The results were so good, I'll probably make it on a regular basis. I use my hand mixer for easy cleanup and nix the almonds (unless you use ONLY almonds and no potato) E.V.Olive Oil and lots of it,and good wine vinegar in alternate doses- finishing with oil. Season to taste. Add one egg yolk at the very end to make it creamy- enjoy.
