Fantastic sauce that freezes very well in individual containers. Two small changes: 1. He forgot to include the step: REMOVE THE TOMATO SEEDS and reserve the juice. 2. I suggest folding in fresh chopped basil to pasta and sauce at the end. BONUS: Fold in a spoon or two of ricotta into the sauce/pasta mixture.

Love this sauce. Made it once with Mario's recommended San Marzano tomatoes from Italy and once with another brand. Use the San Marzano if you can find it, the taste is superb and less acidy. Love it on pasta or dipping a calzone. Quick, simple and delicious!

This sauce is so incredibly easy to make and you can give it so many uses... the possibilities are endless. I will say though that it didn't last a week on the fridge... I found mold after maybe 5 or 6 days. Lately I've been adding longer strips of onion (inch and a half or so) so that it's chunkier and I have served it as a bruschetta topping which was a great success. Basically I put some warm sauce in a small bowl and sliced baguette bread all around it so people could scoop the sauce onto the bread and eat it as an appetizer. It was delicious!!! We ate a whole baguette in 15 minutes lol. It's also great for cooking chicken... basically prepare the sauce as the recipe indicates and add chicken breasts, sliced potatoes and green peas to the mix (you might want to add a little bit of water, maybe half a cup or so to make the mixture more liquid) and simmer until the potatoes and chicken are fully cooked. Delicious.

This is the best tomato sauce ever!!! It is my basic sauce. It allows the toamtoes to make the statement, not anything else. Some recipes allow the cheese to stand. Not for me, thats why its called "TOMATO SAUCE". For me I take it everywhere with no limits. I will add meatballs to the sauce, sausage, braciole I use it for lasagna too. You name it and it goes well. One rater said she tasted too much thyme. She misread the recipe. You can use fresh or dried, however it calls for different amounts. If you follow the recipe you will like!!! mangi e goda!!!

I love this sauce, it is everything I have ever wanted out of a tomato sauce. I whipped this up to serve with some homemade tortellini (I can feel some of you wincing already) and not only was it a hit, but my guests took it upon themselves to demolish the remaining sauce off of my stove with only the bread I had made.

I made this for a dinner party and I had people raving about how they've never had sauce like this. I served it on the side, versus over pasta, and it was a HUGE hit! Personally, I let it reduce some so it was thicker.

This had horrible flavor. All I could taste was the thyme. I used dried thyme leaves and halved the quantity because I thought that was too much and it was still over powering. Blech!

I don't know if I can ever eat the stuff out of the jar anymore. I used to think you had to simmer sauce all day, then the acid would kill my stomach! This was a great recipe and so easy to make! It will become my base recipe for all my dishes requiring tomato sauce. I did modify it a little bit by browning my Chorizo in the pan, then removing it before continuing with the rest of the sauce. I also added 2 tbsp of tomato paste and 1 cup of no sodium beef broth to stretch it out a little. If you are trying to use up the package of dry italian spices your parents gave you this Christmas in your stocking, soak 2tbsp in a splash of rice vinegar for a couple minutes and add with the carrots instead of using the thyme.

Only thing that I did different was to add freshly chopped basil when I added the thyme. This dish is mouth watering.

I make this about once a month. It makes enough for two batches for our pasta loving family of 5. I put half into a container and freeze it for later and we eat the other half that night. Works out great. Nice thick sauce with lots of flavor.

My grandmother made a sauce very similar to this, and it is excellent! This recipe is also very versatile, and you can experiment with the ingredients and amounts until you get it "just right." For me, I added fresh basil leaves in it, and it blended really well with the thyme. Wonderful flavor!

I have never seen a recipe that uses carrots, except the meat sauce passed down to me from my San Marino in-laws. This sauce typifies the simplicity of Italian cooking - least amount of fuss & time while still giving you the best basic tomato sauce I've ever enjoyed. As does everyone I serve it to (no one believes it takes so little time - most Americans think sauce has to sit on the back burner for half a day and has to have sugar in to make it "sweet"). Mario is the Best. His Lasagne Bolognese is similar to the San Marino version - using spinach lasagne and 2 sauces. Reminds me of all the Italian families I've been fortunate to know and have let me share in their Sunday & Holiday ritual foods. Most of my friends say I'm more Italian than the Italians they know. Must have been one in another life. Mario, you can cook for me anytime.
