I think when the recipe calls for "2 cups condensed milk" that it may mean "sweetened condensed milk" ... no? to me here in the states, evaporated milk means no sugar and condensed milk means sweetened (like Eagle Brand.) I never encountered any of the problems, the other raters did. I made my flan in a nonstick cake pan because I couldn't find a flan pan and the caramel went in on the bottom and spread out while cooking. Also, instead of zesting the limes, in the show, she just put the lime peels in the mixture. Also you have to seed the vanilla bean and then throw the seeds and the whole vanilla pod in while you cook. I have made this flan for many, many people, and have always gotten rave reviews. The limes spice it up and make it more interesting, and believe me...it is definitely plenty sweet! Do not add more sugar unless you want it to taste like candy. I really loved it. I usually make flan with evaporated milk instead of whole milk and never used lime zest before but this recipe really came out great. Sugar was left out of the recipe. I realized this part way through making it. If you do try to make this, I suggest about 3/4 cups of sugar beaten in with the eggs before tempuring with the milk. If you leave the sugar out, you'll have something really awful. Once the sugar is added, the flavor is quite good. Don't forget to put it through a strainer before you pour it into the baking dish. If you add the sugar and strain it, the lime vanilla combo is very tasty. Since then, I only use the zest of 2 limes and he loves it. I've made it for several potlucks and everyone raves. Even a friend who doesn't like flan tried it and loved it. I never had a steak without finishing with this delicious dessert. I don't understand the reviews where mention "no sugar". Condensed milk have a lot of sugar in it!! I also know this recipe from Cordon Bleu and California Culinary Academy, they don't use the condensed milk,instead they do it from scratch. At the end is the same flavor. You can do the egg yolks, whisked with sugar until very pale and then putting together with milk, but believe it, condensed milk WORKS!!! Of course, don't add extra sugar, the condensed milk have it. |
