Love it!

I have officially taken over the stuffing job at our family Christmas! It was a huge hit. I doubled the recipe and reduced egg by 1 and stock by 1/4. Then split into 2 pans to bake. I made it at Thanksgiving with double recipe and baked in one large pan. It cooked for over 2 hours and was too mushy. Backin goff liquid and splitting into 2 pans really helped. My family loved it both times, though! Thanks Paula! You Rock!!

should have used my own tried and true recipe

I wanted to try something different , so instead of my own recipe I used this one. Wish I had tried it before I made it for Christmas dinner. ( my guests were probably thinking the same thing)Ouch! Too much poultry seasoning and sage, and way too eggy tasting! I like the idea of adding the crackers and will use that in my own stuffing. Happy New Year everyone!

best stuffing ever

User: annamariie from glendale, AZ    User Rating:
This could possibly be the best stuffing I have ever had. It does have cornbread in it but it is not overpowering nor dry. Even those that don't typically like a cornbread stuffing loved this. It went in a little soupy because of the eggs but bakes up perfect!

I'm confused...

User: Donna from Orlando, FL    User Rating:
How do you call this cornbread stuffing if there is no cornbread in it? It may be delicious, but it's not cornbread stuffing, now if you took that cornbread that is served on the side and add it to the stuffing mix instead of the crackers, you might have cornbread stuffing. I always mix cornbread and regular stuffing anyway.

User: Enjolik from Dallas, TX    User Rating:
I was soooo excited about this recipe. I'm a huge fan of Paula's. However, 7 cups of stock is way too much moisture for dressing! It came out tasting more like grits. I think I'll try this once more with 4 cups of stock.

Total Mush

my sister-in-law made this for Christmas & knowing her she followed the recipe to the letter. It was totally mush and there was no real substance to it. Not crusty on top or anything.I felt sorry for her. No one liked it.

Pretty Good But Very Overrated
12/27/2004 at 02:57pm
User: DAN from Tulsa, OK    User Rating:
We made this dressing this past weekend to go with our Christmas Turkey for a change of pace over our traditional white bread/giblets stuffing. Everyone thought it was good, including yours truly, but it does not deserve 5 stars. The texture was kind of 'sandy' and the flavor was a little bland. WQe added the optional poultry seasoning and sage too. I can't even imagine how bland it would have been without these ingredients. Those of you complaining that the dressing was mushy must have used 7 cans of chicken broth instead of 7 cups. We baked ours an extra 15 or 20 minutes to brown on the top. Overall it is a decent recipe, I think it would be better if it was modified somehow. We will go back to our regular stuffing next year.

User: DAVID from Denver, CO    User Rating:
There's nothing wrong with this recipe if you like super moist stuffing. Personally, I like a like drier stuffing - hey, that's what gravy is for! I also see no point in all those eggs - just extra cholesterol. Never had eggs in stuffing before - maybe a Southern thing.

Pure mush!

User: Katherine from Spartanburg, SC    User Rating:
I just tried this recipe tonight for our Christmas Eve dinner, and it was a complete disappointment. No one in my family even tried it except me because of how mushy it looked in the pan. The recipe says 7 cups of stock, and this is WAY too much. I cooked it for almost two hours for it to solidify, and it still was runny when I took it out. If you cook this recipe, cut the stock amount back to 5 or 6 cups. In addition, the flavor wasn't bad, but it doesn't compare to my grandmother's. Sorry, Paula.

This dressing is simple to make and has a very complex taste. It is savory and sophisticated. If you cook it just past done it isn't dry rater has a great crusty quality. It can also be cut into squares and dried into crutons for a wonderful salad topper. I am very impressed with the ease of this recipe and the wonderful flavor.

This is now my family's favorite stuffing. Being a Southern girl, my mom has always cooked cornbread dressing for Thanksgiving/Christmas dinners. Hers is super. However, this Thanksgiving she went out of town and I did the cooking for my family and my brother's. Hands down, we loved this recipe. I have never heard of using crackers. I was a little scared, but I knew Paula's recipes are the greatest, so I continued on. I did use Jiffy cornbread mix, large chunks of celery, which were also crunchy, and added broth and eggs as I thought was needed. Therefore, I think that is why I didn't have the problem of the dressing being dry like others talked about. It was also extremely easy to make. My family insists on me cooking the dressing from now on, and I will be doing so on Christmas. This is a terrific recipe.

I feel 4 cups of stock would work just fine. Seven is to much, it made the texture very mushy. That is the only change I'd make. I'll make it again with less stock and add veggies.

This is an amazing recipe. My mother has sworn for years, all my life, that she doesn't like any stuffing but hers. I made this one and she made hers. At Thanksgiving dinner, when my mother reached for seconds, she reached for mine. I almost fell out of my chair. But I don't blame her. The stuffing is so amazingly yummy and easy I couldn't hardly believe it. I will never try another stuffing recipe again. This is THE ONE. And I will definitely be making this one at times other than Thanksgiving. The leftovers of this were the first ones to be gone out of the massive amount of side dishes we had left over. Thank you so much Paula! One of my best recipe finds ever.

Our family has always had regular bread stuffing over the years, but I just wanted to try something different. This recipe from Paula Deen was absolutely delicious. I was doing Paula's little trick of tasting underneath the top layer while the turkey was resting, and pretty soon my brother, my daughter, my grandaughter and myself had wiped out about 2x10inch section of the stuffing. I have a request to make it for our Christmas dinner. This is a keeper!

This is how I remember everyone in my family making Cornbread Dressing. It is wonderful!!! Mrs. Paula really has a winner here. I prepared this while my wife prepared her old standby stuffing. By Thursday night, this dressing was gone and her stuffing...well everyone "took a bite to be polite" as they say here in the South. I'm so confident of this recipe that I gave it to my Boss. We discussed boiling a chicken (broth)and shredding it and add to the mix prior baking. Then all you need is a green veggie for a complete meal. Way to go Paula! Keep the shinny side up and your knees in the breeze! John David Mooney Savannah, GA

I'm reading this recipe with my jaw dropped because my mother made this for Thanksgiving this year, but added some cooked, crumbled sage sausage. The reason I'm so surprised is that my mother never changes a recipe!! She is an Awesome cook, but if a recipe calls for 1/4 cup of something and there happens to be a tablespoon or so left, she would never just add it! She has been looking for a cornbread "dressing" (and that is what this is, you could never use this to "stuff" a bird) for a long time and she found a winner in this one!! Try adding the sausage, you won't be disappointed.

The basic recipe for this dressing is fantastic, but the first time I made it I found it to be too wet for my taste. It was really soupy so I reduced the stock to 3 or 4 cups and reduced the eggs to 2. The poultry seasoning is definitely needed. It should not be an optional ingredient. This was a big hit at Thanksgiving. It reheats well too. Didn't dry out at all! Thanks Paula!

My Mother prepares the dressing for any occasion throughout the year. This year, due to her health, I had to do it and was very nervous about preparing it because my mother makes wonderful dressing. This year, she suggested using Paula's recipe (which is much like her own with a few changes such as a sleeve of crackers). I did and it was unbelievable. In fact, everyone thought Mom had made it because it was so delicious and moist. Thanks Paula!

This is the first dressing I have ever made and it was really good. It was so easy to make! It turned out just like it was supposed to. I suppose that everyone has their own "particulars" about dressing. I would have preferred a stronger taste of sage. I would probably back off a few of the crackers (because you can really taste them) and add more sage. I really appreciate this recipe. It's the first one that didn't intimidate me out of trying at all! Thank you, Paula! My husband said it was good dressing. There's the proof, right? (smile)

I had to double the recipe, had to make my own self-rising cornmeal and didn't add all the liquid called for or all the eggs. I did add chopped apple and believe it or not I will add a couple of hard-boiled chopped eggs next time. Sounds gross but tastes good. Thanks Paula!

User: M SUSAN from Dallas, TX    User Rating:
Thanksgiving guests who crave the very moist style of dressing raved over this. Couldn't find self-rising cornmeal, so added a little baking soda and powder which may have affected the result. I liked it with the addition of alot more fresh herbs, but frankly do prefer a crunchier style. For leftovers, I added some chopped apples and walnuts and baked it in muffin tins and that did the trick. This recipe is a classic. Thanks!

I made this recipe for Thanksgiving this year, and I am certainly not going to wait until thanksgiving to make it again! I used Paula's cornbread (which is good because it's not a sweet bread mix like the Jiffy mix.) self-rising mix was available at the local walmart and its so easy to make...i would never substitute anything. When making the stuffing, make sure it looks fairly soupy, adding the 5 eggs binds it together quite well. Definitly I used fresh sage, and the poultry seasoning, and lots of fresh pepper and salt. I loved this, Paula. Thanks for a recipe that is going permanently in my recipe box!

This was a wonderful stuffing. The next time I make it - I will not put the effort in to making the cornbread - I would probably just pick up store mix and cube & toast it. It took a few grocery stores to find self rising cornmeal. I used sourdough bread instead of white bread. Everything else I followed the recipe. The consistency & flavor was delicious! It did not have a lot of fighting flavors - perfect to receive gravy!

The cornbread was very simple to make and I made it the night before. I did add about 2 more tsp of sage and poultry seasoning (I doubled the receipe) than the receipe called for and it came out perfect! I also added 4 hard boiled eggs to it. My mom said this will defintely become the family receipe for stuffing because we really didn't have one. Thanks to Paula Deen for yet another "Out of this world yall" receipe!!
