It might work if you tried adding some vegetables (green beans?), coconut milk, and either some real spices (cumin, turmeric) or more curry paste. Needs longer simmer, but good! 04/15/2005 at 12:26am User: AMANDA from Boise, ID User Rating: I made this chicken curry with a low-carb twist: xanthan to thicken the sauce instead of flour and low-carb canned peaches instead of mincemeat. I also added peas, per the comment of another reviewer (frozen petite peas, my usual). I also used chicken thighs (skin removed, bones intact, which is traditional in Indian cuisine) instead of breast meat, and I let the whole mess simmer until the meat reached 170 degrees inside, about 20 minutes. I noticed that the ginger, which I minced quite fine and sauteed at the beginning with the onions and garlic, was still crunchy and bitter tasting as I ate. Not good. I think I need to brown the meat, saute the aromatics, add the spices and stock, reserve the peaches and the peas, and let the meat and aromatics simmer in the slow cooker somewhere between 4 hours and all day. That should sufficiently soften the ginger, and it should let the curry flavor penetrate the meat more, which it needs to. Then I can add the peaches and peas at the end of the day, and top with cilantro. I'm a personal chef, so I'm testing this recipe to add it to my menu. I think the peaches are a great addition. Fresh peaches when they're in season will be even better. All in all, this is a very good recipe. I like Rachael's ideas, and I find they're easy to adapt to low-carb diets. I thought as good as what you can get in restaurants as well, and it was really fun to learn what spices are used in the dishes we love at thai and indian restaurants. We made Alton Brown's Indian Rice pudding for dessert, which went really well with this meal. I have never been brave enough to try cooking their cuisine before because of my lack of knowledge when it comes to their spices and way of cooking. But when I read the reviews I had to try it. OH my gosh!!! It was excellent. I can't wait to cook it for my mother in law when she comes to town! Oh, and I took someone else's advice and substituted mango chutney for the mincemeat. Yeah, mincemeat didn't sound too good. And adding raisins as a garnish is REALLY good as well. Plus to even make this quicker, instead of cooking chicken I bought a rotisserie chicken and pulled the meat off and let it simmer in the sauce for a little bit. It was EXCELLENT!
