I made this for a dinner party and everyone loved it. I added some extra hot sauce for a little kick. The ingrediants are easy to find and it is very easy to make. I did spill some on the carpet and it does stain.

In order to have real good ceviche skip the cooking part, insted the shrimp should be marinated in only green lemon juice, the acid from the lemon will cook the shrimp

I made this recipe exactly as written and served it as a first course in Martini Glasses. It was so tasty that my husband and guests picked up the glasses after it was all gone and drank the juices!

I made this for a party and it was a huge success. I added more hot sauce and salt to give it a little more kick and it was wonderful. It will be a regular part of my party fare.

This recipe is so easy and so good. Who would have thought that ketchup could be gourmet? I saved some time by using cooked frozen shrimp. The recipe gets compliments at each time I make it.

I made this for a Girl's Night Out on my mom's boat last weekend. It was very well received. It was light, refreshing, tasty and not too high in calories. The girl's all asked for the recipe.

Bravo for this awesome recipe. I had it recently at a birthday party. It rivals the Parrot Club's ceviche in Puerto Rico. The combination of flavors is a masterpiece. So simple, yet when it comes together....spectacular. The crunch of the onion and cucumber, the creaminess of the avocado chunks, coupled with the tang of the ketchup and the meatiness of the shrimp. A true vacation for your tastebuds. I had it on blue corn chips. Make it soon. Your guests will love it.

Although it would be difficult to improve on this recipe, I did add some yellow bell peppers and this was a nice touch. I can't recommend this recipe highly enough!

This was really good. I didn't use the olive oil, used 1 cucumber -no jicama, and added 1 red jalapeno. The ketchup gives it an interesting tang & I thought all of the flavors melded very well together. Very delicious & I will make again.

I served this in martini glasses, garnished with a piece of lime, and tortilla chips on the side. Though it was an appetizer, my guests raved that it could have been the meal. I will definitely make it again!
