Using chix thighs and cilantro are the key differentiators in this recipe. I borrowed the recipe after it won top prize in our dinner club chili cookoff. Made it for a cookoff at work and it won there too. Excellent, Emeril!

I gather that a cornbread topping on chili is a very popular thing in the South, but I had never been exposed to the idea before. The chicken chili is very tasty - love the corn and chiles, the cornbread is very nice, and the chipotle crema adds a wonderful smoky tasty at the end.

This is one of the simpler Emeril recipies I've tried - though as always, there are three separate items that need prep. It's also pretty healthy for an Emeril recipe - you could reduce it further by using low fat sour cream for the crema and low fat cheese on top. Highly recommended!

I really enjoyed this recipe. I added some chorizo when I was browning the chicken and a can of black beans after I added the tomatoes and it really tasted good. I also just served it with rice instead of the corn bread. I will make this one again and again.

I made this recipe a few days ago and I will defintely be making it again. I added some sugar to the cornmeal batter and used plain sour creeam instead of the chipotle crema. Since I don't have a large cast iron skillet, I cut the recipe in half and used a medium sized one. For those who don't mind a little spiciness, this recipe contains the perfect combination of flavors. I would highly recommend it.

This is great with any kind of meat. It's also great with or without the cornbread topping. I didn't make the chipotle crema, but I bet it would be great! I've made it twice. Once, exactly as the recipe says and a second time with beef and without a few of the vegies I was missing. Great both times! This is my new chili recipe for all time.

this was a wonderful and fun dish to make, and it smelt wonderful while i cooked it! all the spices blended in together giving it a very unique and satisfying flavour. my whole family enjoyed it!

I've made this recipe a few times. Very easy and tastes great. The only thing I do differently is double the cornbread topping recipe, mainly because I enjoy lots of cornbread with the chili. Try it.

The recipe was easy to make and tasted very good. I skipped the cream as I could not get over leaving dairy on the counter overnight, lol (just me!) I recommend doubling the recipe to make a good size dish.

At first reading recipe I was not sure how it would turn out. It is great this is the best stuff I have ever had. I love it. It is not that hard to make. Enjoy!!!! We did. Even the kids love it.

I thought this chili was really good. I eyeballed the jalapenos using 2 peppers and it was pretty spicey. Also added 1 can of drained black beans (to absorb some of the spice). Overall I thought this was a very tasty chili and I will definately make it again.

This was the best chili. The flavor was so rich and the chicken so tender. I did add two cans of black beans at the end. It was great with extra cheese, onions and sour cream on top!

This is a great chili recipe! I have made it with ground chicken and ground turkey, both are great. I usually add a can of beans, and a little more stock. I also don't make the cream to cut back on the fat. So good and so easy!

This was easy to make and everyone loved it. I used one jalapeno and with the cayenne pepper it was definitely spicy. The chipotle crema was the best! I used fat free 1/2 n 1/2 in the crema and it still tasted great. Love that smokey chipotle flavor. The cornbread topping was a nice touch and it was fine the next day as well. Yum, yum!!

My husband and I loved this chili. I added a 28 oz can instead of a 15 oz can of tomatoes. We thought it was a little thick for chili even using a 28 oz can.I will probably make it again adding more chopped tomatoes and chicken stock to have more liquid in the pot. I made the cornbread on top and loved the idea. I used regular sour cream because I did not make this far enough in advance to wait 24 hours for the chipotle crema. Next time I make this chili (which my husband has requested I make next week for one of his good friends), I will definitely try the chipotle crema. Try this recipe- Emeril never lets me down!

This recipe is GREAT. Loved it. I did add a can of white & a can of Black beans. I WON the neighborhood chili cookoff....shh!!! don't tell. Problem is now they think I can cook! I did make the chipotle crema but was not my taste. I offered additional cornbread. Making it again this weekend!

This was a very good recipe. I toped my chili with spoon bread (cornbread with corn pieces in it) instead of his. I don't own a iron skillet. Then I toped with him creama. I must admit I didn't want to sit it out for 24 hours, but I didn't die after I ate it so I guess its safe :)

Emeril's liberal use of spices gave this recipe great flavor. I substitued turkey breast for chicken, added mushrooms and white kidney beans, and we both loved it. Especially enjoyed the cornbread on top with a small amount of melted cheese. Left out the creme-based topping to cut down on fats and turned it into a heart-healthy meal.
