This soup is so easy to make and my son loves it. He ia a typical 17 year old and is hard to please. He complimented me on it over and over. My husband likes it too and both of them want me to make it all the time now. I would make this for any dinner party that I hosted. All I can say is it is superb when I can find something that my two guys like.

This soup was very tasty and really easy to make. If you like your french onion soup a bit more salty like we do, you'll want to add more salt to the recipe, but otherwise very good. We used mozzerella cheese instead which worked well, too. We'll definitely make it again.

I agreed with the anonymous reviewer on 10/25/04. I thought this soup lacked the robust flavor I often look for in French Onion Soup. I had to add beef bouillon in order to give it some flavor not to mention, cook it for another hour or so. I will not be making this soup again.

This soup was very easy to make, full of flavor, and didn't take much time. Thanks, Rachel! My variations were based on what I had on hand. I used dried thyme instead of fresh. I also substituted beer for the dry sherry and then added a dry bay leaf. It turned out great! I toasted a thick slice of french bread before putting it on top of the soup bowl (as mentioned)and then I put a slice of swiss cheese on top. It doesn't take very long under the broiler before it's ready to eat. Be careful, it's hot! I've had this soup at several restaurants and I loved that I could make a soup to compete with theirs!

Can't mess this one up. It's so easy. I'd recommend a loaf of day old uncut bread from your grocery store bakery for the 'crouton' ... smother the thing in cheese so you have to punch through the layer of melted goodness with your spoon to get to the soup. Awesome.

I LOVE french onion soup and was very excited to try making it myself. This recipe was easy to follow and prepare. I tried substituting in 1 cup of chicken broth instead of 1 cup of beef broth because I heard from others that all beef broth can be overpowering. That is the only substitution I made and it was delicious. My family said it was as good, if not better than what they would get in a restaurant!

I had the best cup of french onion soup at a pricey steakhouse this weekend, and I have been looking for a good recipe ever since. I compared about 10 recipes I found, and decided to use Rachael's since I had most of her ingredients on hand. This soup was fantastic, right up there with my $10 cup at the steakhouse!! I left out the bread since I'm on phase 1 of South Beach Diet, and I also made a few other minor changes. I used 1/4 cup of dry sherry instead of 1/2; 3 spanish onions; and 2T chives (because they were in the steakhouse soup). I also had to cook the onions about 25 minutes until caramelized. Next time I will use fresh thyme instead of dry. Go with the Gruyere cheese...it cost me $9 for a brick, but it was well worth it! Make this soup today.

Made this for dinner and unexpected company arrived, so offered them a bowl. They were very impressed as was I. Was very easy and only took 30 minutes. The worst part was cutting the onions. I didn't stir the onions enough as they were carmalizing so the bottom of my pot got burnt, so make sure to stir often. Will make again. Wasn't salty like some I've had in restaurants. Thanks Rach! COOKING ROCKS!!!!

Yes, the house did smell of onions (my husband had to retreat to the patio), but it was very much worth the tears. I have never made this at home and it was fabulous. We used mozzarella and provolone slices as a substitute and you couldn't tell which was which. I do agree that the onions needed more cooking time than called for (at least mine did), but the extra 10 minutes made it worthwhile. I used fresh tarragon, too. I can't say enough about this recipe!

Without doubt, the best French Onion Soup I've tasted. The onions are so buttery it's amazing. And the Sherry adds just enough tart to the soup.

Excellent !!!

Rich but not at all over-powering this soup was well-enjoyed by my girlfriend and I after a day of work. Rachael's times are right on as it took me only 32 min from the start of cooking to actually eating it. I did take the liberty of adding garlic paste(two cloves worth) to the sauteed onions and a dash of Tarragon because Alton Brown added it to his version of the soup and I always loved fragance of tarragon. Note: This is not to suggest that it made it better. My additions just made it a little more stylized my tastes. Rachael Ray you're AWESOME!!!

Wasn't sure how to make this, but we always love it when we eat out. Turned out great the first time will no problems. Looking forward to having it again soon.Beef stock becomes much more flavorful after it simmers awhile, if you have the time.

I eliminated the sherry replacing it with equal amounts of stock since our family prefers it that way. Still the flavor was wonderful and it was easy to fix. It's a 5 star hit at our house.

Wow! Easy and delicious! Not only is this my favorite Rachael Ray recipe but it might be my favorite recipe I've gotten off this site. I like it with poultry seasoning instead of thyme and don't forget to add plenty of pepper to the broth.

As the title suggests, this soup IS "Oh-so-good"! It's a snap to make. Ever since I tried the famous French onion soup at Bistro 110 in Chicago, I've been searching for a recipe that equals the one I had. Once I tried this, I didn't have to any further!

I tried this recipe using organic onions, beef broth, and thyme and the results were amazing. The organic onions added so much flavor to the soup. We are not soy people in my house, so we stick to the basics when it comes to organic food. I recommend using as many organic items as you can when making this soup. It makes a huge difference in the taste.
