The rolling is a little tricky the first time. My husband loved it, very unique. Fresh fish is a must.

I cook for 2 & so developed a method that retains the quality of this wonderful dish but makes smaller number of servings. Reducing ingredient amounts to servings needed, press a square of foil into a muffin cup. Spray foil with non-stick. Place large scallop in center, then curl and "fit" fillets tightly around it. Crimp the foil at the top of the cup into a "rim". to allow removing the packet but still retain the shape. Season and top with the compound butter. I cook these on a very hot grill outdoors.




Hard to roll, but worth it.

This is a great recipe. It takes a bit of concentrated effort to get the roll tight enough, but well worth it. My family loved it.

My husband and I tried this several times, and we love it! We recently tried cooking the pieces on a cedar plank on the grill. What an amazingly great flavor it added to the fish!

Making the roll was a lot easier with my husband helping! I tried to roll it alone, but it kept coming apart. The finished product is delicious, but if you can get help in the kitchen for this one, I'd recommend it.

Love love LOVE this recipe! Rolling gets easier the more times you make it.I love this dish. My only advice is, use fresh parsley in the compound butter, too. Dried is flavorless!

This dish is just fantastic! My family is big on fish but are picky and all of them just loved it. It can be hard to roll but once you get it down it is a dish you will want to make over and over again.

This dish was great, fantastic, awesome, need I say more. Unless you have a great seafood market nearby, it is hard to find salmon thin enough for this recipe. The butter was very unique and just gave it another notch.

Everyone is wowed by the presentation of this recipe. Its is delicious and relatively easy to make. My ony gripes are it is hard to find the salmon fillets where I live, and the flounder turns to goo if there are leftovers for a second day.

This is one of my top 10 recipes for the Food Netowrk and Alton. Some prep time is needed but it is so worth the time. I didn't use the dill as my husband doesn't like it, use the seasonsing you like and it still turns out great. I've even replaced the scallops with halibut chunk and it was great! If you have thick salmon filets a little knife work can still make them work.

This dish is super delish! I served this on New Year's Eve with wow's from everyone. I didn't roll it as the salmon was a bit too thick so I used the menthod mentioned here using large muffin tins lined with foil. Great company dish and quite easy to prepare. Pat in Kingston, NY
