But regardless, I thought this salad was just about perfect. The chicken was sooooo good, I would make this whether I was on a diet or not. It was a perfect light dinner for a hot summer night. I will certainly make this again, but next time I will toy with the dressing a bit and maybe make or find a little of that yummy white sauce they always serve along side this kind of thing at restaraunts, I can't think of the name of it. I added some piquillo peppers and used baby spinach instead of Romaine. I also added some hummus to the dressing on the salad and it was terrific! Put all the ingriediants on a large white platter scattered or in rows. I left things a little chunkier and it was delicious. You could entertain a crowd by adjusting the amounts. Too Easy!!! By the time I gathered all the ingredients, and did the prep-work my 30 minutes were up. And all the ingredients for the meal added up to a small fortune. The olives were $9! The salad was very good and had a very "fresh" taste from the parsley, but needed more dressing. The chiken smelled wonderful. Next time I would skip the pita bread, or bake them into chips. No lemon zest (didn't have a real lemon), dried oregano--used less than recipe called for, no olives, used sharp cheddar cheese, no cucumber, no parseley. I used yellow onion and cremini mushrooms sauteed with a little olive oil, salt and pepper and put over the salad then put the meat on top. Everyone loved it. I had mine as is, others used ranch dressing. Gret recipe I'll will try it will all of the other fresh ingredients next time. Although I did not make the salad, the chicken was delicous! I followed the recipe and marinated the chicken with all the olive oil, red wine vinegar, lemon juice, garlic & oregano (not just 1/2), then I broiled the chicken. I put the cooked chicken in a warm pita with lettuce & tomato and added a yogurt dressing to the pita. For the yougurt dressing it's 1/2 cup plain yogurt, 2 tablespoons dill, 1 teaspoon lemon juice, and salt & pepper. Will make again soon!
