When I added the egg mixture to the boiling milk there was a curdled mess. I kind of think the "cage free" eggs I purchase have a stronger egg taste so perhaps that was the culprit. This makes a ton. Since my husband would not eat it, I have been feasting on this flan for a week :) probably would feed 12 people easily. I almost doubled it to feed 22 people. My only criticism is in the amount of sugar added to the milk/egg mix. So much that you could 'feel' it on your teeth and in the aftertaste. I prefer MUCH less sugar...maybe half the recipe. I haven't tried it that way, but will the next time I make it. More of the cream and custard, less of the sweet. Great recipe overall. I had to bake it longer than suggested. I even had enough sauce pour into a cake pan but needed to cook for about 20 minutes longer.
