I have made this recipe numerous times and have never been disappointed. This week the market did not have ground lamb, so I used ground pork, veal and beef and made it more of an Italian stuffed eggplant. Sauteed chopped zucchini and mushrooms with the onins, and omitted the feta, sprinkling shredded mozzarella on top instead. It was excellent!

I've done this recipe more times that I can count, passed it on to friends and family, and no one has been displeased. Even eggplant haters like it. I've done many modifications, including spicing it up more with lots of red chili flakes, adding sauteed red/green peppers, adding cilantro or parsley and adding additional feta, since my family loves it. Of course, these modifications increase the volume, but the great thing is that this recipe also freezes extremely well, and freezing extra individual eggplants for later meals makes the work well worth while. Also, Left over stuffing, with some additional canned tomatoes added is great served over rice as a left-over.

I could'nt find ground lamb at my store, so I substituted 1/2 ground beef and 1/2 sausage without the casing. I also added finely sliced red peppers.

Fast and easy to make. Full of flavor with the Feta and somewhat healthy. I found that it needed a bit more mint. Will make again for sure.

I printed this recipe over a year ago and just found it in tucked in the back of a cookbook. I am SO GLAD I found it!The flavors blend perfectly and great color/plate presentation! Can't wait for my next dinner party!

WOW!!! I was a little skeptical on this recipe...but it was wonderful!!! We loved it. The tastes were so bold...but not overpowering. I have always been scared (or not know how to) cook/prepare eggplant. This will now be my "eggplant recipe". Wonderful for a springtime dinner! YUMMY!!!!

Had two eggplants and ground lamb this receipe filled the spot muck quicker than traditional greek dishes .Great presentation.Serve with a greek side salad and flat bread Yummy
