Reducing ingredient amounts to servings needed, press a square of foil into a muffin cup. Spray foil with non-stick. Place large scallop in center, then curl and "fit" fillets tightly around it. Crimp the foil at the top of the cup into a "rim". to allow removing the packet but still retain the shape. Season and top with the compound butter. I cook these on a very hot grill outdoors. My ony gripes are it is hard to find the salmon fillets where I live, and the flounder turns to goo if there are leftovers for a second day. I didn't use the dill as my husband doesn't like it, use the seasonsing you like and it still turns out great. I've even replaced the scallops with halibut chunk and it was great! I served this on New Year's Eve with wow's from everyone. I didn't roll it as the salmon was a bit too thick so I used the menthod mentioned here using large muffin tins lined with foil.
