Excellent, "showey" dish!

I took this dish to a potluck with all of my work higher-ups who are amazing cooks. Everyone raved! I used a free range chicken broth from a coop mercantile and simmered some shrimp shells in the broth while I was putting together the dish. Will definitely make again!!

User: NICK from San Francisco, CA    User Rating:
This took me a little longer than 30 minutes to make, but the outcome was definitely worth it. I made this for a small group of friends that were coming over for my first dinner party, and they were all very impressed! I took the chorizo out of its casing, so it crumbled throughout the paella. The sangria I made the night before was a nice addition to the meal.

you can skip all the seafood, and it still has TONS of meat. and, very forgiving for substitutions too!

I fooled the Paella snobs!
10/21/2006 at 07:39pm
User: Anonymous    User Rating:
My family is Filipino-Spanish, and they are all complete paella snobs. It must be "right", or you risk shaming the family! I prepared this recipe for a recent party and it was a HUGE hit. Everybody was asking for the recipe, and it was the only dish at the end of the night where there were no leftovers. (That's saying alot if you've ever seen the amount of food eaten and served at a Filipino party!) This is definitely a do-over dish. And over, and over, and over...

This is so close to what I've had at my favorite Spanish restaurant. The only issue was the rice getting dry while the shrimp was cooking, so I just added some more chicken stock.

MMMmmMMM!!

User: Wai-Yee from miami, FL    User Rating:
its very goood if your cut on time especially since it takes less than most other recipes call for. although! it did take me more than 30 minutes. use the amount of mussels called for. they're not too expensive and you can get approx. 18 mussels in 1 pound (i paid $3.99 a pound) also, my chorizo needed more cooking than 3 minutes so i would suggest to cook that along with the chicken and THEN add the vegetables. overall it was scrum-didly-umptious!

Great Taste and Colorful

User: Brenda from Berkeley, CA    User Rating:
Simple and easy instructions and a wnderfully tasting and colorful dish that presents very well either hot or room temp. The Chorizo cooked all apart, but gave the chicken a wonderful tomato color. Added a touch of cilantro for another unique flavor that complimented the lemon zest.

The Rice Makes A Difference!

User: LISA from Lincoln, CA    User Rating:
Easy prep; but Rachel doesn't specify which rice to use - other than "yellow". I used Mah...ma saffron rice and it was terrible! Next time, I think I'll try the more traditional way.

Almost Perfect!

User: Anonymous    User Rating:
I made this last night, only thing I omitted were the mussels, I have a hard time finding fresh ones in my area. The recipe worked almost exactly as shown, with the difference that I cooked the chicken and chorizo for a good bit longer than it said-only about 6 mins seemed too short for that sort of dish. Both parts of the dish went together great and even my picky bf loved this!

Good

User: Anonymous    User Rating:
Good, but RR could have done even better. There should have been some additional seasonings: paprika, oregano; use of lemon juice & zest. With the saffron, I used a little more than RR & let mine 'marry' with a little wine (OR U can use stock). This is a recipe that a homemade cx stock should be used! Definitely when chowing down the Paella, a crusty bread is important! But, her Spanish cheese & Sangrai was an excellent & delicious compliment to this meal + a great presentation.

I got raves on this. I doubled the saffron and the flavor was great. I also had to add about 1/2 C. more broth when putting in the shrimp & shellfish otherwise it would have dried out too much. I will make this again.

Foolproof
08/17/2005 at 12:44am
User: Anabel from Chandler, AZ    User Rating:
OK, not completely fool-proof! My mother-in-law and I got into talking and overcooked the chicken a bit. Other than that, this paella was super easy and delicious! It turned out great the very first time I made it (thankfully, since it was also the first time I cooked for my in-laws). My mom's family comes from Spain and we've had the real thing cooked on the ground. I can't say this is quite as good but hey, considering the minimal amount of effort it's still an awesome dish.

Perfect Paella...Twice
07/25/2006 at 03:19pm
User: Gary from Clayton, NC    User Rating:
Easy recipe - I substituted clams for mussels (I had it that way in Spain) A good spanish sausage or an andouille would have be better than chorizo. It took WAY more than 30 minutes, BTW. I split the recipe before adding seafood, 1/3 without, for allergic folks. It was a big hit at the mediterranean gathering dominated by greek food. And even bigger hit w/ allergic guest that had never tried Paella. Worth trying again!

I actually am having withdrawal after being served this by a friend. I had never heard of Rachel Ray (since we don't subscribe to cable TV), but my friend told me about her show after I went on and on about her Paella! She left the mussels out, thank the Lord! But, the entire meal - down to the cheese, olives and Sangria were served almost exactly as the show (which I watched later - she taped it) suggested. One thing my friend did that I think made the meal EXTRA awesome was add CILANTRO instead of Parsley. I love Cilantro, and it really made this dish pop! I plan to add this to my monthly meal list!

Paella with Pizzaz

My family really thought it was good to the palet. The one caution is you must take your time in preparing this meal and you may want to add the shellfish with the rice a bit sooner than 13 minutes. This not an easy dish, I would say beyond medium.

This is a great recipe. It has become one of my family's favorites (they make me cook it every time I come to visit). It's easy to make and tastes great. I recommend dividing it into fourths if cooking for 2 people. Cutting it in half is still much food for my husband and I.

Extraordinary!

My sister and I tried another paella recipe the last time she visited with me. It took all afternoon and still was not finished well. We tried THIS recipe this time (is this becoming a tradition?) and were finished in approximately 45 minutes. The paella was out of this world. The only change we made: we added a 14 oz can of whole tomatoes, squished by hand, juice and all and some scallops. The men LOVE it!!! Thanks, Rachel!

My husband told me this is the best paella he has ever had - and he orders it out whenever its on the menu. I substitute scallops for the mussels, and it turns out great. I am making it for my dinner club this week. Also, it does take me a lot longer than thirty minutes, but most of Rachael's meals do - I am not as quick and efficient as she is!

I tried my hand at perfect paella for a Sunday dinner...easy prep, easy cook, and big flavor. But, remember, YOU NEED A BIG PAN! HUGE! And, watch the rice...I overcooked mine and it was too glutenous. Perhaps a more concrete rice cooking time could help that. But, all in all, delicious paella!

Wonderfully easy recipe!

I'm an experienced cook and was intimidated by my first Paella, but Rachel's recipe makes it so easy. This is delicious! I added scallops, which soak up the wonderful broth, and used a specialty chicken sausage instead of chicken breast for added flavor. TRY THIS -- your guests will be impressed!

UNBELIEVABLE!

This was my first time cooking with shellfish. I am NOT a fantastic cook--but this recipe made me one! I used clams instead of mussels because they were on sale, but I'll definitely try it again (and again, and again...probably with a variety of different types of shellfish)! You can NOT lose by trying this recipe!

too salty

while the combination of ingredients is good, the dish was far too salty. if you're thinking of making this, only use one bouillon cube and low-sodium stock. if it weren't for the saltiness, i'm sure it would have been a fine dish.

Great!

Quick and easy, this paella still had the taste and look of an authentic paella. Some of the ingredients could be omitted and/or substituted, but this is a pretty solid introduction to a paella.

Russell Reviews Paella
02/27/2007 at 01:56pm
User: Russell from Los Angeles, CA    User Rating:
Overall a very tasty dish that was straight forward to make. Rather than buying chorizo & removing it from the casing, I bought non-cased chorizo and it allowed the spicy flavor to mix throughout the dish. The only confusing part was the time listed where it said "After 13 minutes add shell fish to rice pan"--is this 13 minutes after you started the rice or 13 minutes after the previous step? We guessed the former and it turned out fine.

I was so nervous making this one - Paella has a reputation for being very hard to make. I did take me longer than 30 to make but I doubled it for a dinner party I hosted. I swapped the mussles for clams and left out the shrimp (by mistake) and still got rave reviews. I liked it and I'm my worse critic. Definitely a crowd pleaser.
