I absolutely love this recipe. I actually have been making it for 4 years ever since I saw Emeril make it on his show. Yes, the garlic takes some time to roast, but it is well worth it! I always buy jarred roasted peppers to make that part easier. I just love this dip, and everytime I make it for parties or potlucks people can't stop raving. My husband and I will even have it as dinner sometimes. So good and filling!!

This recipe is fantastic. I use a little less feta and the feta I use has tomato and basil in it so I dont use as much basil. It is a really filling dip and everyone loves it.

This recipe does take a while, but it is yummy. To shorten your time and get the same flavor buy a jar of roasted peppers.

This is an excellent recipe and very easy to make. Due to roasting the garlic and giving the dip time for the flavors to blend it takes a lot of time, but it is well worth it!

This was a real hit at a party this weekend, everyone wants the recipe, and it wasn't that hard to make. A great change from the packaged dips we normally get, and a good blend of garlic and roasted peppers. This will be a favorite recipe for us.

Even though there are a few steps to this dip, the work is well worth the results. It's got a nice zip to it, yet is deliciously creamy becuase of the feta cheese. The chips are an easy and tasty alternative to anything store bought and compliment the taste of the dip nicely.
