We make ours in a 9x13 baking pan and cut the puff pastry with small cookie cutters so we get lots and lots of little bits of puff. I've tried this with all manner of vegies and anything works. You can also change the chicken out for turkey and use leftovers from your holiday meal! Any way you make this it's absolutly fantastic. After reading the reviews, I, too, added more milk and slightly more flour. In addition, I added potatoes, but kept the veggies at 2 cups, including the potatoes. I added more chicken, as well. I think it would be delightful with various veggies. I used whole wheat flour for the thickening. It was a hit with my family and my friends. I'll definitely make this a staple in our diet. I do want to find whole wheat puff pastry if there is such a thing. But it didn't matter, it was so good. delicious! 12/10/2007 at 10:19pm User: Anonymous User Rating: this recipe was excellent. added some extra liquid per some of the other reviewers and the broth was great. the roasting portion is not necessary. i used frozen peas and just added them to the mixture when mentioned (rather than preroasting them) and they cooked perfectly. used fresh carrots and sauted them covered for a few minutes. even if they were frozen, probably could have just tossed them in as well, without roasting them. baking took about 15 min. longer but i think that had to do with the pastry dough which took a little longer to brown. I also added some fresh thyme and it worked very well. My only mistake was not rolling out the puff pastry thinner before placing on top of the dish. There wasn't much instruction in the recipe regarding the pastry. My circles were too thick and were a bit too doughy on the bottom (though the tops were nicely puffed). I doubled the milk, added a bit more chicken and didn't remember to thaw the puff pastry (am I supposed too?)- I just threw three frozen pieces on top. Came out perfect. Easy, wonderful comfort food, yummy. My husband could've eaten the whole thing, my three year old ate it too, five year old is too picky, but hey...I'm just sorry they're aren't any leftovers. The only thing I would change, as another reviewer mentioned, is to make more of the sauce/liquid. It does require a lot of pans-sheet pan, saucepan, saute pan, and baking dish, but it's worth it. I'm not sure if you really need to roast the veggies beforehand. I think it might work to just thaw them and heat them with the sauce. Might make it less dry, too. Since frozen obviously wouldn't be that great, I decided to make my own (for the first time). This one seemed like a perfect one to try as I've wanted to try one of Alton's recipes for a while. Based on the reviews here, and personal preference, I did make a few adjustments to the recipe. I cut the peas and carrots in half and added cooked, diced potato, a little extra chicken, and a couple of minced garlic cloves. I also doubled the liquid (and therefore, obviously, the butter and flour). This recipe was so good! I didn't think my mom or my son would ever stop eating it! The flavor of the curry was a nice touch, especially since it is so mild in this recipe. You do use a lot of pots/pans, but anything that allows me to get that many veggies into a toddler at one time is worth it to me. With the remainder of fall and a long winter ahead of us, I will definitely be making this recipe many more times. This recipe fit the bill perfectly. I made a few additions that really worked well. I roasted diced red potatoes (3 medium, peeled) along with the frozen vegetables & made 1 & 1/2 sauce recipes to ensure enough sauce for the extra veg. Instead of topping the pie with puff pastry, I made Tyler Florence's "Better Buttermilk Biscuits" (doubled that to get enough)& used those. This caused an increase in the cooking time to get the biscuits cooked (close to 30 minutes extra). All the extra sauce got absorbed into the biscuits or caramelized on the bottom (thank God for cooking spray!). The vegetables were still individual & moist, not an overcooked mush. The biscuits were perfectly done & no hint of sogginess from sitting on the filling. Even my pickiest eaters were excited. Definitely going to be making this one often. (Sorry, Mom!) My main thing has been to up the liquid content - once you cook 2 cups down a little to thicken it, it is barely enough to cover 4 cups veggies plus 2 cups chicken. Add at least another cup of liquids (stock/milk) to make this go further. I topped off the puff pastry crust with a simple egg wash for a glossy presentation. Although this recipe uses lots of pots and pans for preparation it was well worth the effort. It came out with hearty chunks of vegetables and chicken, nicely coated with a creamy hit-of-curry sauce, and a beautiful crusty topping that added just the right texture to the stew. I did make a few alterations, some my own, some taken from other raters. First, I made it vegetarian by subbing seitan for the chicken. I also used vegetable stock for the chix broth. I know Alton would hate me, but I added fat-free half and half instead of milk (and used light butter) and probably doubled the curry seasoning to go with the increased amount of sauce (per others' suggestions). Finally, like some raters tried, I added chopped potatoes (specifically the golden variety, like Yukon golds). I roasted the spuds for a few minutes before I added the frozen veggies to the pan. One tip I tried from another rater, but wish I hadn't, was to put an egg wash on top of the puff pastry--the pastry did not puff! I will skip that next time. I roasted some skin-on diced Yukon Golds along with the veg med and that was a nice addition. Used skim milk to no bad effect. Also subbed veg stock for the chicken stock, as I prefer the flavor of vegetable stock. I rolled out my puff pastry b/c Alton did that on the show, and as a result it didn't exactly puff. I don't remember if his puffed high on the show or not. Anyway, there were a few spots where the pastry remained slightly gummy, I think where the gravy bubbled up over top of it. Next time I won't roll it out, maybe it'll puff better. I added mushrooms to mine, too, just because I love mushrooms. Would definitely make again. Great leftovers. Roasting method is a good idea.. but a poor substitute for roasted fresh carrots. Many veggies can be put up and away in freezer for year round use; when they come in season. Often Alton over uses gadgetry and has too many methods/steps to what would be simple. I do admire his work in general. The recipe could use to be refined a little more as far as the specifics of the size of the baking pan/terra cotta container and the size or placement of the puff pastry circles, but a suitable arrangement is easy to figure out, or one can watch the show! The roasting of the peas and carrots in the oven is a great way to concentrate the flavors. In our household, we roast many vegetables as they are more flavorful. The addition of red bell pepper for color as one reviewer suggested seems like a nice touch. Brining a whole turkey or chicken prior to roasting yields the juiciest meat. Dark meat is more flavorful than white, but either works well. Pot pie recipes most probably arose from a need to use leftovers. We found the amount of sauce to be perfect. We tire of pot pies which are swimming in sauce. This recipe provided just the right amount of sauce to keep it moist and allow one to eat it with a fork! Next time we will try it in individual ramekins with a decorative puff pastry crust one the top. I chopped fresh carrots (3) potatoes (1), celery (3 stalks), onions (1), and garlic. Toss the veggies with olive oil in a large bowl. Roast at 400 deg. for about 20 minutes. When they start to get golden brown, take about a cup of the veggies and saute them in a pan. Proceed with the recipe, adding the flour, curry, then combining the liquids. I didn't bother doing the veggies in the oven for very long, once they were thawed I tossed them with the sauce. I also used a regular pie crust on top, it was just fine. I used a 9 by 13 pan , filled it right up. An easy way to get your veggies and have lots of leftovers too! |
