I used more carrots and peas than the the recipe called for--I think you could add whatever vegetables you like, and it would be great. I thought the amount of fresh ginger was perfect. Don't over-do the ginger...I've made that mistake. You could even take it out completely if you wanted. My 4 year old son helps me make it...and then he devours it! It's very quick, inexpensive and easy...what more can you ask for? You could add chicken, shrimp, beef...whatever. This is a keeper in my cookbook. If you can't find Tamari, just use soy sauce. YumO! Added a special touch by throwing in a few dashes of sesame oil and crushed pepper flakes towards the end. I've been craving it, so I decided I would just try to make it myself with this recipe. It was fabulous! I left out the red peppers, and used 1/2 cup vidalia onion instead of green onion (to make it more like my favorite Japanese place), and it truely tasted just as good.
