one, you will too!
