It was very sweet. We felt like it needed additional spices. She added some cinnamon and nutmeg and a little more salt. I ended up adding some corn (didnt have more squash). Also, the apple cider made it very sweet and tart. For liquid I used 1 cup of water, 3 cups of chicken stock, and 1 cup of apple cider. Then I added 1 Tbl of chopped fresh sage, 1 tsp of cinnamon, and 1/2 tsp of nutmeg. YUM!! It gets you in the mood for all of Fall's pleasures - apple picking, pumpkin patches. Even the kids love it with a dallop of sour cream and a sprinkle of nutmeg. The butternut squash is tasty, but without something 'extra' it really just tasted like my daughters baby food to me. Also, the croutons soaked up all the extra water, so the soup was very thick by the time I even got it to my guests. |
