Butter 8 ramekins and put them in a large 13x9x2 inch baking pan and bake as directed 35 min on 350. They will be absolutely perfect and already in single serving dishes. Also, make sure your water is boiling hot (I heat mine in the tea kettle), the egg whites must be stiff, and don't over-mix the egg whites into the mixture. I replace the half/half with Fat Free half and half and it's still wonderful. Be sure not to over-mix when you add the egg whites. The stiffness really helps the pudding to set up. Depending on your oven temperature, humidity, water bath temperature,etc. this may look runny after 35 minutes. It took mine almost an hour to set up at the recommended temperature. Don't despair....it won't burn. Keep an eye on it, add an additional 10 minutes at a time to the baking time and you will be very pleased with the outcome. Make sure you do use boiling water, though, and your egg whites are stiff. I served this with a scoop of gelato, some whipped cream and a little grated lemon zest and it was a huge hit. I topped mine with Cool Whip. It tastes like a fluffy lemon version of egg custard. As for the watery problem other people had, I didn't have this happen to mine. From past cooking experiences, I do know that if you don't beat the egg whites long enough that it will cause this problem. I used hot tap water since the recipe says to use "hot". I figured my tap water at full force was quite hot enough. I had a floating island too. While it didn't taste too bad, I dumped it out. Along with the hot water, I'm guessing that perhaps my egg whites weren't as stiff as they should've been. I might try this again just to see if I can get it to look as good as Paula's did. I then put some foil on the top and kept for it for 10 more minutes. Still no luck. Now i have removed it from water bath and kept it by itself in the 350 degree oven, and i am awaiting results I now note on reading reviews that one has to pour HOT water in the bath, i used room temp water, and i think thats where the problem lied, because i have followed rest of the instructions to the T. I somehow missed this one. It finally thickened up after 3 days in the fridge when the top part mixed more with the liquidy lemon bottom portion. I watched her make the recipe and followed it EXACTLY!!! The eggs whites were stiffly beaten and folded in gently, the water bath was very hot and did not get into the curd (I was very careful), I used the exact size pan recommended!! You name it, so all the suggestions mentioned will not change anything! I suggest if you don't want lemon soup dont try this one! However, if you would like to wait while refrigerated for a couple of days then it does help thicken it a bit. I personally loved it after the wait!!!
