I have come to realize that oil in a cake changes the texture to a level which I find very different than per say using shortening, butter or margarine. Flavor isn't the same and some large dry air bubbles always seem to develop. I'm a very experienced baker/former pastry shop owner, and I find the best flavored and textured chocolate fudge cakes are made with solid fats instead of liquid fats.

I LOVE this recipe. Since I am not an experienced baker, I followed the recipe to the dot and the cake came out perfect! It was moist and rich (not too sweet) and all my friends who tried it, loved it. :)

This cake looked very impressive and easy to me. Once i made it the cake tasted awfull. The brown sugar didn't tasted sweeter at all and 1.5 Tbs of salt was way too much. I did everything exactltly the recipe said but i end up having a salty cake with cheap store brought vanilla frosting. It looked great just as the picture but the recipe was very bad. Not to try again ever. It didn't made my daughter's Bday and i ended up buying a cake from store.

I did not make the cake, but decided to use the ganache to make an impressive glaze. The ganache was easy to make and everyone that ate it loved it! It is tasty and has a nice texture, however mine did not come out as shiny as the picture. I am not sure what I did wrong, but I will definitely use the recipe again.

I made this cake 2x once for a friends birthday in which she proceeded to take the left over pieces to work and claimed baking it in her honor. ;) The second for easter, well lets just say this cake was LOVED be all who ate it. I changed no ingrediants.....

Please believe me. This icing tastes like pure butter with a slight sweetness. I am the Mother of Richness and I LOVE a rich buttercream, but this is just butter. I added a ton more powdered sugar and even some whipping cream to lighten it up. The ganache and cake part was good.

The recipe is terrific. The cake is moist. However I think there is an error in the baking tome. Calls for approx 15 minutes. I have my cakes in the oven for 35 minutes.

I have to make this cake for my sons birthday every year. I also have to make ii for my girlfriends husbands birthday. If I don't they get mad at me. It is a great cake and a good looking cake. If you want to impress your friends make this cake for them. I would suggest it for any one that loves chocolate cake. I dont use nestlies for the ganache I use the good stuff. Scharffen Berger Pure dark chocolate.

This one is a winner. I used the suggested changes (vegetable oil instead of canola, 3 sticks of butter, longer baking time) and it was perfect. The only thing I wish I'd done differently is to use real vanilla extract instead of the artificial stuff. The buttercream only has 3 ingredients and I could really taste the difference. I am an experienced baker and it wasn't difficult or time-consuming. I really recommend this one if you want to present a cake that says "special occasion". The cake is fudgy, moist, and not overly sweet. The buttercream just melts in your mouth. And the ganache makes the whole thing look so elegant.

I made this cake for New Year's Eve 2008. It took several hours to complete but was worth it! Following advice of others, I used 3 sticks of butter in frosting. Also substituted 1/2 tbsp of o.j. for the vanilla in frosting and half black coffee for milk in cake. Baked in 3 9" by 1 1/2" round pans for 20 - 25 minutes (one pan was ready a few minutes before others, so check carefully).

I made this cake for my sweetheart a few valentine's days ago. Turns out we had a few unexpected guests show up. Everyone was just in love with this cake. It took a lot of work on my part, mostly because I didn't have the right supplies....but I have to say it was the most delicious cake I've ever made to date!

This cake is great in theory, but there is a typo in the frosting recipe: it should read 1.5 lbs of butter and 3 lbs (not cups) of powdered sugar. Reducing the butter as other reviewers have suggested will not give you enough to generously fill and frost 3 10 inch layers. The cake is not what I would call a "fudgy" cake. I will sub next time with the chocolate cake recipe from the Hershey's cocoa box.

the cake was extremely moist in this recipe! I would probably freeze the layers for about 30 minutes before icing them, since that helps me keep the crumbs to a minimum! It is a very sweet recipe, and I do believe a MAJOR error is the icing recipe. It says 1 1/2 lbs of butter to 3 cups conf. sugar. I knew that had to be a mistake. I used 3 sticks of butter and that was way too much. I might try next time to use less butter start. I topped it off with some chocolate covered strawberries and it looked beautiful!

This is absolutely the best cake ever! I made this to take to a friends house for dinner and everyone LOVED it. They all asked if they could come to my house for dessert everyday. My husband said it's the best cake he's ever eaten - homemade or from a restaurant. It was just perfect, richly flavored but not too heavy. I HIGHLY recommend this cake. One note: I made half the recipe because I only have 2 9-inch pans it turned out great and we had 8 healthy slices.

this cake was amazing. the first time i made it, it took me forever. but it was definately worth the time it took. i made it a second time and it was so much easier and quicker this time. everyone loved it and it is now requested for any family gathering or birthdays. i followed the advice for the frosting, using 1 1/2 cups of butter and it came out perfectly. my new favorite cake!

This recipe was actually pretty quick to whip up, and simple enough to make as a last-minute-you-didn't-know-company-was-coming sort of dessert. I had every ingredient in my house already. The only thing I was short on was semi-sweet chocolate for the ganache, and I actually just subbed in unsweetened chocolate squares, cocoa powder, and butter-flavored shortening until I had the right amount. Then, a little baker's sugar and come extra hot cream on hand corrected the chocolate until it was shiny and perfect. The point is, of course, that this dessert is incredibly fancy looking and decadent, but doesn't require that you take a trip to the store, or spend all night in the kitchen. One thing: my cake took 25 minutes to cook, not 15.

I followed the recipe exactly as the directions said. It didn't work at all. It came out way too buttery. Very very soft. It tasted more like very soft butter instead of a vanilla frosting. I wouldn't recommend it to anyone.

My family found this cake to be fabulous. I used vegetable oil instead of canola (personal preference) but otherwise followed the recipe as is. However, I did bake the three 9 inch cake pans for 25 minutes, rather than 15 minutes. I suppose you could use less butter in the frosting and not sacrifice the flavor, but it is truly amazing just as it is.

I made this cake last night, and it came out picture perfect! What an impressive dessert! I added some finely grated orange rind to the buttercream frosting, and it was absolutely delicious. The ganache looks lovely, and chilled to a shiny, glossy finish. Top the center of the cake with chocolate shavings for a very professional look. Note: I can't imagine why the recipe says this only serves 6!! The cake is large, high, and rich! You'll get at least 10-12 generous pieces.

I couldn't find 10" pans, so I used 9". I used every bit of both the frosting and the batter. The cake was over 10" tall!!! We made 12 huge portions...and still couldn't finish one slice in one setting. It's perfect for those amazing moments [when you host]...but it did take time. Gotta love a moist cake. Luscious.

I switched vegetable oil for canola oil like many suggested. The cake and ganache were great. I agree with others that the frosting is too buttery. It just tastes too fatty. I think next time I'll use a bit less butter and a bit more sugar and keep adding sugar until it tastes right.

As other said, this only serves 6 if this is all they eat. I had 8 people and some had seconds and still 3/4th of the cake was left. I did what others recommended and used half the butter for the frosting and honey for the ganache. I do wish the cake was a little sweeter, but it was still a hit. With all the cooling it did take over 4 hours to make though.

This cake is THE most celebrated desert i've made, and iv'e made plenty-no brag-- just fact. if you can see my nickname with this review, it says: "picky" in it... well, i am i confess. Here's a tip that will make your cake better: for the buttercream frosting, be sure to add two LESS sticks of butter that what it calls for. this way, it's creamy and yummy... but not too overpowering or anything. the quality of chocolate used makes a difrence, make sure its NOT hersheys or nestle's, oh, and one last thing... HONEY makes a MUCH BETTER (and healthier) substitue of the corn syrup in the Ganche topping\sause. These tips WILL help. make sure you have plenty of time when trying out this recepie for the first time***.

I made this cake to go with the Thanksgiving meal desserts. We had a total of 10 people at the meal and every one of them who tried it agreed that it was amazing. I have always loved baking, but dont usually get much of an opportuinity to do so, so i was excited to see the results of my family and friends when they tried it. I like watching Rachel Ray on T.V., but don't normally find the things she makes so be quite apeeling, but when i made this cake i was very surprised. From now on, i will be making this cake on big occasions all the time. EVERYONE LOVED IT!!!! I dont quite understand what some of the other reviewers are talking about- the chocolate ganache covered the whole cake and looked fabulous, and yes, the buttercream did taste a bit buttery IF YOU ONLY ATE THAT PART OF IT. The whole point of the cake is for it to taste chocolaty with a bit of a twist, so if you taste them both AT HTE SAME TIME they level each other out and make the cake taste amazing. The one and only thing i was not IN LOVE with about this cake, was hte time it took to make, but it was deffinitely worth it.

This took a ton of time to make. The cake was so tall that it did not fit in any of the cake dishes I have, which made it extremely difficult to transport. The frosting was a little too buttery for me (and I LOVE butter). I also think it could use some peppermint.

I made this a week ago because my wife was in the mood for chocolate cake. It made such a big cake (four 8-inch layers, since I don't have 10-inch pans) that after a couple of days I took the remaining 3/4 of it to my office where it was quickly devoured. I got numerous compliments on both the taste & appearance, and had more than one person tell me it was the best homemade cake they'd ever eaten. My only variation from the recipe (besides the pan size) was the use of margarine & shortening for the filling instead of real butter.

I made this cake for my mother's birthday. I found it to be very easy to make and definitely worth it. Just follow the instructions in the recipe. The cake is very dense and chocolatey. The frosting is light and the only change to the recipe that I made is using 3 sticks of butter instead of the amount called for in the recipe. The ganache is the perfect touch for finishing the cake. Overall, it was perfect for this occasion, but easy enough that I would make it again for a weekend treat.

I wasn't sure if I could get out from the bowls and mixers before this was finished...but it was worth it. I used vegetable oil instead of canola (don't like the flavor), and I used just l lb of butter rather than l l/2. Made it for my son's 31st birthday and the crowd went wild!

Takes a lot of time but is well worth it. The ganache makes a lot of difference. The buttercream frosting is sweet but in a good way and definitely cut the butter in half. We also listened to other reviewers and we used baking bittersweet chocolate and cream instead of cocoa powder. Cooking time should be 25-30 min instead of 15 min. Make sure to bake it when you have a lot of people over.

This was by far the best cake I ever made. I did read the reviews and use vegetable oil instead of canola and cut the butter in half. I also accidentally (oh darn!) used Hershey's special dark powder instead of regular cocoa powder. I think that took care of the "chocolatey" issues some people had. It was PERFECTLY chocolatey and not overly sweet. Now everyone wants me to make this cake whenever they can convince me to do it.

This was the most amazing chocolate cake I have ever tasted. My whole family loved it too! It tasted great immediately after baking and also the next day. Very rich but not overpowering. Since I like a lot of frosting to be able to work with, I made one serving plus another half which was plenty. One thing, the ganache recipe makes a lot and if you pour it too quickly over the cake it may disrupt the frosting. Maybe only make half the ganache recipie but don't leave it out!

The cake looked beautiful, but...the ganache didn't cover the entire cake (maybe double it?) and the cake itself really was just average although you should note the clever method with the cocoa powder and hot water and adapt it to another recipe. The buttercream (as mentioned by many)is way off in proportions. It tasted like a thick layer of butter had been spread between the ganache and the cake...not "good eats." Oh, sorry, that's Alton's show.=) The ganache was lovely - shiney, smooth, and chocolatey - and would be great for other things...I really felt a little upset to have wasted the time and money making this recipe.

This recipe is okay, but as other reviewers have noted, it doesn't have a great chocolate fudge flavor. Also, I noted that the baking time is listed as 15 minutes. I think that needs to be adjusted. It leaves me wondering if the recipe itself had some typos. Worth checking.

I was a little iffy about this recipe because the last chocolate cake I tried make was horrible! This cake, however, was easy to make and ended up looking beautiful! My husband couldn't believe I actually made it. Oh, and the taste... absolutely DELICIOUS! So rich and full of chocolaty flavor!

I am an aspiring pastry chef--and I love this recipe! I did make a few modifications to the buttercream (less butter), but it continues to be a huge hit wherever I take it. I also added a raspberry sauce, and it cuts some of the chocolate for those without an addiction. Easy recipe to follow and use, but do prepare to spend a while creating this mouth-watering treat.

i don't bake but when given a challenge i decided to take it. i found this recipe and thought i would try it. although it looks complicated it was farely easy and a great way to learn how to bake. i loved making it and definately intend on making it in the near future being as it turned out great. thanks for the great recipe, an all time fav. for chocolate lovers. very rich and full of flavour. hmm hmm although not something one would want to eat on a regular basis considering that it could cause a heart attack. lol thanks again erin.

The cake took around 40 minutes to bake but was amazing. i followed the suggestion of using only 1.5 cups of butter for the buttercream and that was enough. Everyong loved the cake and we even have orders in for more of this cakes!

As suggested in the other reviews I only used half of the butter asked for in the recipe (and a little less vanilla). Also I only made two layers and then the proportions of icing to cake came out perfectly. It was extremely easy to make and the directions are overall very thorough and easy to follow. Even though it is time consuming, it is definately well worth it. Oh, another thing it most certainly feeds way more than six people. Everybody loved it and was fighting over the leftovers later that night.

This cake was fairly easy to make and also very versatile. It could be made for everything from a potluck to a fancy birthday party. I might suggest less ganache since it seemed to overshadow the excellent buttervream frosting though.

Amazingly decadent... I don't know what more to say. This is perhaps the most amazingly rich chocolate cake that I have ever made. I'm not sure who could eat 1/6 of this cake in one serving. Neither my wife nor I could! I do agree that the recipe does require some modification (as mentioned by some of the other reviewers). Cut the butter in half for the frosting. Make sure to use unsalted sweet butter. Instead of using water and cocoa powder for the cake - use bittersweet chocolate melted in a double-boiler, a little cream, and some double-rich cocoa powder. If the result is too thick, then add some heavy cream or whipped cream (hey, I just had it handy). The result was an absolutely amazing cake.

I had been looking for a fudge cake recipe for ever and finally found this one.It's moist, rich and yes, very chocolatey. My whole family loves this cake that they ask me to make it for birthdays and occasions.And that's that most of my family hates chocolate cake! I use veggie oil instead of canola and sometimes I omit the buttercream frosting and just use ganache for an all chocolate cake. Chocolate lovers beware!

I loved the cake and wowed my family so much that I am making it again for an event tomorrow. I worried about if I would have enough since the recipe says six servings. We ate the cake for several days afterwards! Be prepared to use every bowl and pan in your kitchen though!

I made the recipe for my wife's birthday and it turned out great. The other reviews helped. I used veg. oil for the cake and 3 sticks of butter for the frosting. I melted the chocolate(for the ganache) in the microwave. I put it in the fridge to set up and maybe served it a little too cold. The flavor was much better even the next day at room temperature.

This recipe is one I've done over and over again. I love it and I love the way it looks when done. However, I don't think the recipe as is produces the best results. First, I hate the flavor of conola oil in any baked goods. After the first time (disaster) I'm using veggie oil and getting better results. Also, the cake was not chocolaty enough for me so I am exploring options other than cocoa powder. A mix of semi and bitter sweet worked to suppliment the powder. Finally, the frosting was, as one reviewer pointed out, way too buttery. I would cut the butter in half or double the powdered sugar (but there was A LOT of frosting.) Also, a bit of licquor or almond or orange would help spice up the flavor. The ganache was amazing. This is a great recipe. It needs some patience and modification. But, if you are wiling to do it, it will yield great results. Serves far far more than six.

I have made this cake several times and each time it comes out spectacular! I am always being asked to make it for some event or another. Preparation is a little time consuming, however, I have learned that in most good gourmet recipes, the preparation is time consuming, but the end result is worth it!

I have to say, this is the best cake I've made so far. It wasn't hard at all. I only used three sticks of butter for the frosting and it turned out fine. I ended up making two two layer cakes instead. I just increased the ganache and frosting recipe a little.

Chocolate cake is moist with a not-to-rich falvor - Everyone in my family loved it! My DH who usually hates chocolate cakes thought it was wonderful. The only thing I changed was the amount of butter called for in the buttercream frosting recipe. As a cake decorator, I couldn't see how it could call for 1 1/2 pds of butter with only 3 cups pwd sugar. I use 1 1/2 cups (3 sticks) butter instead - tastes wonderful! Enjoy this cake with everyone - you WILL be asked to make it again:)

I've used this for multiple birthday dinners and it's always popular (though I do not use their frosting; it was unmanageable and a bit unattractive). It makes for a sweet, not too fudge-y, airy cake. Be warned, though, the number of servings is understated; it could easily feed 10 people.

This cake is dense but not too rich. From the ingredients, it would seem like you would only be able to eat a bite or two, but every time I make it, it is gone in a matter of minutes and everyone loves it and requests it at every family gathering now.
