I am having to give this a four rating since that is the average for my family's rating. I like it better than my husband and son, but in fairness, my husband never met a cornbread that he did like. This is a moist and flavorful bread and if you do like cornbread, I think you'll find this to your liking.

I recently tried this recipe when I invited several friends over for my mother's chili and cornbread and these were a hit! They went so quickly! I used shredded cheese instead of cubes, but it tasted great. It was quick, but it allowed me to make something a little less commercial and more homeade!

FABULOUS!

mIne fell apart

User: Jean from Elkhart, IN    User Rating:
My corn bread fell apart-and i DID have an egg in it--HOWEVER--it was probably my own fault cuz i baked it in 360 oven instead of the recommended 400? 450? cuz of the other things in the oven. i had to bake it 45 minutes to get it done at that temp. Also- i probably should have let it cool before removing from pan..? Was REALLY YUMMY tho!! I did like that it was simple yet different. I will try it again at the proper temp!!!

One of my favorites

I love corn bread so this was a nice twist on the regular bread! Although, I was not a big fan of the corn kernals. They were too hard. Other wise this was great!

This was very good. I served this with Rachael's Jambasta. Next time, I'll try adding some poplano pepper or some cooked, drained andouille sausage to it for a kick !!!

I found this recipe to fall apart easily and was a little bit grainy. I plan to try a different corn muffin mix and try again but I am curious to see if you can add an egg for a little emulsification.

This is a terrific new way to have traditional corn bread. I used a mixture of Co-Jack and Pepper Jack Cheeses with the frozen corn. It was delicious and everyone (even those who do not like spicy things) loved it.

My husband liked it but thought it would have been better with the pepper jack cheese. I used plain jack cheese because I don't like spicy. Will definitely make again.
