The other reviews are true - you don't need to add water (Filipino's don't normally do that, and you can rely on the juice of the meat), and don't put too much vinegar. Mine turned out a little too sour, so I had to reduce it a little longer. Otherwise, it tastes just like my mom's adobo! P.S. If you want to be adventurous, add slices of banana to it... Filipinos love the mixture of salty + sweet tastes. ;>

This, next to lumpia, is one of the most known and most flavorful Pinoy meals. I grew up on Adobo, Lumpia, Pansit, and Lechon being half Filipino. Must make dish for people out there who want to taste other cultures.

This is the best adobo I have ever had and I am Filipino! I normally add the soy sauce together with the vinegar and that will give it more of a better blend. I cooked this for my husband, mother, brother and sister. They all loved it! This is better than my grandmother's adobo. Thanks Sara.

adobo in my family is usually made with equal parts vinegar and soy sauce and NO water. it shouldn't be stirred too much or it will end up too sour. bay leaves are optional. i like to give mine an extra kick by throwing in some hot sauce while its cooking. in college i did it the quick, easy way by purchasing frying quarters to make it. my housemates would beg me to make it.

the ratio for the vinegar against soy sauce should be 1 cup soy sauce is to 1/4 to 1/3 cup vinegar otherwise it will be too sour.

I am filipino and my mother taught me how to make it. The filipinos use coconut vinegar which is much milder. I like to use whole Pork butt(shoulder) cubed(1 inch thick) and chicken wings. If you like it spicy you can use fresh whole jalepeno and sliced onion in the sauce..The onions caramelize and makes the sauce a little sweeter..Add fresh garlic when browning the meat. Filipinos use this method of cooking to help preserve the meat because some families did not have the convenience of refridgeration..You can also use fresh Lemon juice if you do not care for the vinegar..My aunt also taught me how to make it as well..She liked to add peeled russet potatoes to the adobo..

My husband and I both loved this recipe as well as my friend and her family. Very rich, very good - though I will concede you need to like a taste of vinegar - while it's not strong, there's definitely a hint.

I have tried your recipe but using on a smaller scale. Some modifications made: 1) I did not add water. I added lots more garlic and used coconut vinegar. And added approx 1 - 2 T of brown sugar just enough to cut the acidity 2) I marinaded the chicken overnight, making sure to turn it over at least once 3) I grilled the chicken 4) I heated up the remaining marinade and reduced it to make a thick sauce and poured over the top This recipe tasted very authentic - very similar to how my Grandmother made it. The spin I put on it was grilling it. This had so much flavor and grilling it made it taste like Filipino style bbq! I like to make pico de gallo and serve with this or a mango salsa. Pico de gallo: tomatoes, cilantro, red onion and then drizzle with olive oil and balsamic vinegar and Lime juice. Salt and pepper to taste.

I haven't actually tried chicken adobo this way. My family is Filipino and they make it by first browning the chicken in oil for about 15 minutes then adding about a 1/2 c soy sauce & 1/4 c vinegar, 1/2 tsp of dried oregano, 5-6 cloves of garlic (minced), 1/2 tsp of ginger (powdered), and the bay leaves. Simmer covered for about 30-45 minutes, turning chicken occasionally. Yummy!

I browned the meat in a pan with onions and green bell peppers, salt and pepper to taste. Once the meat was browned, I threw all of the remaining ingredients in a crock pot and cooked on low for 8 hours. Yummy! I also substituted rice vinegar, which seems milder to me. I thought this was great!

better than some of my Filipino friends' recipes. It's now a staple meal, and so easy! Careful with the last part when frying - make sure it's dry or else get hot oil spattering everywhere.

This was a good recipie and we liked it. It was however a little vinegary and not enough soy sauce flavor. I would suggest reducing the vinager and increasing the soy sauce.

Too much vinegar, left an aftertaste and my stomach felt sour afterwards. Sauce took a little longer than expected. Didn't taste or look like real Adobo, far from it.

I loved making this dish and I will diffinitely be making it again. I was feeling under the weather and needed something easy to make for when my husband and two other surfers came home hungry. This dish was filling, tasted great, and was low maintinence. One change I'd recommend is serving the sauce over rice noodles rather than rice. The rice soaked up a bit too much of the sauce and was a little overwhelming. I think something less spongy that just got coated would maybe work a bit better. I also wish I'd had some salted, crushed peanuts as additional garnish -- with the green onions I think they would have just added an extra pizzaz to the dish.

This recipe was so easy that even I was able to do it without messing it up. I am not known for my culinary skills and when I made this everyone could not believe I had made it and how wonderful it tasted! I was accused of ordering takeout and passing it off as my own! You've got to try this one!

It came out very tasty, but the reduction took longer than the recipe said. It took me about a 1/2 hour to reduce it to a cup. Other than that, it was a very easy recipe.

Our family loved this recipe! I adapted it for beef by substituting 1/4 cup worchestershire sauce, 2 TBS. Chipotle Chili Sauce and 1 tsp. crushed red pepper flakes for the soy sauce, and leave out the frying step. Brisket was delicious using this recipe and I did it in the crockpot. Just place ALL the ingredients in the crockpot with the brisket, cook at high temperature for 7=8 hours.

this is a family favorite.you may want to reduce the vinegar to 1 cup in this recipe if you are using regular distilled vinegar which is more acidic than native philippine vinegar.also, this dish taste better left over as the flavors develop. with a serving of rice...yummy!

Hello everyone, I tried this recipe as an alternate idea to the ever popular "what's for dinner?" question. It wasn't hard to do, took a few of my normal kitchen inventory resources, and didn't require I go out to spend another $10-25 for extra items on a meal that I don't always make. After I made this for dinner with some yellow rice, the chicken literally was so tender and juicy it fell off the bone....And as for the taste...well lets say my family didn't leave any leftovers!!!

Filipino food is mostly like stew, and instead of placing the chicken on a plate and pouring the sauce, it's traditionally cooked in a large pot and served in a bowl, where everyone can get a piece of chicken and pour the sauce straight onto their rice!

The soy sauce/vinegar ratio should be more like 1:1 or 1:0.75 or else it will be too sour. Also, adding some brown sugar to taste will take away the sour edge and help the sauce caramelize.
