Chicken Piccata for novice cook!
07/01/2008 at 09:24pm
User: Joi from Sandy, UT    User Rating:
This was fast, easy, and yummy! I used farfalle pasta, and everything else the same -great flavor. May use a little less pasta next time, but a great addition for quick dinners! I would guess those who are complaining of the flavor, have never had true chicken piccata. It's a strong flavored dish, but nevertheless, delish!

Really easy

So easy to make and since you cook it all in one pan (minus the pasta of course) it's easy with minimum clean up. Just made it and I will definetly make it again!

I didn't think I would like this recipe because of the capers and lemon, but I did. It came together easily and the sauce was delish. Even my kids like it and that's saying something!

this meal comes together so fast. make sure you start your water ahead of time. i used leftover roast chicken that i made lastnight. i did add broccoli, red peper flakes and at the end parmesean cheese! i have hardly any leftovers! read some people thought it was to lemony but i added lemon zest and next time i make it will add alittle more! we all loved it and all had seconds. we're talking about 11,17,21 AND a 2 yrs. old. will make this over and over...just wish i had bought bread! forgot,i omited the butter! great dish!!!!

User: Marie from Los Angeles, CA    User Rating:
This recipe was easy and tasty. I added mushrooms to mine because that is how piccata is made at my favorite restaurant and it gives the dish more texture. I agree with the reviewer who said they would double the sauce for dipping. Makes me want to go make some more right now!

Yummy enough for a 2yr old & a 4yr old to devour!

User: Amanda from North Bend, WA    User Rating:
Terrific recipe... I love the flavor of piccata anyway; all that butter and lemon taste so good on chicken. I like that this recipe doesn't use as much butter (chicken stock replaces quite a bit of it) so it's not as fattening but you still get a rich flavor. It's also nice to not have to do all that messy dredging that you'd have to do with a traditional piccata. My little ones are ridiculously picky and rarely eat anything other than chicken fingers for dinner and how cool is it that the recipe is for cut up chicken fingers! We already had 'em in our freezer! Needless to say, my kids were still talking about how much they liked dinner even as we tucked them into bed. And that is saying something. :)

Fantastic

User: SUSAN from Valley Village, CA    User Rating:
I loved this the first time I made it and have made it a regular on the dinner rotation. For those who complain about too much lemon, adjust it. The recipes are a template for your meal. If you know you are not a big lemon fan than cut it in half. If you've had Chicken Piccata in a restaurant you know it's lemony. Rachel...you rock!

Wonderful (with modifications that others recommended)
03/11/2008 at 10:40am
User: MARY from Boston, MA    User Rating:
Not sure how it would be as written but made modifications as others recommended. 1. Doubled the sauce 2. Floured chicken pieces (to make the crust that chicken piccata has) 3. Steamed broccoli prior to making dish and mixed pasta, broccoli and chicken with capers together Was fabulous and didn't use the whole pound of pasta, I figured more protein and veggies is better (that was a personal choice).

Quick and full of flavor

If you like chicken piccata, you'll like this pasta. It is lemon-y - hence the name chicken piccata pasta! My husband doesn't like capers, but he likes this dish. It's become a staple for a quick week night dinner.

User: Stephanie from Bradenton , FL    User Rating:
Let me start by saying... my kids are super picky eaters - so I left out the parsley and chives (which I would have loved). My kids didn't care for it & I liked it but felt it was missing something... (perhaps the parsley and chives). I would have decreased the butter and increased the lemon. Also, I will add artichokes and maybe some fresh asparagus next time toward the end. I love pasta dises that are loaded with good stuff!

Really Disappointed
01/27/2008 at 04:55pm
User: ALEXANDRA from bakersfield, CA    User Rating:
I was really bummed that this didn't turn out as good as what the other reviews said. I don't think I did anything wrong, I mean it's a pretty simple recipe: chicken, garlic, lemon juice, chicken stock. But the overall flavor just wasn't good. And too much pasta, not enough chicken. I even added some sauteed mushrooms as I could see ahead of time that a dish with only pasta and chicken pieces wasn't going to cut it. I'm usually pleased with Rachael's recipes but I won't be making this one again.

I've never had much success with Rahael's recipes, and this one was another miss for me. Certainly, it was *easy* but it was far too acidic and really oddly flavoured. My friends were polite, but indifferent about the dish. I won't make it again.

So tasty and so easy! The zing of the lemon and capers makes this bland-looking dish memorable. I don't include the full pound of pasta (my husband prefers more protein to carbs in his meal & it's just the two of us.)And the leftovers are just as good! After a couple times making it, this one is way less than 30 minutes to make. Also, you almost always have the ingredients on hand to make in a pinch.

Awesome!

Ya really gotta love LEMON!!
08/10/2007 at 01:55pm
User: MARCY from Foster City, CA    User Rating:
Even after reading all the previous reviews and doubling the sauce recipe (a really good idea), and cutting the lemon in half, the overall flavor was way to lemony for my taste. I will acknowledge that I am not a huge fan of lemon and rarely use it but I did so in this case cuz afterall, it is a piccata which is supposed to be lemony. Unfortunately, even with half the amount called for, the lemon flavor was still a little more than I would have liked. Everything else about the recipe, however was fabulous so if you really like lemons, go for it.

The Perfect Mother's Day Dinner!!!!!
05/24/2007 at 12:12pm
User: Leslie from Livonia, MI    User Rating:
I made this dish along with two different salads and fried shrimp (my favorite). This dinner was very healthy because I substituted wheat pasta for the regular. Using fresh herbs is something I was scared to do but it was a great experience. The only salt I used was for the pasta water. My family are all watching their blood pressure and cholestoral so they were happy with this meal. My mom and my four aunts were very happy, like big kids, cheeks filled to the max! I was so happy their mouths were full, they were dancing in their seats and they were very proud of me. Thank you for making me a better cook and making this last Mother's Day the best ever.

This is a very simple dish to make and tastes restaurant quality. I did substitute chicken broth for the white wine, but other than that, followed the recipe exactly. User: Lance from Lakewood Ranch, FL    User Rating:
This is a very tasty dish that's easy to prepare and sure to please. The amount of sauce that this receipt makes is, in my opinion, a little less than needed. I would multiply the ingredients by 1.5 to get the desired amount. Also, I'd cut the capers to 2 tablespoons. Other than that, a lot of flavor and not too filling. Therefore, easy to enjoy.

I decided to try this because it sounded like one of my favorite dishes from a local restaurant. It wasn't quite the same as their's, but very close. I didn't have any wine on hand, so I used all chicken broth. I also left out the shallots, but I added some mushrooms instead because the restaurant version has mushrooms. I cut the recipe in 1/2, and I still had three large portions. It reheated well the next day.

I made this without the capers, using farfalle, and it came out pretty good. I don't know if I somehow cooked the sauce down too long, but it seemed like it could have used more sauce. The initial preparation of this was great. It had great flavor. Upon reheating it, however, it tasted very sourand almost grainy. Unfortunatly, the original recipe makes a lot. If you have a family larger than 3 and they won't have at least 2 servings each, you may want to halve the recipe or just throw away what's left. 8(

Although this is from 30 minute meals, it might take 30 minutes if you already have all of your ingredients prepped and ready. I didn't, but it was still an easy and delicious dish to prepare. One going into my permanent recipe box. My husband also loved the leftovers for the lunch the next day.

This is a nice pasta dish - different than the usual and very quick and easy to make. Its not too heavy. I have made this using rotissere chicken breast, shredded up to add more flavor and also to make clean up and prep faster during the week and its a hit. Another variation that I have tried is using tortellini. They both work out great. It may not necessarily be "piccata" in that sense but its a great, light pasta sauce to use.

This was the very first meal I made for my new husband after we arrived home from our honeymoon this summer. I'm glad I chose this recipe because he loved it and so did I! Since there are only two of us, I froze what we didn't eat in individual portions in aluminum foil so we could just throw a couple portions in the oven later on and we wouldn't have to eat leftovers for days on end. It really did make a lot of food because we kept reheating the leftovers about once a week for several weeks. I've tried a couple of Rachael Ray recipes since making this one and I have to say she really does a fabulous job coming up with food that is easy to prepare, tastes good and is nutritious. I highly recommend this one!

I've made this for my family several times. It is really quick and delicious and everybody loves it. I TRIPLE the sauce because we like to have a crusty bread with it and like to have extra sauce to dip it in. Also, I cut chicken breasts into thin strips like I do for fajitas. It makes it easier to spear with the fork if the chicken is the same shape and size as the pasta. A nice salad on the side is all you need to round the meal out.
