The stuffing is flavorful and has a delicate taste that compliments the meat. If you love garlic and mushrooms, this is the stuffing for you. The only thing we did different was substituted other types of mushrooms since 6 cups of shiitake's are difficult to come by in this neck of the woods. We used shiitake, wood ear, and baby portabella. I will say this recipe rated one of the best we have made in a long time, and is on the menu for our holiday guests! ALso I recommend that you use 2 heads of Bok Choy because one is skimpy and only use 1/2 cup of nuts because a full cup is too hard to get into the chops. I used dried shiitake mushrooms (soaked) and less garlic and it still had loads of flavor. I also bought Emeril's Essence premixed to save time. A little bit of prep involved, but otheriwise not too bad. I can't wait to make this for my family. They'll be so impressed!
