Good Chili 12/28/2004 at 02:11pm User: Anonymous User Rating: Using re-fried beans to thicken it up is a great trick. It was delicious and filling, even alone (without any rice or sides or anything). Plus there are plenty of leftovers for the rest of the week. Great chili! 12/21/2004 at 11:38am User: Anonymous User Rating: This chili turned out great. I love chili but don't like the meat that is usually in it. You can't tell the difference with this recipe. Tastes delicious! awesome!! 12/11/2005 at 06:30pm User: Anonymous User Rating: tasty & healthy!! spicy 12/07/2005 at 10:00pm User: Kim from rrrrrr, AL User Rating: ******* New Fav 12/03/2006 at 04:43pm User: Andrew from Lisle, IL User Rating: New found favorite vegetarian chili!!! Recommend to meat eaters as well! Really delicious! 12/03/2006 at 03:31pm User: Joy from Chicago, IL User Rating: This chili, although not sooo different from other veggie chilis I've made, is somehow much more delicious! I used a nut-brown ale (because that's what I had on hand), and I also used canned black beans that were flavored with lime juice. I think the lime juice was an excellent addition, and strongly recommend it! Also, even though it sounds weird to stir in refried beans... do it! A Winner 12/03/2005 at 09:45pm User: SCOTT from Taunton, MA User Rating: I got this recipe from one of Racheal's cookbooks after my sister asked my to make a vegetarian chili for her upcoming Christmas open house. Since I'd never made a vegetarian chili before, I figured I'd better start early and try multiple recipes until I found one I liked. This was the first I tried and stopped right there. This chili has wonderful full flavor. I was a little dubious about adding the refried beans but I'm glad I did. It thickened the chili and added more flavor. I also added corn, chopped celery and chopped zucchini. My sister sampled it and definately wants me to make this for Christmas. Great Chile 11/30/2006 at 04:59pm User: stephanie from North Highlands, CA User Rating: This was easy and very very very very very very good. I was skeptical but I have to say Racheal knows her stuff. Meatless in Miami 11/27/2004 at 12:17pm User: Anonymous User Rating: Another winner, Rachel! We topped it with plain yogurt instead of sour cream, and it was wonderful. Good 11/25/2005 at 05:54pm User: Anonymous User Rating: Good on a cold winters day. I would cook the vegetables longer, leave out the refried beans, making it with veggie broth instead of beer. Perfect Chili 11/20/2005 at 05:30pm User: Stefanie from West Hartford, CT User Rating: I loved it and it was so easy to make. You can mix it up with different veggies too. I make it all the time now. Awesome! 11/19/2004 at 01:21pm User: Anonymous User Rating: Best Chili I have ever had, doesn't take long, everyone likes it, and heat can me easily adjusted according to taste. Chili for Children Winner! 11/16/2004 at 06:20pm User: CHRISTINE from Sterling Heights, MI User Rating: My chapter of the Farmington Area Jaycees (Michigan) held a fundraiser for the Junior Chamber Family AIDS Network called Chili for Children. Each person made a pot of chili and contributed $5 (or if no pot, they paid $10!) I used Rachel's recipe (and gave her the credit) and it won best chili overall! Even the meat eaters didn't care that it was vegetarian. I used the chipolte flavored refried beans - nice twist. Thanks a bunch Rachel! Vegetarian Chili 11/14/2005 at 06:53pm User: Anonymous User Rating: I loved this! I'm the only vegetarian, in a family of 6 and when I made this for dinner nobody complained! They all loved it. Surprisingly, the boys knew it didn't have any meat in it, but didn't mind! deee-lish! 11/11/2004 at 10:11pm User: LETICIA from Denton, TX User Rating: This is one of my boyfriend's favorite dishes that I make. I leave out the jalepenos since I'm a wuss but it still has plenty of flavor. I actually like this better than meat-based chili. It's awesome with sour cream and shredded cheddar on top and served with southwestern cornbread. Since I usually only cook for myself, I freeze the rest and also freeze pieces of cornbread to go with it. It's GREAT. Fabulous 11/06/2005 at 07:46pm User: KATHRYN from Houston, TX User Rating: You won't miss the meat! Excellent Addendum 10/26/2006 at 03:52am User: Anonymous User Rating: I made this chili as a side for some turkey tacos. It was extremely flavorful, affordable and very filling. This recipe also is more than 4 servings and more than worth the effort! Very filling (and delicious) 10/14/2006 at 09:59pm User: SHANNON from Athens, GA User Rating: This is a great vegetarian meal that also appeals to non-vegetarians. The addition of the various peppers really enhances both the flavor and the texture of the chili. I highly recommend this recipe. simply good 10/10/2005 at 08:38pm User: GENNIFER from New City, NY User Rating: Easy to make, wonderful to eat delicious and so easy to make!!! 09/30/2004 at 09:51pm User: DOLORES from west lafayette, IN User Rating: This is the best chili I have ever tried!!! YOu don't miss the meat a all. Yummy!! meat not required. 09/21/2007 at 09:39pm User: Raulie from Minneapolis, MN User Rating: WOW! Thanks Rach. Best chili recipe. EASY EASY EASY. Very filling. Does not need meat. I love the refried beans in it. Could not find "spicy" veg. refried beans, just used a can of the regular refried beans. And rather than use just a cup, used the whole can. Will make again and again. Yummy 09/20/2005 at 05:34pm User: Anonymous User Rating: I have never had chili with no meat - I didn't think it was possible. This SO proved me wrong. Its easy, healthy and cheap. I make it at least once every couple of weeks and feed all my friends (who rave) then eat off leftovers for the week. good and good 4 U 09/17/2006 at 01:38pm User: tania from miami, FL User Rating: This was awesome-I like it spicy, so I added a chipolte pepper in adobo as well. Top with terra stix and a dollop of ff sour cream and it can't be beat. Great Veg Chili 09/09/2005 at 10:07pm User: Anonymous User Rating: Excellent chili. Do be sure to 'compliment' the chili with rice; tortillas; tofu; TVP; cornbread/bread; to make sure you do get a complete CHON (= protein) Best Vegetarian Chili 08/29/2005 at 05:08pm User: PAMELA from Bloomingdale, IL User Rating: I have to admit this recipe is wonderful. Full of flavor and the consistancy is great. Yes, the trick of adding refried bean is great. Another winner. Adding the refried beans ... genius 08/21/2004 at 02:07pm User: RICHA from Cincinnati, OH User Rating: I am usually not a good cook but this recipe made my boyfriend sit up and notice... we used black beans instead of any other bean type (including black refried beans) and some extra red pepper and banana peppers. Best Vegetarian Chili 08/18/2006 at 05:37pm User: Debby from Nyack, NY User Rating: This is so good that it has become my family's favorite. I've added zucchini and left over vegetables, and it still tastes great. I found the spicy beans a bit hot, but my family loved it. If you have to have meat, try adding turkey kilbasa- delish! Awesome! 07/15/2005 at 10:37pm User: Darlene from Evans City, PA User Rating: This is a fabulous and easy recipe to make. Its delicious and flavorful and takes less than 30 minutes to make. Definitely a keeper!!! 06/27/2007 at 02:15am User: Aloha from Palm Springs, CA User Rating: This is a family favorite(for potlucks, tail-gating etc.) and one of the highly requested recipes I make. Best (Vegetarian) Chili Ever 06/23/2007 at 12:07pm User: Anonymous User Rating: I've been a meat eater, a vegan, back to eating meet and now a lacto-ovo vegetarian, this was a staple through all my many ups and downs - vegetarian and carnivorous. I highly reccommend this recipie...it will please the most discriminating palate. Awesome 06/10/2008 at 02:39pm User: Kate from chadds ford, PA User Rating: Deffinetly an amazing chilli! I would recommend it to everyone! Great, easy recipe 06/03/2004 at 05:10pm User: STEPHANIE from Los Angeles, CA User Rating: This chili is a family favorite now. We make a big batch once a month and it feeds us for 2-3 days! So easy to make, even for someone like me who has never eaten anything that wasn't out of a box! haha Rachael Ray really is the master of quick, great tasting food. Great! 05/30/2008 at 09:03pm User: Anonymous User Rating: My vegetarian boyfriend doesn't like things spicy, so I use an extra bell pepper instead of a jalape?o and cut out the hot sauce, using red pepper flakes instead. It's one of his favorite dishes, and I love it, too! won chili cook off 05/14/2008 at 07:01am User: Teresa from Hoschton, GA User Rating: I added a pound of browned ground round and used beef stock in place of beer. It was wonderful. Next time I will probably add more jalapeno and maybe more hot sauce because I like it hotter. This recipe won the overall best taste at a chili cook-off at church. not so good. 05/08/2005 at 01:21pm User: Anonymous User Rating: I didn't really care for this. I think I like the traditional chili better. Great WITH meat!! 04/29/2005 at 04:04pm User: TYLER from San Antonio, TX User Rating: I tried the chili with meat and it tastes great as well..... Great Alternative 04/26/2005 at 06:13pm User: Anonymous User Rating: This recipe provides a great alternative for traditional chili. My meat-loving fiance actually prefers this recipe to ones involving meat. Try a orange pepper instead of red for a slightly sweeter taste. Good Chili 04/21/2008 at 08:17pm User: Patty from Pembroke, MA User Rating: Was very good and easy to make. Simple and delicious! 04/12/2005 at 01:39pm User: JOHN from Royal Oak, MI User Rating: A basic, fast and tasty chili. Nothing incredible but very good. This was excellent!! 04/12/2005 at 08:47am User: Anonymous User Rating: I am a vegetarian but my husband isn't, so finding meals to suit both our tastes can be difficult. This definately did the trick!! This dish has so much flavor, the meat eaters in your family will not miss the meat! Absoutely Awsome! 04/10/2005 at 05:02pm User: SUMMER from Fort Wayne, IN User Rating: My family is vegetarian, and this is the best chili that we have found so far. Thanks! Easy and Fast Veggie Chili 03/29/2005 at 02:09pm User: Anonymous User Rating: This recipe is really easy and fast. I used what was left over in the pantry and it was delicious! My husband (the meat-eater) loved it! It's just okay..... 03/28/2008 at 01:49pm User: Anonymous User Rating: I found this recipe to be more of a dip than a chili recipe. I decided to save the jalepenos for the topping instead of adding it to the chili. (I used the jalepeno slices in a jar.)I also put 3 TBSP of Chili Seasoning to give it a more robust flavor. It was almost too tomato paste tasting even though there's no paste in the dish. The crushed tomatoes and the refried beans probably give it that texture. Overall, it wasn't bad, but I wouldn't want to serve it as a main dish. It's more of an appetizer in my opinion. Wow! Perfect for Super Bowl Sunday 03/26/2006 at 10:16am User: Jennifer from Salt Lake City, UT User Rating: The first time I made this, I followed the recipe directly. Yummy! The second time was for Super Bowl Sunday so I added ground turkey. I don't the guys noticed as they ate every last drop...probably would have licked the pot for me had I let them.;) EXCELLENT 03/24/2006 at 06:34pm User: charic from round rock, TX User Rating: I love this chili - it is so easy and it is so tasty. I left out the peppers, because i'm not a fan of them. I added extra kidney beans since I love them.. taste and texture were great!! I'll make this chili again and again.. Yummy! 03/21/2006 at 04:56pm User: Anonymous User Rating: It tastes like meat chili. The refried beans give it a great flavor and texture. I added the littlest bit of brown sugar to give it that sweet/spicy combo. Vegetarian Delight!!! 03/19/2007 at 06:45pm User: Alyssa from Oxnard, CA User Rating: I LOVE this chili and have made it for family, friends, and boyfriend MANY times! People cannot get enough. Eat it as a meal or snack with chips. Highly recommend! Surprisingly Good 03/19/2005 at 08:59pm User: Anonymous User Rating: For not having any meat and cooking so quickly, this chili is pretty good. My husband's a vegetarian and I'm not but we saw this episode on tv one day and now we make it all the time. Quick & easy 03/17/2005 at 09:44pm User: Anonymous User Rating: This dish is sooo easy and good that you just can't keep it to your self. All my friends loved it. Thanks to Rachel for having vegetarian options on her show! best veggie chili ever 03/05/2005 at 09:05pm User: Anonymous User Rating: I made this for my boyfriend and roommate one night when we were snowed in. I had all the ingredients on hand except for the jalepeno, so I substituted some canned chopped green chiles, which worked out just fine. This chili was fabulous. I was feeding 2 very serious meat eaters, but they gobbled this stuff up so fast there was barely any left for me to have for lunch the next day! Great flavor, great texture, will definitely make again! AWESOME MEAL!!!!!! 03/05/2005 at 03:25am User: MELISSA from New Concord, OH User Rating: This entire meal is now one of my all time favorites! Too Hot 03/01/2005 at 12:27pm User: KATHY from Belmont, OH User Rating: This was good, but my husband and I thought it was way too hot. If I ever made it again, I would cut the heat. The texture with the refried beans was a little different too. Not sure I liked it. I have recipes I like better for this kind of chili. Still love you though, Rachel. Yum yum!! 02/28/2006 at 04:53pm User: Anonymous User Rating: This chili is so easy to make and soooo good! I'm not a vegetarian so I added some ground beef to it and it just makes it even better!! Tasty, healthy meal 02/27/2008 at 06:09pm User: Joan from Northport, NY User Rating: This is my first Rachel Ray recipe that I have used. My family and I are not vegetarians, but I like to make several meatless meals a week. This is easy. I know Rachel likes it spicy so I did not use the red hot sauce and used a little less chili powder. It was delicious. My 16 year old son took the leftovers for his lunch today and drove everyone crazy. Delicious and easy 02/27/2005 at 06:36pm User: CINDY from houston, TX User Rating: This is so easy to make and it's full of flavor. I knew when I saw this made on TV, that I had to try it. The next day, it was even better! The second time I made it, I added ground turkey to it - it was perfect. My niece hates chili, but I forced her to try (FORCED!) - she ended up eating two bowls! very tasty 02/10/2008 at 05:57pm User: Anonymous User Rating: Really enjoyed this - very hearty and healthy - you don't miss the meat. I went a little shy on the tomatoes and used the whole can of refried beans since I like a thicker chili. I also cooked the veggies a little longer than listed so that they were softer. It was a touch spicy for me - might use regular instead of spicy refried beans next time. Good stuff. Wonderful Meatless Dish 02/09/2005 at 10:37pm User: TRACY from Newport Beach, CA User Rating: I am not vegan, but this chili is my favorite. It's especially good during Lent (no meat on Fridays!). Just make sure to brown it first and add a little more liquid. (I used beer.) Even my meat-and-potatoes dad loved it! Not just for veg lovers 02/06/2007 at 11:27am User: Ann from Wichita Falls, TX User Rating: This is a great chili recipe. I made some just like the recipe called for. Excellent! 02/06/2006 at 08:53am User: Dawn from Quakertown, PA User Rating: This was the first time I ever made chili. It was very easy and came out perfectly! It has the perfect amount of "heat". My husband didn't even notice that it was missing meat! Convenient & Quick 02/06/2005 at 10:22pm User: Anonymous User Rating: I suggest reducing the hot sauce quantity by half, it may be a bit too spicy for many folks. I also advise cooking the chili longer...the peppers were too crisp for a true chili mouth feel. Pretty tasty in a pinch tho when you need something nutritious, convenient & quick. great chili! 02/06/2005 at 02:58pm User: Anonymous User Rating: once again Rachel delivers a great tasting easy to prepare recipe. This is realy great, everyone just loved it.
