My father makes a legendary banana pudding that the family enjoys. His is made with vanilla wafers and a merangue topping. This banana pudding is as good (or better!). My husband begs me to make it again and the only reason I won't is because I don't think we need the fat and calories, but this is quite an impressive recipe for a special occasion. I'm a food snob and I don't normally like convenience foods, but this recipe works well. The only thing I noticed is that the recipe makes a bit too much of the "pudding" and I didn't use it all in my dish, but it tastes so good, you can eat it alone! Be sure to serve this banana pudding the same day you make it, because the cookies do get soggy after a while. I had been using an 8 oz. coolwhip, so I tried with the recomended 12 oz. BIG mistake. The 8 oz. Is all you need, it is not overly sweet that way.
