I loved the flavor but thought it was a bit greasy (I am never one to say that when it comes to recipes) so I tweaked it a bit. Unfortunately, this just didn't work. The pie turned out to taste overwhelmingly like mayonnaise and with no real depth of tomato flavor.(And I LOVE mayo btw). I love Paula and her recipes..but I was disappointed with this one-and I really tried to like it. It was just okay...will not make again. The only problem I had was even after draining the tomatoes for an hour and then patting them with paper towels, I still had too much juice in my pie and the bottom crust was not firm. I halved the tomatoes horizontally (at the equators) & squeezed some/most of the juice out before slicing them -- & I blotted the slices well with paper towels after they were salted & drained in the colander. Then before baking the pie shell, I painted the bottom of it with a beaten egg. By the way, I used Miracle Whip because my husband prefers it to mayo, so that's what we have on hand -- very tasty (assuming you like MW). Really excellent -- I plan to make this often. I love the ingredients in this pie and others similar to this I have made, but I just don't like the taste of the pie shell. Is it just me, or do they make pie shells that are made for these types of dishes? They seem too sweet. The only changes I made were using yellow tomatoes instead of red (alternate yellow and red would be pretty,) chopped red onion instead of green, and "Italian Mix" cheese instead of plain mozzarella because that is what I had on hand. We loved the recipe and will definitely make it again. My store brand pie crust tasted great but after adding ingredients and baking, the sides were sturdy, the bottom soft...don't think that can be helped but it didn't affect the taste. I didn't have green onions so used shallots, used a 3 blend cheese and cheddar instead of just mozarella. Even with too early tomatoes and substitutions, this pie was delicious! My husband liked it and he doesn't like tomatoes! It was even tastier the next day after heating slowly. Plan to make it again this weekend with drained, sliced stewed tomatoes, YUM! My husband even suggested adding ham or ground meat to it for a meat pie. I didn't have green onions so I used vidalia onions and it worked perfect. For anyone who had trouble with a soggy pie from the crust try doing what I did: Stick the sliced tomatoes in your colander and shake them up and down like you do when draining spaghetti. A lot of the juice will come out (some of the tomatoes may break up) Then transfer them to a salad spinner and spin till there's only a little juice left. If you don't want your tomaotes broken up, try just using the salad spinner. Believe me, I'm no calorie watcher, but I did need to cut back on the fat, maybe due to the extreme hot weather. We've made it twice. The first time was with regular tomatoes, salted and left to drain according to the recipe. The second time I used Roma tomatoes and salted and drained them for several hours. Still soggy. Think I'll replace some of the mayo with a beaten egg, and maybe try brushing the crust with a bit of the egg before I mix it with the mayo and cheese. Otherwise, we really enjoy this. In the beginning my crust was soggy as well. I now use a refrigerated crust, not frozen. I bake it 10 minutes and let it cool all the way (this made a big difference). I cut the tomatoes thick and line a sheet pan with several layers of paper towels. Then I salt the slices and put more paper towels over top - I leave them for about 30 - 60 minutes. When building the pie I try to not place the tomato circles directly on top of each other ie, rotate them some - it helps the pie stay together as you slice it. Let the pie cool some before cutting helps also. Good luck! It was too salty. I did let the tomatoes drain and even squeezed the excess liquid out but it still turned out soggy. This doesn't compromise the taste though.
