This recipe is great! The ingredients give it a fresh feeling, they are soft yet crunchy and very easy to make. The sauce is the perfect mix of sweet and hot. These make a great appetizer or main meal, and make your dinner look like high flutes restaurant dining!

As with most of the review, I love these. I just tried the recipe out so I can make them for a small group next week. I was wondering if anyone knew how long ahead they can be made. I followed the recipe exactly, but next time I would chop the noodles smaller. Everything else was perfect!

Sorry, but this was just not for my family. We ended up throwing the spring rolls across the table as they wouldn't open. We are used to the fried rolls, not the transparent wrappers. But it was an experience.

I used the sauce, but altered the recipe quite a bit - to make it like the rolls I've had at Cheesecake Factory. I used steamed carrots, asparagus and sliced baby bella mushrooms, along with cilantro, shrimp and the noodles. Very refreshing and parents love it at a gathering.

I have made this recipe three times and it wonderful because it is so adjustable to whatever your taste buds are desiring. The original recipe is scrumptious, but play around with it for other things you might like to add (shrimp, napa cabbage, etc.). The dipping sauce is delectable -- don't change a thing there!

I've been wanting to make some summer rolls since we went to a thai restaurant a couple weeks back. I found this recipe and decided to give it a try. The beets seemed strange to me, but I left it in and it ended up tasting really good. I still have to get down putting the proper amount of filling, and being able to wrap them tightly, but that doesn't really affect the flavor :) Also, I didn't use the sweet chili dipping sauce as we had some Thai peanut sauce mix in the cupboard, so I mixed that per the directions with a can of coconut milk and it turned out to be a good compliment. I would highly recommend it!

this was a big hit at a bbq for an appetizer. i excluded the cellophane noodles, and added julienned cucumber and boiled shrimp (1 or 2 in each roll). i used the big size wraps, i added 1 more beet (grated, rather than julienned). for the sauce, i only had sweet rice vine and rice vinegar, and wasn't sure which to use. so i used a little bit less rice vinegar and added a little bit sweet rice wine. it turned out perfect!

These rolls are so simple and lovely. The beets make them pink, which is different and festive on a white platter with cilantro garnish. I'm a personal chef, and I make these for my cleints all they time. Everyone loves them! Try bagged shredded carrots to make prep even faster.

Had to go to an asian market for the wrappers and the noodles, and that was a little hard becuz I don't read chinese/vietnamese - but after finding the ingredients....EXCELLENT. I still need a little practice rolling these babies, and I added some cooked shrimp and avocado. Tasted so light and refreshing.

I loved the Chili sauce. I thought the summer rolls were pretty good, but the next time I made the sauce, I just put raw carrots, shredded romaine, cucumber and avocado into the rice paper wrappers and dipped them into the sauce-very good.

This recipe is so delicious and healthy. It's also versatile. I made vegetable rolls, salad rolls and pork spring rolls (seasoned the pork with mint, cilantro, sugar, fish sauce and thai chiles). The sauce was great with each type of rolls. Fun dish. Enjoy
