It's light, but rich with flavor - beautiful texture. There wasn't a gummy crumb, which is too often the case in other recipes. The heat from the cloves was perfect. Of course, the Ale taste wasn't evident, but gave it just the right amount of moisture and "bite". I'm throwing away all my other Gingerbread recipes. Thank you, once again, Emeril. (My kids miss your "bam" but send their love. I'm always "fixing" recipes - but never have to adjust/"fix" yours. Thanks!) The flavor has just the right mix of sweet and spicy, and the texture is just perfect- moist but not gummy. Do not substitute something else for the beer- it just isn't the same. I've made this without the Creme Anglaise, and instead made a quick lemon frosting (lemon juice, powdered sugar and butter). The Creme Anglaise is definitely tastier, but the lemon frosting makes this a really quick dessert. Deeeeee-lish 01/10/2006 at 10:37pm User: Anonymous User Rating: Fantastic, moist recipe. Some of my aunt-in-laws from Scotland thought it was just like the gingerbread they had in Scotland, so that was the ultimate compliment. I served it with whipped cream I did not sweeten the cream. It was a fantastic, fresh pairing to the more rich cake (although I've made the creme anglaise for a bread pudding and it is also a great recipe!). I made the gingerbread and had no idea that my son loved it. His nanny (a family friend) made it all of the time when he was a small boy while I worked. Well I've gotten more active in the kitchen and made gingerbread because I had memories of my mother's gingerbread. We all loved this recipe. After a couple of days there was not a piece left. Emeril, you're a genius as usual. |
