Finally...Flawless greens every time! 07/06/2008 at 08:13pm User: Michelle from St. Petersburg, FL User Rating: Collard greens are my least favorite, so I substituted turnip greens. They came out absolutely fabulous. Cooked them for my mother's 80th birthday party and got rave reviews. Gotta say that I cut back on the vinegar and used less red pepper, but that's just my personal taste. What I love about this recipe is that it comes out right EVERY SINGLE TIME. Even beats the best of the Real South! 03/10/2007 at 09:41pm User: Melanie from SD, CA User Rating: A wonderful flavor of tang and spice. Add a little cayenne and heat it up even more. Beats some of my favorite greens made by my good friend from the South US. I would definately serve this to those who have never tried greens--they will have cravings! the best ever 08/11/2005 at 08:52pm User: kristen from Kapaa, HI User Rating: these collard greens will make you never eat them anywhere else again. friends that usually hate collard greens mopped them up and even kids went crazy for them. if you're sensitive to salt, you can use one ham hock instead of 2. i usually simmer it for a hour or two longer and then use kitchen shears to cut up the meat and pull the bone out. delicious and easy!!!! Easy Does it 07/21/2005 at 12:42pm User: Anonymous User Rating: This recipe was fun and easy, espically if one has never made collard greens like myself... my 11 year old even ate them. really good! 01/01/2005 at 05:41pm User: LATISHA from Twentynine Palms, CA User Rating: The greens was so so good. Finally, a way to make greens taste delicious! 12/09/2004 at 03:27pm User: VALERIE from Atlanta, GA User Rating: I was definitely not disappointed by this recipe - the greens were so tasty I had 3 helpings! I couldn't find ham hocks so I substituted prosciutto and bacon, which gave it a fantastic flavor. I also used kale instead of collards. A real gem of a recipe - I will make this again and again.
