I don't get how some reviewers thought this was bland. If you season both sides of the meat like it says, and get each side nice and brown, and follow the recipe as written, you will not get a bland dish. This was delicious! I did have to leave the kitchen when I added the vinegar. I felt like I was choking on the vapors and my eyes started watering. LOL! But the sauce came together very well and it reduced and thickened as it should have. I just paired it with roasted carrots and I was good to go. Will definitely make again! I used all white meat tenderloin out of my freezer section at the grocers. I'm not a fan of dark meat chicken. The frozen tenderloins once thawed are so easy and uniform to cook up and come in 3 pound bags. I served the dish with a simple couscous and Giada's Tuscan Salad recipe that has plenty of veggies and simple dressing. The rosemary, wine and beef stock were truly amazing flavors in this dish. I found that is was missing something but I'm not sure what. It didn't reduce and get thick like in the show. My chicken turned out to be a bit dry. The flavor was great - color perfect! Texture was perfect too. Served it with cous-cous and it was a great pairing. Light and fluffy to compliment the light flavors of the dish. But what a surprise!!! My husband didnt want chicken but that is what I had defrosted so that is what he got! And he didn't complain!! The sauce is incredible (must be the beef broth) and I served it with mash potatoes as the sauce/gravy was so good it needed dual usage. Will definitely make again and it was easy. One note though, I did cook it longer than it said as I used thighs with bone instead of boneless and didn't think it would dry out sitting in that marvelous gravy. When I made this for two people I cut the recipe in half for everything but used only four boneless, skinless thighs instead of the amount stated for ten. The other changes I made were that I didn't have any white wine on hand so instead of using the 1/2 cup that the half recipe would require, I replaced it with about 1/4 cup of cooking sherry. The other change was that I didn't have beef broth but did have a can of beef consumme on hand. It's a little thicker than broth so it may (or may not) have given more umph to the sauce. The chicken was extremely moist and flavorful. I was a little weary about using beef broth in a chicken dish but it gave it a wonderful flavor. I didn't use six sprigs of rosemary, I only used two. I served it over homemade roasted garlic mashed potatoes with parsley mixed in to them and put a salad on the side. I prefer to make this dish with all chicken thighs rather than mixing the thighs and breast tenderloins. I find the chicken to be very tender and the sauce is heavenly! I substitute fresh thyme for the rosemary since this is my personal preference. Sometimes I add sauteed mushrooms to the sauce toward the end of the simmering process if I have them on hand. I usually make this early in the day, refrigerate it then bring it back to a simmer just before serving.
