We loved this at home. it was easy, quick and really tasty. i eat it for lunch with some fruit and it is so great. filling and yummy. i make it all the time to take pot lucks and it always makes a hit.

This dish is great for a light lunch. I like to make this ahead of time and keep it in the refrig. and then take it to work for lunch. Make it as spicy as you like.

Intuitive--added more zucchini than called for. I found the tomatoes to be a little too acidic for my palate. I added a couple pats of butter towards the end to round out the flavors. Tasty and quick--would make again.

Not a bad side with the curry, but pretty bland compared to a more authentic recipe. Rachael's recipe is much lighter and healthier than the real thing, so it's not a bad trade-off.

This went really well with the Chicken Curry In A Hurry. I liked how clean it tasted. And the little bit of a spice kick it had.
