Quick, Delicious, Light, & Fresh!

This recipe was so simple to prepare! My husband and I have made this appetizer several times, and our guests always enjoy eating this. For convenience, we use shredded mozzarrella cheese instead of fresh mozzarella. Don't forget to drain the canned tomatoes... unfortunately, I forgot to do this one time and realized my mistake after blending all of the ingredients. I ended up improvising and served the "bruschetta soup" like it was a gazpacho in small wine glasses, garnished with a basil leaf. I served the toasted baguette slices top with melted mozzarella on the side so everyone could dip the toast into their soup. It ended up still being delicious!

Wow, was this fabulous and easy to make. I chopped and seeded fresh tomatoes since I had them, instead of using canned tomatoes, which I didn't have but will stock up on to make this during the winter and spring. Family devoured every bite--all were gone within minutes.

I love this recipe. I have made it many times and have come home from work on Friday night and just have this and something nice to drink for dinner. It's light, tasty, easy and nice to look at too. I just found a wonderful Italian bread at my local supermarket, the first thing I thought of when I first tasted it was how good it would be as the base for this appetizer. I also went out and purchased a sweet basil plant after trying this treat. I keep it by the back door and many times on the way in or out, I will take a leaf to much on. The only thing I have changed is that I prefer the basil shredded to the whole leaf. I think it makes an easier bite. Try it, try it, try it!!! It would be an easy platform to experiment with too. Play with it, have fun!

I cook for private parties, they all request this bruschetta once they've had it once. I've tweeked it slightly, I use 3 cloves of garlic with the tomatoes and eliminated rubbing the garlic on the baguette slices. I've also chosen to shred the mozzarella cheese instead of slicing it. The key is to serve immediately so you get the whole warm cheese and cool tomatoe mixture happening in your mouth. Great Recipe!

Thanks Giada, your recipe made me look like a chef.I made this for our New Years party and we couldn't get enough of it. It was easy to make and with only a few ingredients it just became my signature (and highly requested) appetizer to bring to gatherings. I would recommend doing as much as you can ahead of time, cutting and toasting the bread, slicing the cheese and chopping your ingredients.
