Once you make it, you can add or subtract heat by using different peppers or pepper spice. I have used different sausages in it too-depending on what I have on hand. Luguica, polish, hungarian and italian-but andouille is standard. I also prefer to make the rice separately and serve the jambalaya over it. As with most recipes of this type, it is better the next day and freezes well-it you have any leftovers. My family always requests this if we are having a potluck. First I think the recipe calls for way too much poultry seasoning; 1 teaspoon overpowers the other flavors. I cut the poultry seasoning back to 1/2 teaspoon. I also felt the recipe needed minced garlic and dried red pepper. I tend to like my rice cooked into the jambalaya rather than served as white rice -- so I doubled the amount of chicen broth and added the two cups of uncooked rice into the stew once I brought the broth/stew to a boil. I covered it and let is simmer on low for about 20 minutes. It had just the right thickness with a very consistant sauce. Word of note, pay attention to the large deep skillet. I found my cast iron chicken fryer perfect for this. Everyone loved the jambalaya and I got a lot of compliments for it. It's very hearty and has such a grate flavor profile with all the different spices. The best part is, the recipe is very easy. Once you chop up all the ingredients, you pretty much just throw them all in the pot and let it stew. Because the recipe's so simple, I've used it enough times that I have it completely memorized. It's perfect for dinners during the week, I usually cut the recipe in half for just one meal, but sometimes I make a big pot so there's enough leftovers for lunch the next day. Not too spicy but you can make it that way or put Tabasco on the table. Don't like green bells so used red and made a nice color contrast. Most of us have everything in the pantry except the protein and maybe the pepper. Mise en place (French--loose translation is everything prepared before you start-everything in it's place) is easy with this and you can prepare the night before or the morning of and buy the protein on your way home and have it done in a very short time. Easy for a crowd, guests just love it. Make it in a large pan than switch to a crockpot, I have made a few adjustments(don't have a pepper, use roasted red peppers in a jar-add much later on). I use Jasmine sticky rice and place it in the bottom of the bowl or mug. Also I love to add mushrooms. This time I used chorizo (didn't have the andouille). I know french bread is traditional, but the sweetness of cornbread is a way better contrast to the spices. My husband and I dont have kids yet, so 1x recipe is A LOT of food, however, it freezes really well and it's so nice to have a dinner waiting in the freezer on a rainy work night when youre too pooped to cook. I'll give you that jambalya traditionally does have rice cooked IN it, but I haven't seen an etouffe that didn't start with a ruoux, which this doesn't. Now, I did grow up in Texas, but my grandma grew up in Baton Rouge and I spent many childhood days stirring gumbo and jambalaya - and even etouffe, which is Grandma's favorite!
