Really like this recipe, but it wasn't exceptional, that's all. The idea of the compound butter under the skin tasted great, but it was somewhat bland. Maybe I'll use more salt next time, or try basting.

I think this recipe was improved by placing the remaining lemon slices, from the juice, inside the cornish hens. Gave it an extra punch.

I made a little change by suppressing the rosemary, for my taste is too strong. The rest I did exactely as the recipe and it was delicious.

I did this for my little family for Christmas and it turned out great. Because I had read over so many other recipes like it in preparation I accidentally cooked the birds twice as long as this recipe said to. However, you couldn't tell! My husband and I were VERY pleased with the results and my little girl too! She ate the left overs with glee! So simple and easy with such a not so simple result!
