Also I put some of the bacon in the beans and the rest on top. thought it would be too sweet... 07/04/2008 at 07:47pm User: Anonymous User Rating: this was the easiest baked bean recipe i've ever made. i've used some of sandra lee's baked bean recipes, && a couple of homemade recipes...but, this was , by far, the easiest. i tasted it before baking && was scared it would be too sweet...but, after baking for almost an hour, the bacon fat released into the beans && cut some of that maple syrup in the recipe. i made it today, for the 4th of july, && it went over extremely well. everyone kept asking for the recipe. but, i'm from the south...if u're northern, i'm not sure it will go over as well. this is a recipe i would most definitely use again && keep on hand in my recipe box. Instead of using 2 16 oz cans of beans , used 2 28 oz cans of Bush Original Beans and eliminated the bacon. Kept all other ingredients the same, but added 4 tbsp Bourbon. Heated with cover off so they would not be soupy and they were delicious and were a big hit. And still, they were really sweet enough for our taste. Can't imagine them any sweeter. Just the right touch of sweetness with the perfect touch of maple, hickory smoke and onion made this go straight to my recipe box (and I'm choosy about what I put in my recipe box). Only thing I did different was fry my bacon first (until almost done) before putting in the bean mixture. And add a few crisp crumbled to pieces to the top after it came and bubbly and delish. We put the filled dutch oven on one of those grills that is pulled behind a truck. After the coals were ready and the pork was wrapped in foil and on the grill for about an hour, we put the beans on and let them do their thing with a few stirs now and again. The beans were done to perfection as was the pork. I will definitely make these again. This recipe got the thumbs-up approval from the UgMo's (the father's of our 12U girls fastpitch team). I drained some of the juice of the beans because I didn't want it too runny. I also trimmed some of the fat of the bacon more less out of personal preference due to high cholesterol in the family, it did not take away from the flavor of the dish. The only thing I did differently is to fry the bacon first and then saute the onion in the bacon drippings and drain the canned beans. Less fat, thicker beans and no undercooked onions. It was still a little more runny than I would have liked and I ended up cooking it longer so the bacon would be more cooked. If you try this recipe I strongly suggest that you half the amount of onions and dice them fairly small. I can't help tweaking recipes to add my personal touch and preferences. I also took the good advice of others who put a review online. Here's what I did to enhance the recipe: I drained the juice off of the cans of Pork n' Beans so the end result wouldn't be so runny. I only used 5 slices of Turkey Bacon instead of the 1/2 pound. Who needs the calories? And it tasted just as yummie with less fat and calories. I addes less sugar and less syrup just so it wouldn't be SO sweet. Hope this inspires you!
