This dinner is delicious and it is the first thing I cooked my (now) husband for dinner!! I do like to use either 16oz crushed tomatoes and 16oz tomato sauce instead of all crushed tomatoes. Sometimes we also just use 32oz tomato sauce. We always make the full recipe and take leftovers for lunch the next day!

Great recipe!! As one of the other reviewers, I too added prosciutto and it was great. As I'm not a wheat eater, I made this with brown rice penne and it was very, very good! The Basil was the crowning touch!

My wife printed this off Oprah's web site about 18 months ago and I put it in the must try pile. I fixed it tonight and it was out standing. It was quick and easy to make. I used spaghetti rigate rather than penne but that's just a personal preference. The recipe made an easy 6 servings. I froze what we didn't eat (certainly enough for another hearty meal) and I'll update with how well it kept.

This is one of the best pastas I've ever had. I make it all the time for company. The only thing I do different is using tomato sauce instead of crushed tomatoes, since I don't really like cooked chunky tomatoes. Everyone needs to try this recipe. You will fall in L-O-V-E!

I am a huge fan of Rachel's work and have rarely fixed a recipe I didn't like. This recipe was not only simple, but absolutely delicious. I made it for my boyfriend who thinks I am some sort of restaurant quality chef. I did add some prosciutto (1/2# finely diced) while I was sauteing the shallots, and I added some red pepper flakes just before I added the vodka. Then just before adding the cream I threw in some frozen peas, just to give a little color and really make it a full meal. This was truly delicious and came together in just minutes. I would recommend to anyone!

I love Rachel Ray. I am from upstate NY and salute her success. I was disappointed, however, with this recipe. The sauce was just too runny for my taste. I have since read other reviews and will try again. This time I will omit the chicken stock and reduce the amount of vodka...fingers are crossed this will work. I loved the taste just not the conisistency.

This was so quick and easy. I think it took me longer to finely mince the shallots than it did to actually make the sauce! Next time I make it I am gonna saute up some italian sausage chunks to add to it.

We made this last night and it was a hit. I loved it just the way it was, however, my hubby though it would be better as a side dish with steak or something. We will try adding some shrimp or some kind of meat next time. I thought it was an excellent dish, even as a main. I let the Vodka cook for quite some time just to make sure it reduced properly. The 2 to 3 minutes that it said in my recipe was clearly not enough.

This was a nice quick meal to make and I was definetly pleased with the results. The flavor is a little on the light side, but the Vodka sauce was so above anything I've ever had from a jar. The only step I added was to do a thin layer of cheese (broiled to lightly crisp) that added a ton of flavor and texture.

I cooked up a pound of chicken in olive oil and garlic to add to this recipe. The chicken definitely added the ingredient to turn this into a main course. My huband even commented that this was just as good, if not better, than our local italian fav. Definitely would recommend and with the added chicken, plan on getting plenty of servings!

I was excited to make this recipe after seeing Rachel prepare it on Oprah. Sadly, I was very disappointed. This recipe is "blah" without the ham/bacon/prosciutto found in classic "penne alla vodka" recipes.

Based on the reviews of the sauce being runny, I only used 2/3 cup of vodka. I also only used about a 1/2 cup of chicken stock to start, then added a little more as it cooked and thickened up. That way, I was able to have a little more control over the consistency. I thought it had great flavor, everyone raved about it and I would definitely make this again.

The key to this sauce is to let the sauce simmer for a long time before you put the cream in. The sauce can be a bit watery and lacking that depth of flavor if you do not let it reduce down for a while after adding that chicken broth. Once the sauce becomes nice and thick (maybe 20 mins or so after adding the tomatoes/broth to the pot? I didn't keep count.) that is when you add the cream. It really makes a world of difference!! Everyone raves about this recipe... But only the times when I had let the sauce reduce and thicken.

Loved this! I did simmer the sauce for about an hour before adding the cream and then for another 15 minutes after adding the cream and noodles. I believe this blended all the flavors beautifully! We served this shrimp on the grill. It was wonderful!

I have made this several times. The only thing I have changed is I use petite diced tomatoes not crushed. And I use spiral pasta. The sauce seems to work better with the spiral. Using diced tomatoes just tastes better. I Love this recipe and so does my whole family!

I have substituted onions for scallions in a pinch and it's fine. My husband hates pasta and LOVES this meal--even the kids love it! Very simple and fast and you can add things to it like chicken or shrimp or broccoli.

I made it for dinner last night & it was fantastic. I added some red peper to spice it up a little. The largest can of crushed tomatotes I could find at King Kullen was 28 ounce. I ended up buying 2 cans and measuring 32 onces but you could get away with just 28 ounce. I wound up with extra sauce.

This is a very versatile sauce. It can be used on any pasta but the penne with the ridges is the best. I have substituted onion for the shallots and dried basil for fresh when I don't have those things on hand. It is still a winner each and every time.

This recipe is really good, however with a little tweeking, it's so much more. I buy sun dried tomatoes from Trader Joes that is packed in olive oil with olives, garlic, bay leaves. I use that for the olive oil called for as it has so much more flavor and then I finely chop some of the sun dried tomatoe, olives and garlic and put it in the sauce. I also add a little extra garlic and some crushed red pepper flakes. I simmer the sauce for at least and hour for richness and concentrating the flavors. To make it a lower calorie version with the same great flavor, I substitute non fat evaporated milk for the cream and cut the vodka in half. It still tastes awesome!

I have been looking for a good Vodka Cream sauce recipe, and this really is the one that turned out best. I have found that adding a tablespoon of tomato paste adds to the flavor and I have added Italian sausage and/or broied chicken breast to make it a filling meal

Its my absolute favorite dish to make for people. I have made it about 4 times, and each time I like it even more! I have changed a few things, I add orange flavored vodka. At first I didn't think i was gonna like it, as i was tasting it as it was cooking, but when it was done, it was fantastic. I also bake chicken breasts in the oven to have on the side of the pasta, i just coat the chicken with breadcrumbs and cook til tender...yum with the sauce over it!!!!!!

I make this pasta every Valentine's Day and occasionally when I am entertaining. Never once has anyone not liked it. (However, I never tell them that it is made with heavy whipping cream) This pasta is delicious and extremely easy to make. Fresh basil adds a lot of pizzaz.

Awesome! I have made this Vodka Sauce countless times for dinner parties. It's so popular, in fact, I make two gallons every Sunday for friends and relatives. I've tweaked this wonderful recipe for my guests who are vegetarian or are particular about eating only organic products. I use easily found organic versions of the ingredients. To make it vegetarian, I have substituted Pacific brand organic mushroom broth for the chicken stock called for in the original recipe. Because good organic crushed tomatoes do not use Citric acid as a preservative, you'll want to add the juice of one freshly squeezed organic lemon to regain the bite and flavor. Toss in a bay leaf for good measure. The final recipe looks like this: Organic Vegetarian Vodka Sauce ============================== 1 tablespoon extra-virgin olive oil 1 tablespoon butter 2 cloves garlic, minced 2 shallots, minced 1 cup vodka (I use Svedka) 1 cup mushroom broth 1 can crushed tomatoes (28 or 32 ounce size) 1 bay leaf 1 Lemon (freshly juiced) Coarse salt and pepper 16 ounces pasta, I like penne rigate 1/2 cup heavy cream 20 leaves fresh basil, shredded or torn Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots. Gently saute shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan. Reduce vodka by half, this will take 2 or 3 minutes. Add mushroom broth, tomatoes, lemon juice and Bay leaf. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper. While sauce simmers, cook pasta in salted boiling water until al dente. While pasta cooks, you can make a salad or other side dish. Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Enjoy! Charles H. Root, III

This had pretty good flavor, but the three times I've attempted making it, its turned out way too runny of a sauce. I have cut back and experimented with the liquids, yet it still seems "soupy" when I serve it. And, to me, the vodka is a bit overpowering. I have put chicken in it and that is a nice addition.

After hearing much about this recipe, I decided to give it a try. I am a fairly accomplished cook, so I wasn't anticipating any difficulty. I have to say that prior to adding the cream, I thought I had a "hot bloody Mary." Apparently, it was too hot. As soon as I added the cream, it curdled. Bummer. I would make it again, but I think I won't use an entire cup of vodka and I will make sure that my sauce isn't so hot when I add the cream. The second it happened, I thought duh, but I had followed the directions....

This was my first recipe and I have to tell you, I could not have chosen a better one. I cooked it for my girlfriend as our Valentines dinner, and she loved it. Trust me, this woman even picks out salt grains she does not like and will never let her food touch each other. Once I realize that I could not buy minced shallots, it was a nice down hill ride. I generally really like Rachael Ray's recipes. This one was good, but definately not one of her best. If you like sauces that are a bit more subtle, this is a good one to go for, but I generally like something with a bit more flavor and zest. I did add some shrimp to it, which made it more interesting, but if you too would like something with a bit more kick I would suggest another recipe.

I have to say that this was an easy and really tasty sauce! I used Kettle One and did add a little red pepper flakes (about 1tsp) to the shallots and garlic. I cooked the vodka down for 10 min and then basically let the sauce simmer for 45 while I put the kids to bed. My hubby loved it and it's even better the next day!

I made this for my husband and a friend and they both loved it. It's nice enough to make for a weekend meal, but easy and quick enough for a weekday. I ended up adding another small can of diced tomatoes and some minced garlic, and my husband suggested adding shrimp or chicken the next time we make this.

I'd say this sauce was just average. First of all, I had read other reviews that said the sauce was a bit too thin, and since I like a real thick vodka sauce, I really cut down on the chicken broth (about 1/2 cup). However, it still was much too watery for my liking. I'll have to cut back even more, and probably let the vodka reduce longer, too. Also, I think I'll add more garlic, and some red pepper flakes to give it a little kick.

My daughter and I took one bite and in disgust, threw the rest away. I am surprised by the number of high ratings. I am wondering what these people usually eat. I am new to the cooking thing and my boyfriend and I had cooked two Rachael Ray dishes a few weeks ago that came out amazing. This past week we tried the vodka cream sauce ... unfortunately I can't say I enjoyed it. As a novice cooker I am unaware of the do's and don'ts when cooking with vodka. With that being said, when we added the vodka to the dish we had a HUGE fire erupt in the pan that could have been a pretty terrible outcome ... therefore, I think that the recipe should have a warning to remove the pan from heat when adding the vodka. No where one the page does it say that ... so all of you novice cookers, be careful when adding that vodka!!

This was one of the first non-boxed meals I ever cooked. It's easy and delicious. Because of guest dietary restrictions, I have made this a few times without the vodka (which I read is only important in dissolving/releasing the oils in the red pepper flakes, which aren't even on this recipe's ingredient list), and it came out just fine.

This pasta dish is all about the EASY sooo good sauce. Just make sure that you saute the onions long enough so that they are not crunchy at all. This is a great dish to throw together with short notice because you can keep all of the ingredients on hand.

This recipe was great. I am not sure what the people who liked bottled sauce better were thinking. As with any sauce it is important to us fresh ingredients and good vodka (rot gut tastes horrible once it is reduced). This did take a little longer than 30 minutes as I prefer a thicker sauce. Overall the sauce was clean and fresh, perfect for a warmer day.

I think I saw Rachel Ray make this recipe on Oprah...came here to find it. It is so easy to make, doesn't take much time and is really yummy! My personal recommendation - make sure you season liberally and allow the sauce to simmer long enough to thicken up a bit. I think I'll be using this recipe for dinner guests this weekend.

I saw the recipe on Oprah and couldn't wait to try it! Mine and my husband's 3 month anniversary was coming just in a couple of days. I followed the recipe almost exactly (I only used 28oz of tomatoes instead of 32oz). Cooked and timed everything perfect, in the end I was left with a runny flavorless pasta dish and a waste of good vodka, time, and money. My husband barely ate it and I couldn't even get the dog to finish what was left on our plates. Good thing we are already married! In other words open a can of tomato soup and heat it up. Pour over pasta and serve.
