My girlfriends and I made this at a party and it was the best macaroni and cheese we ever had! It's now a staple at my family gatherings. For a little more kick, I usually add more of the Emeril's Essence to the top mixed with the breadcrumbs. But it's absolutely delicious!

I have served this to people who like creamy mac & cheese and those who prefer more casserole-like mac & cheese. It was a hit with both! I usually add more cheese to the casserole, with the same amount on the top. Also good with white cheddar.

I just made this recipe as a side dish for my Christmas turkey dinner. Amazing! I took some of the other reviewers' advice and added an extra 1/2 cup of cheese to the sauce, for a total of 3 cups of shredded cheese instead of 2 and 1/2. I used 2 cups of mild cheddar and 1 cup of colby jack. In the bread crumb mixture I used colby jack for the required amount of cheese there. The combination of cheeses made the flavor wonderful! My husband doesn't really like cheese, especially cheddar, but he loved this dish! I am an avid mac-n-cheese fan and this is now BY FAR my absolute favorite recipe! It is easy to make and the texture is amazing...so smooth and creamy! The bread crumbs on top are amazing. I did not have prepackaged bread crumbs on hand, so I just toasted a slice of whole wheat bread and then ground it up in my blender to make fine crumbs. Worked like a charm. I am going to make this recipe again on my birthday in a few weeks, as a special treat. It's better than any other mac-n-cheese I've had in my whole life, and I've had a LOT! Yum!

This recipe is amazing! I use an entire block 8oz of sharp cheddar cheese, rather than the 6oz. It is great, and wonderful as leftovers. Very easy and great for when you need comfort food!

I have never had a mac and cheese recipe that tasted this delicious! I doubled the recipe for a party and received so many compliments. I tweaked it a little bit and was very happy with the results. I added rosemary to the macaroni while it was boiling, then I also added more rosemary and sun-dried tomatoes just before pouring into a casserole dish. The suggestions to add more cheese were right on (I added a little Velveeta and a package of Kraft Classic Melts as well). This is easy to make and well worth the effort. It is just as good reheated the next day as well!

I have NEVER made a roux, let alone homemade macaroni and cheese. I mustered up the courage, and gave it a try. It was FABULOUS. Very easy to do, very little time invested, and really tasty. I even made a little bit more than what was in the recipe-- kind of "upped" the amounts and it still came out GREAT!!

I started the recipe, as a mad rush for a quick addition to some collard greens and cornbread, only to find out I had only 1 cup of milk and a package of shredded "pizza medley" cheese...it still turned out GREAT!! The lesser milk and creamier cheeses made this recipe a knock out- in fact, I am going to stick to my "messed up" recipe in the future as it tasted so good. Thanks for starting me in the right direction Emeril.

My husband made this in about 30 minutes. He used the Barilla brand wheat elbows, which was just delicious (not heavy and wheaty like other wheat pastas)! I highly recommend around the holidays when everyone is turkey and hamed out. Easy to double for large groups and compatible with any side dishes.

I made this for my son's first birthday party and it was literally gone - every last scoop - by the end of the evening!!! Try it - it's delicious and creamy. My only suggestion is to use soft, fresh breadcrumbs - I used breadcrumbs from the can and it made the topping too dry for my taste. Thanks Emeril!!!

I was in a bind...needed to make something for a potluck the next day and only had 1/2c shredded cheddar in the fridge...so I used Velveeta instead! I am NOT a frequent Velveeta eater...I keep a 1lb brick in the pantry ONLY to make chips and queso whenever we have margaritas, but I was in a bind so I used it instead of the cheddar...and the mac was delicious! It was rich and creamy and yummy! I went ahead and used the 1/2c cheddar I had in the topping w/the breadcrumbs, as per the recipe. Since I had a 12 oz bag of macaroni, I did 1 1/2 times the recipe, substituting 1 lb of light Velveeta for the cheddar. I also used a combination of 2% and skim milk. I will try the original recipe next time, but this Velveeta experiment came out very tasty!

I made this receipe and followed it exactly. Prior to placing the breadcrumbs on top, I tasted it. It was wonderful!!!!!!!! Creamy & rich. I then placed the breadcrumbs on top and placed it in the oven. It was no longer creamy & rich and the breadcrumbs seemed to dry out the dish. It was a good dish, I will make this again, but with out the breadcrumbs.

I have been searching high and low for the perfect mac and cheese recipe and I have now found it!!! This mac is cheesy, creamy-simply out of this world!!! I added this for Thanksgiving dinner, all of the adults loved it, but it wasn't that great for the small children, who ofcourse wanted it more than anyone, I would definitely serve it for adults, it gives a little twist to the traditional and tastes great!

I made this with my daughter, who was craving real mac and cheese (compared to the powdered stuff from a box) but didn't like all the recipes containing onion. This was simple, had great cheesy taste (make sure to use the sharpest cheddar you can) and was even better the next day -- although there wasn't much left as some people in our house didn't even get to sample any. We did substitute panko bread crumbs for the topping and the crispy goodness made this just about perfect. Will definitely be making this again soon!

This is a good basic homemade mac and cheese recipe. It's very rich and creamy. I only deviated from the recipe in two respects: 1) I omitted the crumbs on top, since I was serving to adults and kids, and I was afraid the crumbs would scare kids off; and 2) I used a combination of cheddar and parmesan cheeses.

Very good recipe. I saw him making this on tv last night and i just had to try it. I didn't feel like making the essence so I used alittle season salt and it was very good that way too. I also added about a 1/2 cup extra cheese on top and put it under the broiler when it was done baking to make it toasty. Didn't have any bread crumbs but it was fine without them.

I was really excited when I found this Mac and Cheese recipe. The sad thing is I can cook very well, but have never been able to master this simple dish without a recipe. I followed this recipe exactly as written. My macaroni was soupy and slightly grainy, it didn't taste cheesy, and the breadcrumb crust left much to be desired. There are better recipes on this site for basic mac and cheese that have a lower rating, so don't always go by the perfect score.

I have loved everyone of your recipes until this one. I just felt that it had no flavor in the cheese sauce. I replaced the bread crumbs with panko "italian" seasoned crumbs and mixed the cheese with that. I have to admit, that was the best part of this mac and cheese. Sorry!

A great recipe for mac & cheese. The best part if you don't finish it all, you can refrigerate, reheat and it looses none of it's flavors. My nephews love it and the 14 year old even took his first cooking recipe from me to learn how to make this dish.

This was the best mac n cheese I have ever tasted!! Very easy to make and everybody in the family loved it. Even my husband who is a very basic meat and potatoes kind of guy. My 11 month old was shoveling it in so fast we couldn't keep enough in front of him. After reading all of the reviews, I was hopeful that this was going to be a great recipe. I think the recipe calls for too much flour in the roux. All we could taste was the flour - it was not cheesy or creamy at all (I even added extra cheese as many reviewers suggested.) Very disappointed and will keep searching for the perfect mac and cheese recipe.

This mac and cheese was very good. I sauteed some prosciutto and added it to the macaroni. Also, I didn't use the essence in the topping, but mixed bread crumbs and panko with melted butter for a crunchy topping. It was delicious.

I have tried for 10 years to find the right mac and cheese recipe. My poor husband just eats it and shuts up. I have tried Paula Deen's but hers is too dry, I did not care for a few others that I tried from this website. Then I found Emeril's--it was delicious and came out perfect. If you like cafeteria mac and cheese like Luby's or Franke's this is the one. The cream sauce takes a little longer to cook than 4 minutes and I added more cheese, and oh man!!!! My husband just said as I was typing this, "I would eat seconds but I don't dare, I am about to explode!" Try this recipe it is sooooo good!!

I read everyone else's review before making this mac n' cheese and there were some very good suggestion for altering this recipe. I used 2 cups cheddar cheese and 1 cup colby jack cheese and it came out excellent. I also used about half the breadcrumb on top. I used just enough to cover the top. Also, before you move the mac n' cheese to the baking dish, taste it to see if you need to add more salt and pepper.

I hate to be the spoiler here but I thought it was a little to dry for my tatse. This is not comfort food. I made as directed and was disappointed. Not creamy at all. The rue started out nice but I think the bread crumbs absorbed all the moisture during cooking. I will try it again with some changes.

This is THE BEST mac n cheese I have ever made or tried. I can't rave about it enough. I did make a few modifications to the recipe. I used about 2 1/2 cups skim milk instead of whole, reduced the butter to 4 TBSP and used cooking spray for the casserole dish instead of butter. I also reduced the flour a bit because I reduced the butter. I substituted Tony Chachere's Creole Seasoning for Essence, and didn't mix any cheese in with the bread crumb mixture (so I covered the dish for most of the baking to avoid over browning). I also increased the cheese to 3 cups as others advised, but mixed medium cheddar with mild to give it more bite. FANTASTIC!! Definitely try this recipe, you will LOVE it.

This recipe is a little on the high-maintenance side in that you really should pay attention to how many minutes the recipe says to do this or that. As long as you follow the recipe to a "t", it's great! Crunchy top layer with the creamy macaroni. The recipe says to be careful not to brown the flour/butter mixture--no kidding. If you brown it, this recipe comes out sloppy and soupy.

We really liked this recipe, but the amounts seem to be really off. We think the amount of salt is directly related to the type of cheese you use. Overall, it is very simple and a favorite, but you have to tweak it slightly every time to get the right result.

This dish definitely has some kick. I didn't realize that I should have saved the "essence". Next time I would go light on it, otherwise it's got a lot of kick. I didn't have cayenne pepper and left it out (I didn't miss it at all). Easy to make and will make again!

If you add an extra 1/2 c. of cheese and leave out the Essence, this dish still has some kick from the cayenne. I'm going to try it next time using more breadcrumbs too. But if you follow the basic recipe, you can't go wrong!

I followed the suggestion of others to use more cheese; in fact, I used a total of 4 cups and it wasn't the slight bit cheesy. My boyfriend asked where the cheese was. I sauteed some ground beef with onions and garlic and added it to the total mixture before baking and it turned out really good. I would try this recipe again but I'm going to make sure to use LOTS of cheese. It also came out a tad bit bland; so, I'll also add some more salt.

Everyone at my party loved it! I got frustated in the step where you add flour, butter then milk because the flour was clumping up, but hang in there, that goes away after several minutes and the milk does thicken. I added 2 1/4 cups of cheese to the sauce and added 1 cup of cheese to the top - more cheese is always better in my book! Tastes restuarant quality.

My family loves this one. I use a whole pound of macaroni though and add about an extra cup of cheese to the sauce. Fills an 8X13 pan for my whole family of 6. It was love at first bite, this recipe will stay in my collection. The only things I would do differently are 1) Double the recipe. 2) If I don't double it, use a 3 qt dish as recommended. I used a 5 qt (because it was all I had) and it was too spread out for the amount of breadcrumbs used (I opted for panko, delicious!). 3)Cut essence in half. It was too spicy for my 12 y/o (who eats salsa on a regular basis). Emeril, thank you for making me a hero with this recipe.

This mac and cheese is wonderful, but the cheese you use determines just how yummy it is - so splurge on the best sharp cheddar you can find (also use about 1/2 a cup more than the recipe calls for)- I used a 7 year old cheddar from Whole Foods ($15/lb) and I have now served it to about 45 people & they all, and I mean all, loved it. At the last party people were warning their friends/loved one to make sure to get some before it was gone. I did not make the topping - I used Panko Bread crumbs, but tossed them in melted butter first (about 3tbs per cup - it is all about the butter!) Happy eating :)

This recipe was so easy that a child could do it. My 10 year old brother loves it, and requests it often. I like to add just a dash more of paprika when I'm seasoning it. Paired with italian breadcrumbs, it can really round out an Italian style meal for a taste that both adults and children enjoy.

My family all gave this macaroni and cheese a thumbs up. I did follow another reviewer's suggestion and added more cheese. I used about 8 oz. rather than the 6 recommended. I also intend to use sharp cheese next time (I only had medium) for a little extra flavor. Next time I make this dish I plan to mix the bread crumbs with a little melted butter rather than the cheese as the cheese ended up getting hard and crunchy and looked rather unappetizing.

If you don't like the breading (I love it, boyfriend hates it)---don't bake it but make sure you add all of the spices from the breading to the mac----such great flavor! Cayenne is not optional. This recipe was great, and worked perfectly with whole wheat pasta. I did not use the Essence, but did have Italian seasoned bread crumbs that needed to be used up, and they completely made the dish! the seasonings worked perfectly with this meal, and without it I may have worried that it would be to 'bland' for my taste. I was expecting this recipe to be a lot better given the 5 stars it has received. I am highly disappointed. Like some others have noted, it is quite bland. I used extra sharp, high quality cheddar as well as extra amounts of it to try to combat this problem, but it didn't work. There is definitely something missing to this recipe. (The bread crumb topping, however, is great when made with fresh bread crumbs and not those out of the canister.) On the other hand, my husband, who isn't much of a food person and doesn't like strong or varied flavors, liked it a lot. So I suppose for people like him this is a fantastic dish.
