A little bit rich and super flavorful with the mushrooms and spinach. It is a nice alternative to the traditional lasagna... and fun to make. I used Barilla flat lasagna noodles and rolled them up with the filling like Cannelloni instead of using standard curly noodles. I topped it off with the gorgonzola sauce like the recipe calls for and it just baked and broiled up so beautifully brown on top. So so good! I recommend that it is served with fresh salad and garlic bread. I've had half a dozen people asking for the recipe! I followed the recipe pretty much to the letter, but had to double it for the number of people in the office, which wasn't a problem. Also, instead of standing the roll-ups on end as the photo shows, I lay them length-wise in a 12x9x2 dish which worked out perfectly (I had two left over for a personal meal). Then just drizzle the sauce over it all -- under the broiler it bubbles up around the sides and infuses even more flavor. When it comes out of the oven you can cut it just as you would regular lasagna. I will *definitely* make this again! Filling was bland, I even used more garlic that the recipe called for. The sauce didn't thicken like it was supposed to. It still tasted okay - the sauce was the only thing that gave the dish flavor - but overall, not going to try again. I added a bit of parmigiano to the gorgonzola sauce to thicken it. I also added a bit of marscarpone to the sauce as well and baked for 40 minutes at 375. Served with stuffed clams as an appetizer . This was the perfect dish for entertaining and filled the large appetites of 6 people. Even though it's supposed to yield 4 servings, I cooked the entire package of noodles and fed 6, and had leftovers. Don't let the medium rating throw you off, the most difficult part of this recipe was rolling the noodles! Absolutely loved it! The gorgonzola sauce is wonderful and I intend to use it with some grilled chicken in the near future, and the lasagna rollups are great with either the gorgonzola cream or just your basic pomodoro sauce. Highly recommend- I did the whole thing in under 30-mins with minimal effort and husband raved that he cant wait for me to make it again! I subsitute Sharp White Cheddar for the Gorgonzola because I don't like that taste, and it fabulous with the Cheddar. When made, the dish looks like white flowers. I liked them both, but give the edge to the tomato sauce. I love this easy, fast method for making the roll-ups - I don't have to refer to a recipe. The recipe was surprisingly easy to make and cheap to prepare so I found it great for a group of people. Everything about the lasagna was wonderful. The sauce is rich, but it was aboslutely perfect for this dish; I would not change it. I felt the filling could actually use a bit more seasoning (garlic maybe), so the rich sauce was a great accompamiment. The flavors melded together very well and all at the dinner table wanted seconds. I have sent this recipe to friends and I plan on making it again. Simply wonderful. My husband is italian and asked me to try cooking more italian dishes. This was my first attempt and I could not beleive the flavors and aroma this put off. Even with a cold we could smell it.
