We LOVED this roast! My husband gave it the greatest compliment of all - he didn't put ketchup on it! And I've never seen him eat a roast without ketchup. I was worried about the saltiness after reading reviews, so I used one can of Healthy Request mushroom soup, and instead of the boullion granules and water, I used one can of low sodium beef broth. This was the perfect amount of liquid, and combined with the juices of the roast, it turned out perfectly! I did cut the bay leaf down to one, as I don't particularly care for bay leaf, but I'm glad I did add it, because it blended very well with the other flavors. SOOOOO flavorful, I can't understand the other reviews saying it had no flavor. I also added some fresh mushrooms the last 2 hours of cooking and they were scrumptious in the gravy. I'm so glad I found this recipe, it's the one I'll be using from now on. Thanks Paula!

This pot roast was so tender it fell apart with a fork, no need for a knife. My only complaint is that I think this recipe calls for too much water. I will try next time with about 1/3 of the water and see if the roast is still as tender but with more flavor. I was disappointed that the cooking liquid was so watered down. I couldn't make a decent gravy out of the liquid, I had to scrap it and use beef broth and bullion instead. Next time I will only add enough water to come half way up the side of the roast and see what that does. However, if it means the roast won't be as tender when not fully submerged, I will try doubling up on the soup and chardonnay and see if that makes a difference. Overall, pretty good.

One of the best stews we have made. I was concerned about it being too salty after reading the reviews and the initially tasting, but once it cooked for 8 hours, that was not a problem at all. I have always used a med to heavy red wine and wasn't sure about using a chardonnay, but it works. I threw in some carrots, turnips, and mushrooms and that added to the flavor. We used tri tip strips from Costco which just melted in your mouth.

I don't usually care for pot roasts - even when they've cooked all day in broth, there still seems to be that element of dryness.... Well, this is an exception to the rule. I even ate the leftovers for lunch the next day!!!! This is easy to make, and it tastes absolutely amazing. My entire family just loved it.

I have never tasted a better pot roast. I did read all the reviews and made a few changes to suit my taste but this was the bomb! Even cooking it almost 10 hours it was moist and delish! I ommited the beef bouillon and chardonnay. I used 1 can of beef brooth and the 1 can of cream of mushroom and only enough water to cover it half way up. It was fantastic.

This is by far the best Pot Roast I have ever made. I have always made my Roast the way my Mom did with the onion soup mix. NEVER AGAIN (sorry mom). Between the wine and the mushroom soup I almost couldn't stop eating. I did cook my in the oven instead of the crock pot. I raised the temp to 375 for 1 hour then down to 325 for 4 hours. I added carrots and potatos for the last hour. Paula you are by far my favorite. This is a must try. Not to mentioned the leftovers made a great pot of beef barley soup.

Do not coat the roast in the house seasoning. Rather rub evenly, but lightly. "Coating" the roast makes it a little too salty. I'm also experimenting on how to add veggies to the roast.

As a person who loves her food to be full of flavor, I have been on a quest to find receipes for comfort foods with more flavor than they normally come with. I can now take Pot Roast off my search list. I just added sage to Paula's house seasoning and used beef stock instead of bouillon cubes and water. The gravy this recipe produces is comfort heaven. The meat was tender. There were no leftovers.

WOW! Paula, you have done it again! The only change I made was using beef broth rather than bouillon to reduce the salt....but it was absolutely outstanding! We thickened the beautiful "juice" and made the most awesome gravy - served it with fluffy mashed potatoes for HIT!

I blew $15 on an organic roast from Whole Foods, covered the roast with chicken stock, carrots, small red potatoes and a can of diced tomatoes, so disapointed. 6 hours on low would have been rare to medium rare. 8 hours and your are eating jerky. Bob M

We loved it! Did not use the "House Seasoning" instead, seasoned 1 side with salt, pepper and minced garlic, the other side with garlic salt before searing. I used 1 can mushroom soup, 1 can beef broth, 2 large beef boullion cubes and 1 can water or less..just to the top of the roast. I added carrots during the last 3 hours. I made gravy on the stove using the Kingsford cornstarch gravy recipe on the side of the box. Served with mashed potatoes and bisquits. A keeper!

You have to try this pot roast! I've made it at least 10 times in the past few years, and it has never failed. I do have some tips, though. Use a Chardonnay that is acidic, not smooth. Jacob's Creek is a good pick...I won't make this roast without it anymore. Also, use the Knorr large beef buillion cubes and slightly smash them like the garlic. I increase the wine to 1/3 cup, and usually only add a little bit of water. If you add too much, you don't end up with the amazing gravy that this recipe can produce. (I usually use a 2lb roast, though, so that could affect water amount). Set everything out the night before, spend 10 minutes getting this in the crock pot the next morning, and you'll be thankful! I never thought I'd serve company out of a crock pot, but this dish wins every time!

My family and I really enjoyed this recipe. I had read the reviews before I made it, so I cut back on the amount of bouillon I used, for fear of it being too salty. I also didn't have cream of mushroom soup and used a can of beef gravy instead. I also added carrots, celery and more onion with one hour of cooking time left. The result was great! We'll definitely be keeping this one!

Overall I think this recipe is great. I did tweak it a little. I use one can of beef broth, and one can of cream of mushroom soup. I do not add any wine or water. I also upped the garlic cloves to 6 and reduced the bay leaves to one. I cut way back on the oil as well. The cooking time I think is a little long. Normally after about 6 1/2 to 7 hours, my meat is at the correct temperature. 8 hours tends to dry it out a little.

I do not like pot roast, but a girl friend highly recommended that I try this so I used an English cut chuck roast (big thick cut). I forgot to get bouillon cubes, so I used 3 mounded teaspoons of Kroger's aug jus mix (59 cents a package, I always keep it on hand) - forgot the onion so I added onion powder at the end. True the gravy was thin because I had such a large hunk of meat, I had to add more water to cover - easy remedy was to boil down the liquid to about half - OUTSTANDING flavor (I used an entire small 187ml twist off top bottle of chardonnay so I was not stuck with extra wine).

I've never made this roast in the crock pot. The recipe in her cookbook isn't written that way. I see a lot of people saying it's a little too salty, and I agree, so I have modified it a little. Try a low salt bullion and low salt cream of mushroom soup to lessen the salt taste. Don't skip the dry red wine cause it makes the whole dish! Place it in a roasting pan, make sure it's covered w/liquid (between the mushroom soup, water and wine) and slow cook it in the oven til it falls apart! Shared this recipe w/my mom and she makes it all the time for group dinners.

My family does not like well done beef (as long as it is no longer mooing it is cooked enough for them) so I never make pot roast. But with the great reviews, and a GREAT sale on pot roast at the market, I decided to take the plunge. Everyone ate their fill! I used very little of the house seasoning (too much salt),lower salt cream of mushroom soup and beef base instead of boulion (much lower in salt). It was not salty at all! Everyone ate their fill and said if pot roast was ever on sale again it would be OK to make it again. I made boiled carrots and potatoes in a separate pot, and all was eaten up without a complaint. I also took some of the copious liquid out and thickened in a pan on the stove to make a gravy. The rest will be a base for a beef vegetable soup.

I agree with prior reviews that adding some extra zing (liquid smoke, worchestershire, beef broth, etc.) and less water makes for a much tasier roast. The first time I made this dish, it tasted like boiled meat. By modifying the recipe, I made it my own and it was wonderful.

This is a great recipe. I changed just a little. I do not use much salt so I knew the bouillon cubes would be too much. Instead I used two cans of chicken stock and no water. Simple, easy and flavorful - what more could you want. The gravy does need some thickening and I would throw in some veggies next time.

This is a great and easy recipe for your slow cooker. However, I reduced the bouillon by half and found that it was still very salty. (And I eat salt on everything!) I will probably make it again, but will still reduce the bouillon even more.

This pot roast was the first one that I ever made. It came out perfect. So juicy, and fork tender. The flavor from the garlic, bouillon cubes, soup, and wine absorbed into the meat so wonderfully. I will definitely be using this recipe again.

I have a family style restaurant and was looking for a good pot roast recipe. Where better to go than Paula for comfort food....We cooked this in our Alto Sham for 6 hrs and it was delicious. Used some wine from our region and a cream of mushroom with roasted garlic soup mix. I fed our staff and they can't wait to see it on the menu.

This was awesome..my family of five loved it. I omitted the wine and put it in the oven. It was delicious and just fell apart, I also added some flour to the drippings to make gravy..ohh so good. This is a keeper!

I made this yesterday morning and by the time I got home from work, it was done. This was the best pot roast I have ever made. My husband and kids loved it. It fell apart, which is the way we like our roast. I added carrots and potatoes, and left out the onion since my husband hates onion, but I did add a little onion powder. I used beef broth instead of Chardonay, since I didn't have any. There were no leftovers for lunch. I will definately make this again.

This was my first attempt at making pot roast. Using the tips provided by other reviewers, I used the lipton onion soup mix, much less water, and cabernet sauvignon with the recipe. After cooking a 2 lb. roast for 6 1/2 hours, the meat was extremely tender and flavorful (although a tad bit too salty). I will definitely make this dish again but next time I will use less salt and onions.

very tasty, easy dinner. I didn't use as much water as the recipe calls for. I put enough water in to cover the bottom 1/2 of the roast. I also added carrots & celery for the last 3 hours for extra taste. When finished, I strained the liquid ... then boiled until thick for a great gravy.

I added potatoes and carrots; put garlic in the meat. WoW!! Came out great! My 9 year old son eat every bite and came back for more. My 5 year old daughter didn't really care for it, but I expected that. As for the rest of the family (including my mother-in-law), everyone loved it! This will be a regular in my house!

I also skipped the water and added beef broth. I sauted/seared carrots, red potatoes, garlic and mushrooms with the wine and butter before adding them to the crock pot. A half can of tomato paste was also a good addition.

I have tried this recipe 3x the first 2x it was good but there was a weird after taste so I took out a few things to find out where the taste was coming from found out it was a mixture of things. The bay leaf, onions, and chardonnay that was giving it that weird taste. I also changed the recipe a little bit instead of boullion cubes I used 1 cup of beef broth and 1-10.5 oz can of mushroom soup and also I skipped the frying part and added a extra hour cooking time, I also marinated my meat in 1/2 cup of worchestershire sauce for 1 hour before cooking. My husband or my human taste tester loves it with the small changes that I made. This last time I made it I did it for Sunday dinner but I cooked it over night lets just say my human taste tester must have sensed that it was done because by the time dinner rolled around he had been eating pot roast all day thank god I made a double helping. I would just like to say thank you Paula and also to all the men and women that posted reviews with your help I have found the ingredients to a delicious, mouth watering, tender fall apart pot roast. Thank you all.

This is on my regular recipe rotation but I spray my grill pan and brown the meat. I also use reduced-fat cream of muchroom soup. It is the best slow cooker pot roast recipe I have tried, and I have tried lots of them. I separate the fat from the juices and make a gravy after it's cooked and serve it with mashed potatoes and carrots.

Oh my goodness, this is so good. So I substituted 2 packages of onion soup mix for the boulion cubes. I also added cut up potatoes the last 2 hours to soak up some of the liquid. I deglazed the pan with the wine that I seared the pot roast in and added it to the pot and then topped it off with water to cover because I wanted to copy the recipe exact. Anyway, there was a lot of liquid so I added flour and it made a great gravy. This was falling apart and so yummy. The only hard part was waiting 8 hours to eat it because it smelled so good.

This was the most fantastic and easy crockpot pot roast recipe ever! Not sure why other reviewers said that there wasn't enough flavor because this was the most flavorful meal ever made in my crockpot. Good suggestions taken from other reviewers include: (1) Only put about 1 cup of water in - to just a little below the level of the meat, there is more than enough liquid leftover to make a nice gravy to accompany it. (2) I like carrots and potatoes with my pot roast. Normally they tell you to put them on the bottom and the meat on top but I reversed that and put the carrots/potatoes in for the last 2-1/2 hours and they were perfect, not mushy at all. Even my 18 month old who is NOT crazy about meat gobbled it up for dinner. Thanks Paula this recipe is WONDERFUL!!!!!

This was so good. I had to alter some because I didn't have any wine so I used 1 can of beef stock and a splash of Wistershire (sp?). I also thickened it at the end with corn starch. The roast was just perfect and the gravy was amazing. I put some in the freezer for another day.

I used Better than Boullion instead of cubes, but everything else as Paula did, only baked it in my roaster at 325 for about 3 hours. My husband said it was the best roast I ever made. Usually they get stringy. This one was firm but melted in our mouths. I have yet to fail with her recipes. Thanks Paula.

I have now tried this recipe twice and it was very good. I don't have a slow cooker so I cooked it in the oven on 250-300 degrees for about 5-6 hours. I think the buollion cubes made it a little salty the first time so I used less the next time and It was better.

This was a wonderful recipe. After 7 hours in the crock pot on low, the meat was tender, tasty, and just right. It was more like a stew because I added potatoes in the beginning of the cooking, then added some more at the end of the cooking. I also used golden mushroom soup, one can beef broth, 3 T. worchestershire sauce and a dash of liquid smoke. I had friends staying with me and they loved it!

I was looking for a traditional pot roast that could be done in the crock pot, but still had the wonderful flavor of the roasts done in cast iron dutch ovens. I tried this recipe and now it will be my pot roast of choice. THis is a very moist and tender roast, with great flavor from the onion and garlic. I didn't have Chardonnay on hand, so I used red wine with great results. My family loved this roast. It makes a great Sunday supper with so little prep required of the cook. I served it with rice and steamed asparagus.

I followed the recipe exactly. We were disappointed based on a) grease from the meat stayed with the dish -- would have been better in the oven b) expected better taste - bland considering all of the ingredients. Probably would adjust by eliminating cream of mushroom and adding less than 1 cup water rather than enough amt to cover.
