This was very good and I had complete silence at the dinner table so it kept them occupied for a little bit. I would highly recomend having a lot of time to do this recipe before starting. This one was disgusting to us. It made 4 parfaits of which we didn't even finish the first two. The meringue topping was a waste, but the real bummer was the custard. It tasted like the evaporated milk and was like a too rich, too sweet paste. I would like to think that the directions caused for overcooking, but I won't even bother trying to make this one work! I did not like the evaporated milk so I used 1/2 evaporated milk and 1/2 heavy cream and the custard was soooo rich and creamy!! This one is a keeper!! Emeril you are the BEST!!! It taste disgustingly sweet with so much sugar and condensed milk. It takes a while to make. I think I spent 10 minutes to get it to thicken up and then I burned the bottom. It was a mess. Since the others reviews indicate that other people really like it. I would suggest keeping a box of instant pudding on hand, and making one parfait other than 4. If it doesn't work out, at least you didn't waste the whole thing. Good Luck!!
