Using re-fried beans to thicken it up is a great trick. It was delicious and filling, even alone (without any rice or sides or anything). Plus there are plenty of leftovers for the rest of the week.

This chili, although not sooo different from other veggie chilis I've made, is somehow much more delicious! I used a nut-brown ale (because that's what I had on hand), and I also used canned black beans that were flavored with lime juice. I think the lime juice was an excellent addition, and strongly recommend it! Also, even though it sounds weird to stir in refried beans... do it!

I got this recipe from one of Racheal's cookbooks after my sister asked my to make a vegetarian chili for her upcoming Christmas open house. Since I'd never made a vegetarian chili before, I figured I'd better start early and try multiple recipes until I found one I liked. This was the first I tried and stopped right there. This chili has wonderful full flavor. I was a little dubious about adding the refried beans but I'm glad I did. It thickened the chili and added more flavor. I also added corn, chopped celery and chopped zucchini. My sister sampled it and definately wants me to make this for Christmas.

My chapter of the Farmington Area Jaycees (Michigan) held a fundraiser for the Junior Chamber Family AIDS Network called Chili for Children. Each person made a pot of chili and contributed $5 (or if no pot, they paid $10!) I used Rachel's recipe (and gave her the credit) and it won best chili overall! Even the meat eaters didn't care that it was vegetarian. I used the chipolte flavored refried beans - nice twist. Thanks a bunch Rachel!

I loved this! I'm the only vegetarian, in a family of 6 and when I made this for dinner nobody complained! They all loved it. Surprisingly, the boys knew it didn't have any meat in it, but didn't mind!

This is one of my boyfriend's favorite dishes that I make. I leave out the jalepenos since I'm a wuss but it still has plenty of flavor. I actually like this better than meat-based chili. It's awesome with sour cream and shredded cheddar on top and served with southwestern cornbread. Since I usually only cook for myself, I freeze the rest and also freeze pieces of cornbread to go with it. It's GREAT.

I made this chili as a side for some turkey tacos. It was extremely flavorful, affordable and very filling. This recipe also is more than 4 servings and more than worth the effort!

This is a great vegetarian meal that also appeals to non-vegetarians. The addition of the various peppers really enhances both the flavor and the texture of the chili. I highly recommend this recipe.

WOW! Thanks Rach. Best chili recipe. EASY EASY EASY. Very filling. Does not need meat. I love the refried beans in it. Could not find "spicy" veg. refried beans, just used a can of the regular refried beans. And rather than use just a cup, used the whole can. Will make again and again.

I have never had chili with no meat - I didn't think it was possible. This SO proved me wrong. Its easy, healthy and cheap. I make it at least once every couple of weeks and feed all my friends (who rave) then eat off leftovers for the week.

This is so good that it has become my family's favorite. I've added zucchini and left over vegetables, and it still tastes great. I found the spicy beans a bit hot, but my family loved it. If you have to have meat, try adding turkey kilbasa- delish!

My vegetarian boyfriend doesn't like things spicy, so I use an extra bell pepper instead of a jalape?o and cut out the hot sauce, using red pepper flakes instead. It's one of his favorite dishes, and I love it, too!

I added a pound of browned ground round and used beef stock in place of beer. It was wonderful. Next time I will probably add more jalapeno and maybe more hot sauce because I like it hotter. This recipe won the overall best taste at a chili cook-off at church.

This recipe provides a great alternative for traditional chili. My meat-loving fiance actually prefers this recipe to ones involving meat. Try a orange pepper instead of red for a slightly sweeter taste.

I found this recipe to be more of a dip than a chili recipe. I decided to save the jalepenos for the topping instead of adding it to the chili. (I used the jalepeno slices in a jar.)I also put 3 TBSP of Chili Seasoning to give it a more robust flavor. It was almost too tomato paste tasting even though there's no paste in the dish. The crushed tomatoes and the refried beans probably give it that texture. Overall, it wasn't bad, but I wouldn't want to serve it as a main dish. It's more of an appetizer in my opinion.

I made this for my boyfriend and roommate one night when we were snowed in. I had all the ingredients on hand except for the jalepeno, so I substituted some canned chopped green chiles, which worked out just fine. This chili was fabulous. I was feeding 2 very serious meat eaters, but they gobbled this stuff up so fast there was barely any left for me to have for lunch the next day! Great flavor, great texture, will definitely make again!

I am a vegetarian and have had to sacrifice taste many times. I tried many recipes for vegetarian chili, but this was the best! Even my husband, who is a big meat eater, loves it and says that this is the ONLY vegetarian chili he would eat!

This is my first Rachel Ray recipe that I have used. My family and I are not vegetarians, but I like to make several meatless meals a week. This is easy. I know Rachel likes it spicy so I did not use the red hot sauce and used a little less chili powder. It was delicious. My 16 year old son took the leftovers for his lunch today and drove everyone crazy.

I've made this chili a few times now, and it's turned out great everytime! It's quick, easy and full of protein. I did let the chili simmer for an extra 20 minutes or so. Great stuff and will make it again and again!

This was so fast and easy to make and the flavors....oh my gosh, the flavors! The next day, it was even better! The second time I made it, I added ground turkey to it - it was perfect. My niece hates chili, but I forced her to try (FORCED!) - she ended up eating two bowls!

Really enjoyed this - very hearty and healthy - you don't miss the meat. I went a little shy on the tomatoes and used the whole can of refried beans since I like a thicker chili. I also cooked the veggies a little longer than listed so that they were softer. It was a touch spicy for me - might use regular instead of spicy refried beans next time. Good stuff.

This recipe is awesome and easy. The first time I made it I followed it exactly and my boyfriend (a vegetarian) loved it. The second time I made it I added some soy ground "burger". Just make sure to brown it first and add a little more liquid. (I used beer.) Even my meat-and-potatoes dad loved it!

I suggest reducing the hot sauce quantity by half, it may be a bit too spicy for many folks. I also advise cooking the chili longer...the peppers were too crisp for a true chili mouth feel. Pretty tasty in a pinch tho when you need something nutritious, convenient & quick.
