It is so simple and tasty. It is a great dressing to serve with your Mexican night entrees. My husband LOVES this salad, and he's not a huge salad eater. My Dad is the same way and loves it, too. When tomatoes aren't seasonal and I can't find yellow ones, I've substituted yellow or orange bell pepper instead. The first time I made it, a few years ago, my grocery store did not have bib lettuce. I substituted romaine lettuce, and it was terrific that way. I've made it with romaine ever since. The dressing is realy what makes this salad pop with flavor, and it's a healthful, creamy dressing with no bad fat in it. Try it, it'll be a favorite if you like avovado especially! One hint: I make sure to slice the red onion EXTREMELY thin because I don't like it to be overpowering with onion. However in my opinion, the THREE LEMONS ARE WAY TOO MUCH-- you can't even taste the avacado. I'm going to try it again, but start with 1/2 lemon, and increase to 1 lemon based upon taste, adjusting water and olive oil to get the right consistancy. I believe that I can play with it to get a winner. Also I only used 21/2 lemons but the lemo taste is pretty dominant so maybe next time I will use only 2 lemons and add more avocados. It was a great contrast with the heavier mexican dishes that are traditionally served. I think this would be a great summer salad as well. I added a little cilantro on my salad as well as in the dressing. I would make this again and again. |
