I'm from Colombia and I appreciate Sara's effort to make our traditional soup. I have to say that my mother and my aunts prepare a delicious ajiaco and it cannot be cooked in such a short time. The secret is to let it simmer for a few hours and to let the potatoes almost melt. Also it is very important to use the real Colombian yellow potatoes called 'criollas' that are found this days at almost all Latin markets.
