This recipe was very good. I halved the recipe and used some extra herbs. It was moist and delicious -- cooking time was 1 1/2 hrs and with the pan of hot water, no cracks appeared. The ketchup is a good idea.

The flavor of this turkey meatloaf is great! It was fairly easy to make. I cut the recipe in half which was more than enough for 4 people + leftovers. I think next time I will put a little less breadcrumbs and chicken stock because it was just slightly too mushy. Other than that, I recommend this recipe.

Fabulous!

I would have given this dish 5 stars if it wasn't for the lack of ketchup listed in the ingredients.. 'cause it just was NOT enough, even with the recipe cut in half! I suggest you put as much ketchup as it takes to cover the top of the meatloaf. I also added extra thyme, worcestshire sauce, and chicken broth. It was moist and tasty. I did 1.5 lbs and it fed 4 people and cooked in about 40-45 minutes. My parents detest american food, but loved this. Definitely worth a try. =)

Absolutely fantastic! Even my daughter who "is not a fan of meatloaf because it's always so dry" loved it! I used 2 1/2 lbs ground turkey (not 99% fat free turkey breast)and cut all the other ingredients in half with the exception of the thyme leaves, tomato paste, eggs (used 2)and ketchup. I also used beef stock in place of the chicken stock. Cooked for about 45 minutes until it reached 160 degrees. Juicy, flavorful and healthy too! A definite "make again!"

This was not only an easy recipe, but it is so good, I may never make a ground beef meatloaf again. It was great right out of the oven and equally good cold. I searched for it because there was a sale on ground turkey breast and I didn't feel like making a lot of turkey burgers.

It was great!

Nice, but could use a little help

User: CHARLES from Brooklyn, NY    User Rating:
First off, if you aren't a family of 6... cut the recipe in half. I'm just cooking for me, so I used 3 lbs of meat and scaled the rest of the ingredients accordingly. It's still way too much even for leftovers! I thought the meatloaf tasted good but it could certainly use some more spice. I couldn't taste the thyme at all (it needs more, or maybe my taste buds are just burned out from all the hot sauce I normally use). I think I'll toss some red pepper flakes into the mix next time. With 3 lbs of meat mine took about 2 hours & 15 min to reach 160. So plan on longer than what the recipe states. Also, even though I put the pan of warm water in the oven below it, mine still cracked on top. Overall it was good. I'd make it again.

Sub par...

I was really surprised to see how many rave reviews there were for this recipe. I agree with one comment from someone who mentioned this does not meet Ina's standards. Agreed! I love Ina, but while this meatloaf had plenty of moisture, I found the flavor to be bland and boring. A good meatloaf is very flavorful, this was just a loaf of meat. Sorry, but it was. I also agree with the gentleman who mentioned you could not taste the thyme. It's not your addiction to hot sauce, there is just not enough for the flavor to come through.

I changed this recipe a bit; instead of using all turkey, I used 2/3 turkey and 1/3 mild italian sausage to give it a little kick. Came out great! Careful not to overcook, however - turkey meatloaf has a tendency to become very dry during reheating.

Excellent!!

User: Phyllis from Ardmore, PA    User Rating:
The best meatloaf ever. The only changes that I made were-half white/half dark turkey meat to insure not to be dry. I took the remaining broth and tomato paste-mixed it together and poured it over the top and sides of meatloaf, instead of ketchp. I bake it in a pan with sides as I add additional water, it makes a wonderful gravy. I also put aluminum foil on top to while baking as this insures nothing dries out.

This was a surprising treat. I have tried recipes before that have a "new twist" that I was disappointed with. I was unsure about whether my family would like substituting turkey for the tried-and-true beef in a meatloaf. It was really delicious and I can enjoy it even more knowing how healthy the white turkey is. I now have a new dish for my family!

I've always hated meatloaf whenever it was made at home. I've tried other peoples meatloaf and again, never enjoyed it until I saw this show. She made it seem so easy and tasty that I decided to try it for my husband and I. Well, to my surprise, we LOVED it, it was so juicy and didn't really taste like "old fashioned meatloaf". It was absolutely fabulous. Also, I figured the 5lbs of meat would be to much for the two of us, well we each had heaping servings for dinner and some was left over for the following day and it tasted better. This is definitely a keeper of a receipe for me. Try it, you'll absolutely love it!

I loved this recipe! I did a little Rachel Ray and eyeballed it! It yields 8 to 10 servings. And theirs only three of us so I cut back on the ingredients. Also used ground chicken and a little beef. Ketchup I think is for french fries!! So I made my own glaze: tomato sauce, brown sugar, molasses, red wine and reduced down!! Very good will make again!

I halved this and it was still alot of meatloaf. I will have to quarter it the next time as I served it to 6 people when I normally only serve 4. It was nice and tender and tasty. I added red pepper flakes and alot more ketchup on top but otherwise pretty much followed the recipe and it came out great. Ground turkey can really be hard to get flavor into but this really worked.

I only gave this a 3. I didn't think this was up to Ina's high standards. The texture was good especially for turkey but I found the seasonings made this rather bland. I enjoy ground turkey and turkey sausage. I really wanted to make turkey meatloaf, homemade mashed potatoes, carrots and a green leafy veggie. After going on-line I found this easy turkey meatloaf. Our daughter is a PICKY 2 1/2 year old. She said "Mommy it's FANTASTIC"! Anyone who can have her wanting more, even on the day after, deserves 10 stars. It had flavor and was moist. My husband had a late work day and my daughter was asking for more--I know her little stomach wanted to burst. I cooked half the amount of what you suggested and it was remarkable. Thanks a lot! I am now a meatloaf queen!

Great but, I had to add GARLIC!

User: Debbie from Roanoke, TX    User Rating:
I used 2 pckgs of Butterball Turkey 93/7. I scaled down other ingred. except Tomato Paste of which I used 2 heaping tsp. I added 3 cloves minced garlic to the onion mix when it was about halfway done. I also sprinkled a little garlic salt to the onion mix. I used 2 eggs. Oh, I didn't have bread crumbs so I used 10 Saltine Crackers, put in ziplock and crushed to crumbs. For the topping - I took the rest of the Tomato Paste and mixed with some garlic salt and water, to the consistency of the Ketchup. I topped the loaf with this instead of the called for Ketchup. It turned out so moist and flavorful. Very good and I will definitely make this again.

I flip flop this recipe with my other 3-meat recipe straight out of Betty Crocker! When I make this recipe, I often add veggies to it: cooked shredded carrots and zucchini. The addition of those veggies adds an additional sweetness to the dish. I also use a TON of catsup on this and it's flavor cooks and condenses into the most wonderful 'sauce'. I do not use catsup on my other meat loaf so this addition make it special. Thanks Ina for a flavorful switch on a standard comfort food classic!

this is one HUGE meatloaf

User: Stephanie from CRESCENT CITY, CA    User Rating:
I made this with 3.5 lbs of 93% lean ground beaf and 1.5 lbs of turkey. It was VERY moist when putting together, so when I took it out, it was really tasty and moist - but only half of it was a "loaf" consistency. The other half is like large chunks. Doesn't matter, really, still tastes good. I would use more ketchup on the top next time - I agree you should just use enough to cover, even if it's more than called for. It does have a mild flavor, which is great so that it doesn't overpower other items you are serving with it. But if you like more flavorful, you should "tweak" it a little. Great the next day - not dried out in the microwave. :) Husband doesn't like meatloaf, and he loves this!

I saw this on Ina's show the other day and thought that it looked great. At least the folks eating it sure seemed to enjoy it. The next day Costco had 5# of ground turkey on sale..........so I thought that it was meant for me to do this recipe. I agree that the recipe feeds a crowd. I took half of the recipe and froze it. I hadn't seen the trick about the pan of water in the oven. My mother-in-law had shown me her method of drawing off the grease about 2/3rd of the way into the cooking and replacing it with a cup of boiling water (which works great). Anyway, the loaf (remember 1/2 the recipe) was done on time and didn't "crack". Had more than enough for five folks. The problem was that there just wasn't any "taste". I think that I will add the spicy sausage like one of the reviewers said the next time that I do the recipe. Everybody except my mother-in-law said "Where's the Beef?". Mother-in-law is on a diet and liked the low fat aspect of this recipe. I also could not taste any of the thyme (and I doubled the amount). This one isn't up to Ina's terrific brownie recipe. gwg

Since I was only using 1.5 lbs. of ground turkey instead of Ina's 5 lbs.!, I had to do a lot of ingredient reducing adjustments. Used a bit extra onion, thyme, tomato paste, worcestershire, and broth. Smeared the top with ketchup (enough to cover), put into a small loaf pan, used pan of water in oven and cooked for about 45 - 50 mins. End results were moist and absolutely delicious and no cracks. Thanks Ina!

My husband is a chef, and he said this is one of the best meatloaf recipies he has ever tasted. I did sautee celery and fine chopped carrots with the onion, which only enhanced this perfect recipe. I also topped with BBQ sauce instead of ketchup, which really added a nice flavor to the meatloaf with a nice caramelization to the outside crust. This is SUPER moist and flavorful. Thanks Ina, I have a new way to make my Chef rave about my home cooking.

I served this to guests, one of whom doesn't eat red meat. They were astounded to learn it was turkey. I use ground turkey rather than turkey breast. Turkey breast meatloaf looked "white", whereas the ground turkey that includes dark meat looks like meat meatloaf. I've halved the recipe and recently quartered the recipe, which successfully served 3 people--no leftovers!

This was a great turkey meatloaf recipe even with the added step of frying the onions first. I changed the receipe to 3 lbs of meat which makes 2 loaves of meatloaf-which might seem like a lot but you'll eat it all so fast you'll be glad you made 2. If you do want to half the recipe, use 1.5lbs of meat. I also substituted 1/2 a cup of wheat germ for the bread crumbs and added peas to make it healthier.

User: JENNIFER from Downers Grove, IL    User Rating:
This turkey meatloaf is a great twist on an old classic. I cut the recipe in half. 2.5lbs is more than enough for a family of four. Remember, turkey doesn't shrink like beef. I did add more thyme and the entire amount of worcestershire sauce and broth. I added a sprinkle of red pepper flakes. I also put bbq sauce on top instead of ketchup because that is what the family preferred. I would have rather had the ketchup, for a milder flavor. All in all, it was a great meatloaf. Even the leftovers were great. If you are a beef lover, you may not particularly like this. My family hates meatloaf, but were will to try this one. They loved it.

I followed the recipe exactly, and it was too much food! I had was a 9x13 pan, and I had to go out and buy a cookie sheet because it was HUGE. The flavor was fine. The thing I most did not like about it is that it looked gross coming out of the oven...maybe that is all meatloafs, but the fat and protein were oozing all over the cookie sheet and it I quickly plated it before my guests got there. I have had better.

This is a fabulous recipe. I have made it at least 10 times. One caveat-- do NOT use extra lean (1%fat) turkey. It will be dry as dust. I made this mistake once. You can divide the mixture in half and freeze half uncooked. Then thaw and bake as directed.

I didn't grow up eating meatloaf, so was wide open for a tasting! It looked SO good and easy on TV, and was the same here (except my not anticipating the size bowl needed to mix everything!). My kids (ages 9 and 11) weren't fond of it, but they're more veggie eaters than meat eaters, and haven't had meatloaf before. My husband LOVED it, and said he couldn't tell it was not beef. I thought it was great. And the quantity? I had to make 5.5 lbs (couldn't find smaller sized packages) and was VERY happy it made dinner twice and thick slices for lunch sandwiches for 2 of us for 3 days. What more can I ask? Yum! Thanks for such a great item.

After reading previous reviews I decide to half the recipe (2.5 lbs) and added additional fresh thyme and crushed red pepper flakes (not in original recipe). Although I made a pretty flat loaf, I still wound up cooking it for almost 1 hr 45 minutes. We tasted it when it first came out of the oven and it was wonderful! When reheated the next day it was a little bit dry but very tasty nevertheless.

This is a really good recipe...I've made it a few times successfully, sometimes as mini-meatloaves. Check out Ina's official website - she explains that the recipe was originally written for dark meat turkey, not white. When the recipe was written, ground white turkey was not readily available like it is today. For those of you who think it's kind of flavorless, that's probably where you went wrong. Unfortunately, if you do the research, ground dark turkey meat is just as, if not more, fatty than regular old ground beef.
