My husband hates bologna, and I did not want to throw out the bologna I just bought, so I look for recipe that uses it. It was awesome. My husband likes it so much he asked for a second sandwich. I only use the bologna and slaw; very easy and quick. By the way, I'm from Vietnam (moved here at 18) so I should know how Banh Mi should taste, and I have to say: THIS TASTES AUTHENTIC.

I added the soy sauce and cilantro to the mayonnaise PLUS 1 tsp of sesame oil and a drop of fish sauce to ramp up the asian flavor. The ground pork spilled off the baguette pretty quickly. Next time, I might try sliced pork (see Emeril's version on this website.) Otherwise, version delicious, crunchy with the veggies, plus filling! My boys and husband both said it's a keeper.
