I followed the recipe procedure to the letter, besides my substituting Pecorino Sardo for Romano. The amount of egg and cream to pasta was just right. I would recommend adding a quarter cup of water before mixing the egg mixture in. The mix of smooth sauce and crispy pancetta is enjoyable. The shortcoming of the dish is probably my fault: you should use first rate ingredients for this recipe. Don't buy cheap eggs.

This was so easy to make, but it tasted professional! I substituted bacon as the meat, because I've had it that way in Europe. I also used parmesan cheese because that's what I had on hand. A great budget recipe. Make sure to remove from the heat before adding the eggs or else they'll scramble. I added the extra cream as well.

This recipe is so simple and so delicious...just make sure to add pasta water to pan when noodles are added (1/4 cup or so)but before adding egg mixture(to which I also added 1/4 cup half & half and 1/4 cup breadcrumbs) The addition of fresh basil and It. parsley freshen up the flavor as well. Good stuff, got raves!Oh, I added a cup of sweet peas to the cooking water in the last minute of the pasta cooking. Yay greens!

This recipe was heavy on the egg flavor, and it could use more pancetta because it shrinks when cooked.

This recipe came out wonderfully. I did use more cheese than called for and I did leave the heat on in the pan after I added the eggs just to cook them some. If you do that remember to stir constantly or you will have scrambled eggs! This is a great budget dish. Instead of pancetta I used a really nice bacon.

This is always a crowd pleaser and can be made are several people at not too much cost. Bacon is a good sub for the pancheta but fresh cheese and cream are a must.

I just made this dish for potluck...it's very easy to prepare. I used bacon insteads amd I add white wine and onion to it. Although it's not as creamy as what the show has shown, but the taste....oh.....so good!!! You have to try it! Now I am worrying I would keep test tasting it before the party start......

the recipe given here is not accurate compared to the one shown on t.v.. the won shown also added white wine to the panchetta and a little bit of the pasta water to the pan just before adding the noodles. other than that its a great recipe.

My husband and I first tried this dish in Italy, its very common there- we'd never had it. Its simple and straight forward but taste very....old world.

I never thought this would be good, I mean egg, bacon, and pasta what an odd combo. What a suprise though. It is cheap to make and you make it in a flash. I use regular bacon and add garlic and hot pepper flakes. I find that if you are making this for the first time, go for a smaller batch because I find it easier get the consitancy right. I would suggest adding more pepper. Try adding a little cheese to the egg and whisk before adding it to the hot pasta and if you add a little pasta water it seems to help things cook more evenly.

True Italian dish that is worth a try. You may think that this dish is not appealing to the eye, (where's the red sauce!) But it is my absolute favorite Italian dish. The spagetti is so creamy and the bacon gives it such a great flavor! Hope you enjoy this great dish. L'Italia mi piace moltissimo! Arrivederci!
