This recipe was so easy to follow, and the flavors were great. The fresh basil with garlic and tomatoes was good enough to eat on their own. And the fish was cooked perfectly. I can't wait to make this again. But the garlic and basil infused everything. And it was SO easy: no chopping, slicing, marinating, etc. (I would suggest, however, cutting larger garlic cloves in half. The smaller ones were roasted until tender, but the larger ones were still a bit too pungent to eat.) A bonus: clean-up was a snap! Unfortunately I used a day old garlic and not so ripe so called sweet cherry tomatoes, so it turned out okay .. I suspect it would have been better if I used more quality vegetables. But my boyfriend liked it though. Overall, it was a very healthy dish and little bit of salt would have done the trick. Not to be bogged down with the details, on my grocery list I wrote "white fish", so I ended up with some very excellent ($$) white fish! Save yourself some money and buy a cheaper white 'fleshed' fish! $15 worth of white fish later, it was a great dish and less per person than if we had eaten out. It was a little too tomatoe-y and the tomato skins, due to the baking, were a little tough for my husband. I loved how quick this recipe is. I've mixed the leftovers with some leftover rice and brocolli and it was very good. The sauce w/ or w/o fish would be very good blended with all of your favorite veggies.
