The ONLY reason i gave 4 stars is because the skin of the chicken didn't get crispy and i followed directions exactly. Maybe it's not supposed to, but to me it would taste better if it were. Maybe cutting back on baking time and putting it under the broiler next time may help to crisp the skin. Other than that the flavor is wonderful. Another thing I did was to pour out some of the marinade before baking. I'm glad I did because once the chicken cooked-- the fat from the chicken would've caused it to be way too much liquid in the baking pan. For those who had difficult time shredding the ginger, here's the trick: cut the ginger root into separate servings, pill the skin off and freeze it until the time you ready to use it. I put each serving in the separate snack back with a zipper and keep them all together in one Ziploc back. When you ready to use it - just take it off the bag and grate it on the fine grater. I make the sauce as directed but I cut up small pieces of chicken and fry them in panko bread crumbs in veg. oil. I make another batch of the sauce and thicken it with a water/cornstarch mixture and use it to pour over the chicken pieces and brown rice. I then toss the whole thing with sugar snap peas and other fresh Asian vegetables. I use a bit more ginger because I love the spiciness. I did not have any fresh ginger or garlic so I used 2 tsp. of the jared minced ginger and 2tsp. of the jared minced garlic. The flavor was excellent and not over powering, which seemed to a complaint by some people. I also used low sodium soy which helped, given the amount of soy that is needed. I served it with Jasmine rice and my family loved. I would definitely make this again. Enjoy!!! The sauce is delicious and, if the pieces are left to cook for maybe 10 minutes longer than the recipe states, the sauce gets thicker and the skin gets a better crust. Served with rice and the carrots or sauteed spinach, this is a winner and I can't imagine why anyone wouldn't love it. I often make in advance. I combine all ingredients with the chicken into a gallon bag and throw it in the freezer until I am ready to use it. My mods: used low sodium soy sauce; was just a bit shy on the 1/2 cup of ginger; used a whole head of garlic (13 cloves). Grated the ginger by hand which was a pain. No room for the roasting pan in the fridge, so used a bowl which covered the chicken better with the marinade. Marinaded overnight. End result was very good. Chicken was tasty and juicy and the sauce was delicious. There was no heat - if you want that, add something to spice it up. Did not find it to be oversweet - was just right. If you prefer things salty, use regular soy sauce; low sodium was fine by me. Great recipe! Note: you have to like ginger to enjoy this recipe! I love garlic, ginger, soy, and I stir fry with these ingredients about once a week; but these wonderful ingredients just didn't harmonize together at all in this recipe. It was over-the-top too strong, almost nauseating. I think it would have worked better with spareribs; but it left me so disappointed, I will most likely not attempt this one again. I am very familiar with Indonesia and have family there and they have never heard of a dish by this name made this way. I suppose it's okay to take poetic license and give recipes exotic names-- which wouldn't bother me at all if it just tasted good. If you love dark color and crispy skin in a roasted chicken dish, nothing can compare to Giada's Roasted Chicken with Balsamic Vinaigrette. It is easy, tasty, and delicious. This is what I was hoping for with this one. Try adding 1 cup of pineapple juice and the juice of 2 lemons to the mixture. I used only one chicken, but did not cut the marinade. Definetly marinade it over night. The 2 additional juices add a nice sweetness, and more flavor. Also, try just cooking a pan of chicken wings. Also, the chicken tastes better at room temperature. After watching her make this dish, I ran out to get fresh ginger, since I had everything else in the house... could not wait to try, what looked to be delicious. Marinated the chicken about 4 hours (she only did it for 1 hr on her show)... the skin was wonderful, but the chicken was tastless... we had to constantly dip it in the sauce, which was greasy from the chicken fat (even after skimming off the fat that i could get). Maybe leaving it overnight, with the addition of a little pineapple juice, would be helpful...? Don't think I'll try it again... she has too many other fabulous sure winners to try. However, my chicken came out a bit tough, not dry, just tough. Maybe this was because the cooking time was too long for my smaller pieces (my chicken was cut into eighths, not quarters), or maybe because it essentially boiled in all that sauce. Still this was great, and I'll probably experiment with it next time by grilling it, using boneless skinless breasts, etc. Chicken tenders of this might make a great appetizer. It was easy and I got two enthusiatic thumbs up from everyone in the family. I do agree with the idea of putting in some red pepper flakes just to add some zing to it.
